越南(Vietnam)的生活离不开咖啡因——任何曾在早晨观察过“ca phe sua da”仪式的人都深有体会。但在咖啡文化之外,还有一种更安静的传统,即为了助消化、解暑或仅仅出于习惯而冲泡的草本茶。其中有三种在全国各地的家庭、市场摊位和路边饮料摊随处可见:Atiso(朝鲜蓟茶)、Hoa cuc(菊花茶)和La voi(芽叶茶)。它们绝非那种赶时髦的健康饮品,而是代代相传的经典。一旦了解了它们的功效,你就会发现自己在合适的时刻总会想起它们。

Atiso — 大叻特产,护肝人士的首选

朝鲜蓟茶源自生产朝鲜蓟蔬菜的同种植物,但这里使用的是整株植物——叶子、茎、根和花都被晒干并用于冲泡。Da Lat 是越南的Atiso生产中心;该市周边的高地气候凉爽,适合大规模种植朝鲜蓟,你在当地市场的各个摊位都能看到新鲜和晒干的朝鲜蓟。

它的味道带有泥土气息和淡淡的苦味,余味中带有一丝温和的甜味。这种味道并不浓烈,觉得绿茶太“草味”的人通常会喜欢Atiso。

在当地,它主要作为助消化饮品,并被认为具有护肝功效——无论你是否相信这一点,这都是为什么你在越南医院食堂能看到冷藏的Atiso茶,以及长辈在饱餐一顿后坚持要喝上一杯的原因。

哪里可以买到: 在Da Lat(大叻),散装干Atiso在Cho Da Lat(大叻市场)以每100克30,000–50,000 VND左右的价格出售。在大叻以外,可以在全国各地的药店和Co.op Mart超市寻找Fito Pharma或Ladophar品牌的袋装Atiso茶,通常每盒20包的价格为45,000–70,000 VND。散装版冲泡出的茶汤更浓郁、口感更丰富;袋装版则适合日常饮用。

何时饮用: 餐后,或任何你吃得过饱的时候。它不含咖啡因,所以深夜饮用也没问题。夏天加冰饮用,是你在饮料摊驻足的绝佳理由。

Hoa cuc — 温和、清香且真正放松

菊花茶在几个世纪以来一直是中式和越南茶文化的一部分。“Hoa cuc”字面意思就是菊花,冲泡的正是晒干的小朵淡黄色花苞,它们在热水中舒展,将茶汤染成柔和的金色。

它的味道细腻:花香浓郁而不刺鼻,清甜且几乎没有苦味。对于不熟悉草本茶的人来说,这是最容易接受的品种之一。越南人饮用它是为了传统医学意义上的“清热”——在38摄氏度的Saigon午后,一杯冰镇的hoa cuc tra带来的清爽感,与单纯喝凉水完全不同。

它与少量冰糖(“duong phen”)搭配极佳,这也是传统茶馆通常的供应方式。

哪里可以买到: 散装干菊花在传统药材市场有售——在Hanoi,可以去老城区Lan Ong街的摊位看看,那里按重量出售,每100克约40,000 VND起。在Saigon(西贡),Binh Tay市场附近的干货批发区也能买到。Dilmah Vietnam或Phuc Long等品牌的袋装版在超市随处可见。散装花朵冲泡出的茶汤明显更香。

何时饮用: 下午和晚上。它被认为具有安神和缓解眼部疲劳的作用——无论你是否相信,它确实是一种令人愉悦的放松饮品。如果招待客人,可以冲泡得淡一些;如果想要更有风味,可以泡浓一点并加入一片新鲜青柠。

La Voi — 大多数游客从未接触过的北方日常茶

这是一种很少出现在游客清单上的茶,而这正是它值得被推荐的原因。芽叶茶(Voi leaf tea)由芽叶树(Cleistocalyx operculatus)的叶子制成,这种植物原产于越南北部。它听起来并不异国情调或具有药用感——它只是许多越南北方家庭像喝普通绿茶一样饮用的日常茶饮。

它的味道独特:略带涩味,具有一种比甜味更偏咸鲜的草本特质,且回甘清爽。它在草本茶类别中独树一帜。上了年纪的Hanoi人尤其钟爱它;在Hanoi(河内)各地的平民化tra da(冰茶)摊位,你可以免费或以每杯5,000 VND的价格买到它,作为餐点搭配。

研究表明,芽叶提取物具有抗菌特性,这或许解释了它作为助消化和消胀饮品的长期声誉,但不要指望卖茶的人会向你解释生物化学原理。他们只知道它能调理肠胃。

哪里可以买到: 散装干La voi在Hanoi的Dong Xuan Market以及北部的传统药店有售,每100克价格为20,000–35,000 VND。袋装版在主流超市较难找到;最好的选择是药店或专门经营北部干货的商店。在北部以外,它确实很难买到——如果你想带一些回家,记得在Hanoi多买点。

何时饮用: 早晨或中午。它是北方的日常茶——实用、不矫情,带着一种恰到好处的微苦。用沸水冲泡,浸泡四到五分钟效果最佳。
