在 Hanoi 喝了一晚“bia hoi”,或者在 Sapa 的寄宿家庭喝了几轮米酒,第二天早上 7 点的感觉绝对不好受。当地人经过几代人的摸索,总结出了一套恢复方案——这可不是什么油腻的早餐或运动饮料。

为什么 Pho 是经典的宿醉救星

这并非虚言。Pho 作为宿醉解药有着扎实的科学依据:骨汤中含有丰富的钠和矿物质,热度足以安抚躁动的胃,且清淡到不会给身体造成二次负担。在 Hanoi,最好的 pho 店在凌晨 5:30 或 6 点就开门了,到了早上 7 点,店里往往已经坐满了一看就是前一晚喝了不少的人。

宿醉次日最有效的版本是 pho bo(牛肉河粉,而非鸡肉河粉),因为它的脂肪含量略高,鲜味也更浓郁。点餐时可以加一份汤(要求“them nuoc dung”),如果你的胃比较敏感,可以不要豆芽,辣椒也要少放。根据城市不同,一碗的价格在 40,000 到 70,000 VND 之间。仪式感和配方同样重要:坐在低矮的塑料凳上,慢慢吃,微微出汗。你的身体会配合你恢复过来的。

在 Saigon,有些人宿醉后更喜欢“hu tieu”——这是一种在南方很受欢迎的食物,汤底更清亮,配有米粉和猪肉。原理相同,做法不同。

Chao(粥)的疗法

“Chao”是越南的米粥,对于那些已经演变成严重胃部不适的宿醉来说,这是更温和、更宽容的选择。它的质地介于稀饭和浓汤之间——软糯、淀粉含量高,不会给肠胃带来负担。一碗加了姜丝的 chao ga(鸡肉粥)在街头摊位只需 30,000 到 50,000 VND,对胃部不适的缓解作用远胜于药店里卖的任何东西。

当宿醉伴随着恶心而非仅仅是头痛时,当地人会倾向于选择 chao。姜丝绝不仅仅是装饰——越南烹饪专门将其作为助消化剂,在早上 8 点,温热的淀粉和姜的组合是无可挑剔的。

在任何城市的清晨,菜市场附近都很容易找到卖 chao 的街头摊位。在 Hue,一些摊主会配上一小份 nem chua(发酵猪肉)——这可能并不适合所有宿醉的人,但当地人对这种发酵食品的功效深信不疑。

液体循环:甘蔗汁、椰子水和 Tra Da

如果说 pho 和 chao 是食物方面的补给,那么在越南 (Vietnam) 的补水逻辑则自成一体。当地人的补水循环大致如下:

首先是甘蔗汁。 “Nuoc mia”——街头摊位现压的新鲜甘蔗汁——能迅速提升血糖,补充钾元素,每杯仅需 10,000 到 15,000 VND。它甜得直接,在你那种宿醉状态下,往往正好是你需要的。这种摊位随处可见,尤其是在 Saigon 和 Da Nang。

其次是椰子水。 新鲜的嫩椰子,用砍刀切开并插上吸管递给你,全国各地的摊位都有售,价格在 15,000 到 25,000 VND 之间,视地区而定。其电解质含量是实打实的,绝非营销噱头。在 Phu Quoc 或任何沿海地带,你会看到当地人在宿醉后,第一个想到的就是椰子。

最后是 Tra Da 作为日常维持。 “Tra da”——冰绿茶——在北方的大多数街头小吃摊是免费或几乎免费的(最多 5,000 VND),南方也很多。它与其说是解药,不如说是一种持续的补水方式,当地人会在整个上午不断地喝。咖啡因含量低,单宁适中,量大。它通过持续的补充来发挥作用。

外国人通常会犯的错误

最常见的错误是宿醉后第一时间喝越南咖啡。 “Ca phe sua da”非常浓烈——通常是用 phin 滴漏壶萃取的罗布斯塔咖啡豆,咖啡因含量远高于大多数西式咖啡——在空腹且酒精刺激后的胃里,它会让你心跳加速,加重头痛,而不是缓解。宿醉后喝咖啡的当地人,几乎总是先吃点扎实的东西。

第二个错误是完全不吃东西,只喝水或电解质片。越南人的做法恰恰相反:先吃点热乎的、汤水足的食物,然后再在周围补充水分。汤本身就含有你所需要的大部分盐分。

第三个错误是点口味过重的食物——比如加满辣椒的 pho,或者加了虾酱和香茅、味道浓郁的“bun bo Hue”——在你的胃还没恢复过来之前就去挑战它们。这两者都是绝佳的美味,但如果你宿醉时吃得太猛,它们会让你难受。如果你宿醉后想吃 bun bo Hue,记得要求“nhot”(清淡版),并把 mam ruoc(虾酱)放在一边。

最后:“蛋咖啡”是 Hanoi 的美味,但它浓稠、甜腻且厚重。把它当作你恢复正常后的上午奖励,而不是宿醉后的第一选择。

实用提示

大部分这些食物在早上 6 点到 9 点之间供应,到了上午晚些时候就会减少或消失——越南的街头美食文化开始得很早。如果你睡过了早上 9 点,错过了 pho 店和 chao 摊的营业高峰,一碗“banh canh”(猪骨汤底的粗乌冬面)是一个可靠的备选,在菜单上的供应时间更长。记得带些小额纸币——20,000 和 50,000 VND 的钞票——因为街头小贩很少有零钱找给你 200,000 VND 的大钞。
