    什么是 Tra Sen

    Tra sen 并非莲花冲泡的茶饮,也不是花草茶。它是绿茶——通常选用来自太原省(Thai Nguyen)的高等级茶叶——通过新鲜莲花雄蕊进行熏制而成。茶叶自然吸收花朵的芬芳,无需任何提取物或人工香精。其口感微妙:莲花的特质隐于茶香之后,那种柔和的温润感延长了茶的回甘,而非喧宾夺主。初次品尝的人有时会期待更浓郁的味道,但他们最终收获的,却是越南饮食文化中一种静谧而复杂的饮品。

    制作方法是理解其风味与价格的关键。

    制作工艺:填塞法

    这种更为古老且尊贵的工艺,至今仍由西湖(Ho Tay)周边的少数家庭传承,其核心是将茶叶直接填入盛开的莲花中。

    生产者在日出前划船进入湖中——莲花在上午就会闭合,且雄蕊在烈日下会失去香气。他们挑选尚未完全开放的花苞,小心地拨开花瓣,将干绿茶叶塞入雄蕊之间。随后,花瓣被轻轻合拢,花朵留在植株上约12至24小时,让茶叶与带有花粉的雄蕊保持直接接触。

    次日清晨,茶叶被取出、烘干,这一过程通常会重复进行——有时是三、四甚至五次——每一轮都使用新鲜的莲花。每一次重复都会加深香气的吸收,且没有任何化学意义上的添加,纯粹是芳香的传递。

    这背后的算术极其严苛:制作一公斤成品 tra sen 大约需要1,000到1,400朵莲花。每一朵花都必须手工处理两次——一次填塞,一次取出。产季非常短暂:西湖莲花的花期大约从5月下旬持续到7月。错过这个窗口,就得再等一年。

    为何价格如此昂贵

    正宗西湖 tra sen 的零售价,低端产品约为每100克300万越南盾,而顶级产品则远超每100克1000万越南盾——折合每公斤约120至400美元,具体取决于所用的茶底以及熏制的次数。

    这种定价并非营销噱头。成本在于人工、时间以及西湖本身有限的地理资源。在其他地区种植的莲花——湖畔的广安村(Quang An)被公认为标杆——其香气特征与别处不同,经验丰富的买家声称他们能分辨出差异。这究竟是事实还是行家的偏好,是个值得在品茶时探讨的话题。

    作为参考:一袋优质的太原(Thai Nguyen)绿茶——按任何标准衡量都非常出色——每公斤价格可能在20万至50万越南盾之间。而莲花工艺将这一成本放大了15到30倍。

    在河内何处品尝或购买

    若想品尝 tra sen 而无需购买整份,最直接的方式是前往还剑湖(Hoan Kiem Lake)或老城区(Old Quarter)的传统茶馆。寻找那些按壶供应“tra Thai Nguyen”的店铺——有些店会在产季提供莲花熏制版本,每份价格约在8万至15万越南盾。

    若要购买,西湖西岸的广安(Quang An)地区是大多数资深生产者所在地。Trich Sai 和 Lac Long Quan 街沿线的小型家庭作坊直接对外销售。在讨论购买前,你很可能会被邀请先品尝样品——这是标准流程,也是预期的礼节。不必操之过急。

    同春市场也有摊贩全年销售 tra sen,但其产地较难核实,质量参差不齐。如果你是作为礼物购买,包装很重要:信誉良好的生产者会使用密封的陶瓷或锡罐,以保护茶叶不受潮。

    这种茶偶尔也会作为河内饮食文化的一部分出现——莲花茶在历史上与这座城市的联系,正如鸡蛋咖啡一样,是一种无法在其他地方完美复制的本地特色。

    何时前往

    如果你想亲眼目睹填塞过程,6月下旬到7月中旬是最佳窗口。请在早上5:30前到达西湖(特别是广安堤岸)。那时船只通常已经出发。没有人会为你提供导览;这是工作时间,而非表演。请在岸边安静观看,保持安静。到了早上8点,工作基本结束。

    成品茶从6月下旬开始上市,大多数生产者会持续销售到7月及8月,直到库存售罄。

    实用建议

    请携带现金——西湖周边的小型家庭作坊很少接受刷卡。50克的茶罐是合适的伴手礼,且易于携带;如果保持密封并避光,茶叶可保质长达一年。如果卖家无法告诉你他们使用的是哪里的莲花,或者茶叶经过了多少次熏制,那么在支付高价前,请务必三思。
