    Hue 以其对烹饪细节的执着而闻名,“com am phu”——字面意思是“地狱饭”,因其配料色彩艳丽且充满混乱的活力而得名——是这座城市最具戏剧性的菜肴之一。它起源于 20 世纪 20 年代的深夜街头小贩,据传当时在 Dong Ba market 附近售卖给刚结束晚班的工人。一个世纪过去了,这道菜依然最适合在天黑后享用,最好是坐在没有空调的塑料凳上吃。

    Hue(顺化)的版本与你在其他地方可能找到的任何 com am phu 都不同(如果你能找到的话——这几乎完全是 Hue 的特色菜)。当地厨师在酱汁的甜度上往往更克制,并非常注重口感的对比:猪皮必须有嚼劲,炸红葱头必须酥脆,蛋黄则要刚刚凝固。

    位于 Dong Ba Market 附近的一家老字号摊位,傍晚开门,吸引了下班后的人群。Co Lien 的版本完全省去了虾仁,加倍了 ruoc 和猪皮,有些人更喜欢这种做法——少点花哨,多点口感。这里的汤勺下手很重,所以你的米饭会浸满汤汁。座位很挤,桌子也有点粘。但还是值得一去。

    Quan Bich

    位于 Pham Hong Thai 街的一条小巷里,离皇城(Citadel)几个街区,是一家安静的家庭经营店。如果你想坐得舒服点,而不是坐在摇晃的塑料桌旁,这是个好选择。店主的女儿现在负责厨房,并增加了一种柠檬草烤虾的做法,味道很棒。虽然不完全传统,但诚意十足且美味。

    Com Am Phu Thanh Tam

    在 Truong Dinh 街比较安静的一端,如果你住在 Huong 河南岸附近,这家摊位值得一去。经营规模较小,室外两张桌子,室内一张。这里的 cha lua 是这份名单里最好的——他们从皇城区的一家供应商那里采购,每天新鲜制作。盘中其他配菜也很扎实,虽然不算惊艳。

    避坑指南

    有一些出现在面向游客的应用程序上的 com am phu 店,现在收费 70,000–90,000 VND,端上来的饭是温吞的,配的是预先切好的包装猪肉卷,而且没有汤。你可以通过全英文菜单和装裱好的“正宗 Hue 遗产菜肴”招牌来识别它们。如果招牌是英文,且价格超过 60,000 VND 却没有任何明显的理由,请直接离开。

    关于点餐的几点实用建议

    大多数摊位只提供一种份量。如果你想要额外的鸡蛋,可以说“them trung”;想要更多的肉松,说“them ruoc”。汤通常是免费添加的——在添加前先问问店主,因为特别是在 Co Lien,如果加太多汤会把米饭泡烂。搭配一杯“tra da”(冰茶,通常免费或 5,000 VND),而不是任何碳酸饮料。Hue 的夜晚、一碗地狱饭,再加上昏暗的荧光灯——这就是最地道的氛围。

    如果你在 Hue 的时间不仅限于吃,com am phu 非常适合在皇城附近的河岸散步后享用,或者在晚餐前参观 Tomb of Khai Dinh。这道菜很符合这座城市的特质:稍微有点浮夸,有着深厚的历史底蕴,而且比看起来更好吃。

    Com am phu 是一道晚间菜肴——午餐时间不要去寻找。大多数摊位周二至周日营业。每份预算在 30,000–55,000 VND 之间,具体取决于你去哪里,并记得算上冰茶的费用。此名单上的所有地点均只收现金。
