    为什么最好的摊位没有任何评价

    Sapa 的旅游走廊分布非常规律:Cau May 街、Ham Rong 山周边区域,以及环绕古教堂的街区。大多数游客只在酒店半径 500 米范围内活动,从不越雷池一步。而当地人真正光顾的无名摊位,距离那条旅游走廊仅需步行五分钟——有时甚至更近。它们没有 Facebook 页面。摊主不会说英语,也不打算吸引外国顾客。这正是食物美味的原因:它们是为每天在此用餐的 H'mong、Dao 和 Kinh 族当地人量身定制的,而非为了迎合游客的口味。

    Sapa 市场:请在早上 8 点前到达

    Sapa 市场(Cho Sapa,位于 Ngu Chi Son 街)经常被提及,但几乎每一本指南都只描述了售卖纺织品和纪念品的楼层。底层以及沿着建筑东侧延伸的后巷则完全不同。在早上 8 点前到达,你会发现一排排妇女正在便携式燃气灶上烹饪。寻找那位守着大铝锅的妇女——她几乎肯定在做“bun bo Hue”,这是一种来自越南中部的辛辣牛肉米粉,在北部的山城里意外地拥有一批忠实拥趸。一碗的价格为 25,000–30,000 VND。没有菜单,没有招牌。指指锅,竖起一根手指即可。

    沿着同一条巷子走下去,通常至少有一个摊位在做“banh cuon”——即蒸米卷,里面塞满了猪肉末和木耳,配以清淡的鱼露汤汁。米卷现点现做,从铺在蒸锅上的布上揭下。在坐下之前,先花一分钟观察一下制作工艺。这绝对值得。

    汽车站后面的巷子

    Ngu Chi Son 街上的跨省汽车站并不起眼,大多数游客都尽可能快地穿过它。紧挨着它后面的那条巷子——大致与主路平行——有四五家餐饮档口,营业时间从早上 6 点左右到中午,然后从下午 5 点一直开到卖完为止。午餐通常是“com tam”,即碎米饭配上一块烤猪肉和一个煎蛋,价格为 30,000–40,000 VND。到了晚上,同样的摊位会转而售卖烤串:猪大肠、玉米、红薯,如果当地猎人带回了猎物,偶尔还能吃到野猪肉。

    点餐时直接用手点。价格不议,但非常公道——你在这里不会被收取“游客税”,因为游客根本不会来这里。

    如何找到那些“不想被找到”的摊位

    最实用的方法很简单:跟着那些边走边吃的人。在 Sapa 的市场区,这种情况在早上随处可见。如果有三四个当地妇女围着一个推车吃东西,那个推车就值得一探究竟。如果你看到一个塑料汤桶、一叠放在滤网里的米粉,还有一个辣椒罐——这些信息就足够了。坐下吧。

    掌握几句实用的短语大有裨益。“Cho toi mot to”(给我一碗)几乎适用于任何米粉摊。“Cai nay la gi”(这是什么?)非常实用,通常能得到一个词的回答——这就足够了。即使尝试发音,通常也能赢得好感,有时还能获得更大份的食物。

    准备好小额钞票:10,000 和 20,000 VND 的纸币。许多摊位找不开 200,000 VND 的大钞,这会造成尴尬。二维码支付(MoMo、ZaloPay)即使在非正式摊位也越来越普及——留意一下靠在锅边的打印二维码。

    周末市场摊位值得一试的美食

    在周六和周日上午,更广阔的市场区域会涌入从周边村庄赶来的商贩。这时你最有可能发现那些在任何指南中都没有简单名称的食物:用香蕉叶包裹的发酵猪肉(大致相当于“nem chua”,尽管山地版本不那么甜,风味更浓郁)、竹筒烤糯米,以及用黑糯米而非普通白糯米制作的“banh chung”。黑糯米版本口感更扎实、坚果味更浓,在高原地区之外很难找到。

    别想太多。把看起来有趣且价格低于 20,000 VND 的东西每样买一份。最坏的情况是你花了 100,000 VND 买了些不合口味的东西。最好的情况——也是更有可能发生的情况——是你吃到了整趟旅程中最棒的美食。

    实用提示

    大多数摊位的营业时间都很紧凑:从黎明到上午中段,中间休息,然后是傍晚的短时营业。请早点去,并且保持饥饿。如果你住在 Sapa 市中心附近,这些地方步行都不会超过 10 分钟。不要带着去餐厅用餐的预期——带着站在巷子里捧着暖和碗筷的预期去吧,那样的体验要好得多。
