    Da Lat 海拔约 1,500 米,这带来了两个好处:空气凉爽,让热咖啡能保持温度;同时使周边高原成为全国最主要的咖啡产区之一。因此,这座城市对咖啡非常讲究——这并非为了表演,而是因为咖啡豆就在家门口生长,这种生活方式自然而然地形成了。

    经典的起点

    在尝试其他花样之前,基础款至关重要。“Ca phe sua da”——加炼乳的冰咖啡——依然是 Da Lat 当地人在温暖午后最常点的饮品。在这里,它的味道往往与你在 Saigon 或 Hanoi 喝到的有所不同:由于咖啡豆通常更新鲜,烘焙程度更浅,口感会略带酸度,回味更纯净。在路边摊,一杯咖啡的价格在 20,000–30,000 VND 之间,即使在环境舒适的咖啡馆,通常也不会超过 45,000 VND。

    Phan Dinh Phung 街沿线和 Xuan Huong 湖周边的塑料凳小摊是很好的参考点。没有菜单,没有 Wi-Fi 密码,只有一个越南滴漏壶——“phin”——架在你的玻璃杯上,咖啡缓慢地滴入底部的炼乳中。点单、等待、搅拌。这就是全部的仪式感。

    Robusta 与 Arabica——为什么这里很重要

    越南大部分咖啡是 Robusta(罗布斯塔),产自中部高原和 Dak Lak。但 Da Lat 是个例外。高海拔带来的凉爽气候支持了 Arabica(阿拉比卡)的种植,其风味往往更具果香和层次感。距离市中心西南约 20 公里的 Cau Dat 地区,自 20 世纪初法国人引入种植以来,一直致力于 Arabica 的培育。

    当你选择去哪里喝咖啡时,这种区别很重要。现在有一些咖啡馆直接从 Cau Dat 采购,并会在菜单上注明——如果看到单品滴漏或手冲咖啡,非常值得一试。它与普通的 Robusta 拼配豆区别明显:苦味更少,有时带有一丝核果的香气,即使不加奶也很好喝。

    “第三波”咖啡浪潮

    过去十年间,Da Lat 涌现出不少精品咖啡店,其中几家确实值得专程前往。较好的店铺多集中在 Hoang Van Thu 街和中央市场后的街区。这里提供手冲、AeroPress 等选择,店员如果被问及,也能准确说出咖啡豆的产地。

    在这些店里,一杯滴漏咖啡的价格从 55,000 VND 起,意式浓缩类饮品则在 80,000–90,000 VND 左右。无论从哪个标准来看,这都很合理。这里的客群偏年轻化——当地大学生、从 Saigon (사이공 / 西贡 / サイゴン) 来的周末游客,以及一些远程办公者。大多数店铺都有不错的座位、充足的自然光,以及那种能让你不知不觉消磨两小时的静谧感。

    区分真正的好店与那些纯粹为了打卡拍照的网红店(Da Lat 有很多这样的店)的关键在于,它们是否真的从知名的当地农场采购,而不仅仅是把“Da Lat 咖啡”当作营销口号。如果菜单上列出了具体的农场或处理方式(如水洗、蜜处理、日晒),这通常是一个可靠的信号。

    你可能没想到的饮品

    Da Lat 有一些在其他地方不常见的饮品。“Ca phe trung”——蛋咖啡——虽然起源于 Hanoi,但一些 Da Lat 的咖啡馆也推出了自己的版本,有时会加入当地奶油或调整甜度比例。如果你之前没喝过,非常值得一试;它的口感介于甜点和饮品之间。

    还有“ca phe muoi”——盐咖啡——听起来很奇怪,但味道却出奇地好。少许盐可以中和苦味,在不加糖的情况下引出咖啡的甘甜。它并非随处可见,但在不少地方都能找到,值得一问。

    至于非咖啡饮品,Da Lat 的海拔也适合茶的种植。“Tra atiso”——洋蓟茶——是 Da Lat 的特产,由高原上大量种植的洋蓟花头制成。它微苦,带有草本香气,当地人一年四季都喝热的。在大多数传统咖啡馆,你都能以 15,000–20,000 VND 的价格买到。

    在哪里慢享时光

    在 Da Lat,最好的咖啡体验未必是在最精致的店里。最惬意的时光往往是在那些经营了几十年的老字号家庭店度过的——木质家具、墙壁被岁月染成了老照片的颜色,入口处摆放着装有“banh mi”或甜面包的玻璃柜。

    这些店通常开门很早(早上 6 点很常见),每天早晨吸引着同样的街坊邻居。它们不刻意追求什么,只保持着原本的样子。咖啡通常是预先冲泡好的,放在保温瓶里,倒出即饮,没有任何仪式感。这种高效本身就是一种待客之道。

    如果你想坐久一点,俯瞰 Xuan Huong 湖的咖啡馆占据了地理优势,尽管有时咖啡本身只是配角。在工作日的早晨,趁旅游大巴抵达前去,你能享受到一份真正宁静的咖啡时光。

    实用小贴士

    大多数 Da Lat 咖啡馆在网上没有固定的营业时间——开门时间会随季节变动且不另行通知,所以早上 7 点前或晚上 9 点后去可能会扑空。在小店里,现金支付仍是主流;精品咖啡店则更普遍支持刷卡。如果你打算去 Cau Dat 产区,现在有几家农场提供非正式的参观和杯测活动——如果你对咖啡种植本身感兴趣,而不仅仅是想拍张照,那么这非常值得花一下午时间去体验。
