    在塑料小凳上喝了一晚“bia hoi”后,身体难免会有些反应。幸运的是,越南饮食文化经过几十年的“实地测试”,已经总结出了一套解决方案,而且大部分花费都在 50,000 VND 以下。

    从汤底开始:清晨 6 点的 Pho

    pho 摊位在日出前就排起长队是有原因的。一碗 Pho——地道的骨汤,熬制数小时,配上软糯的米粉和几片牛肉——温暖、咸鲜,那种温和的恢复感是单纯喝水无法比拟的。优质汤底撇出的油脂含有微量矿物质;盐分则补充了你因出汗和某些生理过程而流失的电解质。

    在 Hanoi,传统的点法是 pho bo(牛肉河粉),最好找那种凌晨 5:30 开门、卖完即止的摊位。观察一下汤底,清澈琥珀色而非浑浊的才是长时间慢炖的标志。在 Saigon,南方的口味往往偏甜,且会附上一大盘新鲜香草;两者都是极佳的宿醉“良药”。

    如果你在全国任何地方的早市附近,跟着那些看起来昨晚没睡好的当地人走,他们知道哪里有好吃的。

    Chao:被低估的选择

    “Chao”——越南米粥——虽然不像 Pho 那样享誉国际,但若论宿醉后的实用性,它绝对胜出。它对脆弱的胃更加友好,价格更便宜(每碗约 25,000–35,000 VND),而且种类丰富:chao ga(鸡肉粥)适合口味清淡的人,chao long(猪杂粥)则适合那些想要完整体验且在早上 7 点还不觉得反胃的人。

    Chao 在南方尤为常见,街头摊位通常用大陶罐盛放,并配有 you tiao(油条)。把油条撕开,浸入粥中,慢慢享用。这可不是一顿可以匆忙解决的早餐。

    Ca Phe Sua Da:不可或缺的仪式

    “Ca phe sua da”——加了炼乳的冰咖啡——从临床角度看或许不算宿醉疗法。但咖啡因、糖分,以及坐在安静的地方,守着小玻璃杯和滴漏壶的仪式感,能从心理层面缓解宿醉的痛苦,这是单纯喝汤做不到的。

    越南的罗布斯塔咖啡豆比大多数意式浓缩咖啡更浓郁,炼乳带来的甜味柔化了苦涩,又不会让它变成甜点。点上一杯,坐下来,放下手机。二十分钟内,你会感觉自己又“活”过来了。

    如果想要更温和的选择,不妨考虑“蛋咖啡”——ca phe trung。热咖啡上覆盖着打发的蛋黄和糖霜,口感更浓郁,适合细细品味;许多 Hanoi 的常客在觉得胃口不佳的早晨,都会首选这一杯。

    甘蔗汁:10,000 VND 的电解质补充

    路边的甘蔗汁摊位——那些有机械压榨机和摩托车排队的地方——在越南随处可见。它们解决了一个具体问题:你脱水了,急需糖分和电解质,但还不想吃东西。一杯 500ml 的 nuoc mia(甘蔗汁),通常会挤入一片金桔,售价 10,000–15,000 VND,不到九十秒就能喝完。

    金桔带来的酸味让整体口感不会过于甜腻。当地人有时还会加一小撮盐。这虽然不是专门为宿醉发明的偏方,但其效果堪比运动饮料,价格却便宜得多。

    给“硬核”宿醉者的 Bun Bo Hue

    如果你的宿醉需要“以毒攻毒”——你需要一些重口味、辛辣且扎实的食物——那么“bun bo Hue(顺化牛肉粉)”就是不二之选。这种越南中部的牛肉猪肉米粉汤底以香茅和虾酱为基础,辣味十足,配有较粗的圆米粉,以及猪蹄块,如果你愿意,还可以加猪血块。

    这可不是一碗温和的早餐汤。它唤醒你的方式就像冷水淋浴一样直接。在 Hue 当地,清晨 6 点左右就能在路边摊找到它。在 Hanoi 和 Saigon,你可以去专门的店铺——寻找手写的招牌、塑料小凳,以及从黎明就开始熬煮的大锅。

    当地人到底怎么做

    问问越南朋友他们如何应对宿醉,你通常会听到上述方法的组合:一碗热汤、一杯 ca phe sua da、如果可能的话再睡个午觉,以及比你想象中更多的饮水量。没有所谓的“万能神药”——逻辑很简单:补充盐分和水分,摄入一些碳水化合物,等胃准备好了再补充咖啡因。

    最有效的食物往往是那些在清晨、在街头摊位、在越南早晨凉爽的空气中享用的食物。这种环境本身就是疗愈的一部分。

    实用小贴士

    这些选择大多可以在清晨的早市和路边摊找到,而不是在正规餐厅里——准备 30,000–60,000 VND 就足够享用一份包含咖啡的丰盛早餐。如果你的酒店位于旅游区,而最近的 Pho 摊位要到 9 点才开门,不妨问问前台当地人平时去哪吃早餐;答案会完全不同,而且更好。
