    Hoi An 的面积很小,几乎可以全程步行,这使其成为越南(Vietnam)最适合花上一天时间边走边吃的城市之一。挑战不在于寻找食物,而在于了解该去哪个街区以及何时前往,因为摊位不仅按菜品轮换,还按营业时段更迭。

    古镇(Ancient Town)——早晨至中午

    古镇(即联合国教科文组织认定的核心区域,大致被 Bach Dang、Nguyen Thai Hoc 和 Tran Phu 街环绕)在上午 10 点后便挤满了游客,但如果你在上午 8 点前出发,就能在旅游团填满巷道之前赶上当地人的早市美食。

    White Rose 和 Cao Lau

    有两道菜是 Hoi An(호이안 / 会安 / ホイアン)的代名词:“White Rose”饺子(banh vac)和“cao lau”。对于 cao lau 这种只有使用 Ba Le 井水制作才算“正宗”的干拌猪肉面,建议前往 Tran Phu 街靠近与 Nguyen Hue 交叉路口附近的摊位。Banh Vac Trang(每份约 25,000–35,000 VND)大约从早上 7 点开始营业。饺子皮薄,上面撒着酥脆的红葱头——请坐在桌边吃,不要边走边吃,否则它们会散架。

    至于 cao lau(까오러우 / 高楼面 / カオラウ),Tran Phu 街上的 Thanh Cao Lau 口碑可靠,且经营已久,已成为当地人的习惯而非单纯吸引游客的店。一碗面大约 40,000 VND,建议在上午 10 点前到达。

    Banh Mi Phuong

    没错,大家都知道它。但这并不代表它不好。位于 2B Phan Chau Trinh 的 Banh Mi Phuong 自 21 世纪初就开始制作“banh mi”,排队速度很快。加了额外辣椒酱的猪肉肝酱口味大约 30,000 VND。建议在早上 7 点或下午 2 点后前往——上午 11 点到下午 1 点的人潮确实令人不悦。

    Cam Pho 区——中午至下午

    Cam Pho 位于古镇核心区的西侧,明显安静得多。在这里,你可以找到那些专门为本地居民而非拍照游客准备的食物。

    Com Ga Phuong

    Hoi An 的“com ga”(鸡肉饭)具有鲜明的地域特色——米饭用鸡油和姜黄烹制,配上撕碎的水煮鸡肉和姜味蘸酱。位于 22 Phan Chau Trinh 的 Com Ga Ba Buoi 是当地人常挂在嘴边的名字。一份配有清汤的套餐价格为 45,000–55,000 VND。大约上午 9 点开门,通常中午就卖完了。千万别错过。

    Banh Canh

    “Banh canh”——一种在猪肉或蟹肉汤底中加入类似乌冬面的粗面条——大约从上午 11 点开始出现在 Nguyen Truong To 沿线的一些无名摊位上。它看起来并不精致,是在人行道上的矮桌上用塑料碗盛装的,但这正是你在步行两小时后最渴望的美味。每碗约 30,000 VND。

    An Hoi 半岛——下午至傍晚

    An Hoi 半岛位于 Thu Bon 河对岸,通过日本廊桥(Japanese Covered Bridge)一端可达。这里有一个显眼且价格偏高的夜市,但周边其实隐藏着一些真正值得一试的街头美食。

    Banh Xeo

    这种被称为“banh xeo”的滋滋作响的猪肉虾仁煎饼,在这里做得比南部版本更小——手掌大小而非盘子大小——吃的时候用芥菜叶包裹,再配上香草和米纸。位于 Hoang Dieu 的 Banh Xeo Ba Duong 是最经典的去处(全套配蔬菜约 50,000 VND)。他们大约下午 3 点开门,煎饼锅冒出的烟雾在半个街区外就能闻到。

    Goi Cuon 和街头小吃

    在面向河流的 Nguyen Phuc Chu 街沿线,从下午 4 点左右开始,一排低调的摊位会供应“goi cuon(고이꾸온 / 越南春卷 / ゴイクオン)”、烤串和 com tam(碎米饭)套餐。价格在 15,000–25,000 VND 之间。找个塑料凳坐下,看着河水——下午 5:30 左右的景色非常美。

    Cam Thanh 及周边村庄——仅限清晨

    如果你租了一辆自行车(大多数旅馆的租金为每天 50,000–80,000 VND),Hoi An 东部的村庄——特别是通往 Cam Thanh 的路上——在清晨 5:30 到 8 点之间有一段短暂的农贸市场活跃期。当地的“banh mi(반미 / 越式法包 / バインミー)”小贩骑着自行车摊位营业,还有一些专门为上班族开设的小型 pho 摊位。这里的一碗“pho”价格为 25,000–30,000 VND。这里的节奏与古镇截然不同——没有人是为了表演而经营。

    最佳时间总结

    • 上午 8 点前:古镇巷道、Cam Pho(쌀국수 / 越南河粉 / フォー)早市摊位、乡村道路
    • 上午 8 点至中午:Com ga、cao lau、banh mi(建议尽早去)
    • 下午 3 点至 6 点:An Hoi 半岛、banh xeo(반세오 / 越南煎饼 / バインセオ)、河畔小吃
    • 晚上 6 点后:夜市虽然存在,但请降低预期——它更偏向游客。建议回到 Nguyen Truong To 享用晚间的 com tam(껌땀 / 碎米饭 / コムタム)。

    步行半径:从古镇到 An Hoi 半岛全程约 1.2 公里。Cam Pho 也包含在同一区域内。通往 Cam Thanh 的乡村道路往返需额外 4–6 公里——骑自行车可行,但在炎热天气下步行会比较吃力。

    实用提示

    大多数摊位没有英文菜单;指着旁边人点的菜点餐即可。仅限现金,建议准备小额钞票——随身携带一些 20,000 和 50,000 VND 的纸币。古镇参观文化遗产景点需要 120,000 VND 的门票,但在美食街步行用餐无需购票。
