    如果你只在Saigon吃过“Banh Xeo”,那么Da Nang的版本一定会让你感到意外——它更小、更薄,吃法也大不相同。围绕它形成的晨间景象,绝对值得你早起去体验一番。

    Da Nang风味Banh Xeo有何不同

    Saigon的Banh Xeo(越南煎饼)是一个巨大的半月形可丽饼,直径通常在30–35厘米左右,里面塞满了五花肉、虾和豆芽。你需要自己撕开分段,然后包起来吃。而Da Nang的做法在结构上完全不同。

    在这里,煎饼很小——大约只有手掌大小,直径约10–12厘米。它们是用小铸铁锅一个一个煎出来的,这使得每一块煎饼的表面都能比单纯的边缘部分更均匀地保持酥脆。馅料更简单:小虾、少许猪肉、豆芽和葱。面糊同样是姜黄色的米浆底,但面糊与馅料的比例更偏向于面糊。你吃的是更多的饼皮,更少的馅料——这正是它的精髓所在。

    另一个关键区别在于包裹方式。你不需要撕开Banh Xeo本身。相反,你需要取一张新鲜的“banh trang”(稍微浸湿过的干米纸),铺上芥菜叶、紫苏、薄荷,如果店里提供的话,还可以加一片杨桃或青香蕉,然后把整个小煎饼放在上面,紧紧地卷成一个卷。最后,将卷好的饼蘸入“nuoc cham”——即通常用辣椒和青柠调味的鱼露蘸料中食用。

    每一口中香草与煎饼的比例都比南部版本更高。这种吃法更清爽,这也是它为何适合作为早餐的原因。

    Hoang Dieu街:去哪里吃

    Da Nang(岘港)中心地区Banh Xeo店最集中的地带位于Hoang Dieu街,大致在与Ong Ich Khiem和Tran Phu的交叉路口之间。这并不是某一家著名的餐厅,而是一排排并肩经营的小型家庭摊位,它们竞争已久,品质都非常地道。

    大多数摊位在早上6:30左右开门,一直营业到卖完为止,通常在上午10:00到11:00之间。千万别指望中午去吃早餐——那时候店门早就关了。

    点什么,花多少钱

    一份(“mot phan”)通常包含四到六个小煎饼、一盘新鲜香草和浸湿的米纸,以及一碗nuoc cham。价格为每份25,000–40,000 VND,具体取决于店铺以及你是否额外加虾。两人份的丰盛早餐(含饮料)很少会超过120,000 VND。

    有些店还提供“banh khot”——一种上面放虾的小咸米糕——作为配菜,也是用同样的小锅煎制的。如果你胃口好,值得加一份。

    至于饮料,大多数摊位只提供“tra da”(冰茶,通常免费或5,000 VND)。如果你想喝越南咖啡,可以在饭前或饭后去同一条街上步行一分钟内的咖啡馆买。

    几家值得注意的店铺

    Banh Xeo Ba Duong (K280/23 Hoang Dieu) 是当地人最常推荐的一家,店面稍大,翻台率也更高——如果你在周末早上8:00左右的高峰期到达,这家店很方便。这里的nuoc cham口味偏甜。

    往北走两家的一家无名摊位,其蘸料口感更咸、更酸,经营风格也更紧凑——桌位较少,上菜更快。如果Ba Duong排队人多,走两分钟去那里坐下也是个不错的选择。

    如何吃得像个当地人

    如果动作太慢,浸湿的米纸会破掉。动作要果断:将米纸平铺,把香草堆在下三分之一处,放上煎饼,将两侧折叠,然后由内向外卷起。如果米纸粘在一起破了,店主会直接再给你一张——没人会在意的。

    卷好后要立即食用。一旦蘸了nuoc cham,米纸很快就会变软。这可不是那种一边刷手机一边慢吞吞吃的美食。

    实用贴士

    Hoang Dieu街大致与韩江(Han River)平行,位于滨水区以西约700米处。摩托车停车很方便;出租车可以在Ong Ich Khiem路口下车。如果你想体验更安静的环境,请在工作日前往——周末早上,尤其是8:00到9:30之间,知名店铺很快就会坐满。预留30–45分钟的用餐时间即可。
