    Ba Kien — 适合多人聚餐

    如果你是四人或四人以上同行,Ba Kien 是最佳选择。这里的空间比芹苴大多数 Banh Xeo 店都要大——有正规的桌子、吊扇和塑封菜单——厨房的出菜速度很快,不会让你等得太久。煎饼的水平中规中矩,并不惊艳:一直保持酥脆,虾很新鲜,香草拼盘也不错。它能上榜的原因是它的配菜:他们作为前菜供应的类似“Bun Bo Hue”的猪肉汤非常正宗,而且几乎没人点,因为大家不知道它的存在。记得点一份 canh(汤)。

    Banh Xeo 81 — 避雷之选

    它出现在每一份关于芹苴美食的国际旅游指南上。地理位置便利,招牌上有四种语言,员工的英语水平足以高效地为你点餐。Banh Xeo 本身还可以——不算难吃,只是更偏向于那些想要干净、轻松体验的游客,而不是追求极致美味的食客。香草拼盘是预先装好的,明显比 Co Ut 或 Muoi Xiem 的要少。如果你刚好路过且下着雨,可以进去避避雨。否则,再多走五分钟吧。

    西部风味有何不同

    越南北部也有自己的 Banh Xeo 版本,但湄公河三角洲的版本被称为“西部风味”(mien Tay)是有充分理由的。面糊中除了米粉外还加入了椰奶,这赋予了它淡淡的甜味和浓郁口感,并帮助边缘煎出一种近乎透明的酥脆感。煎饼的尺寸明显更大——通常直径在 35–40 厘米之间——而且香草拼盘和煎饼本身一样重要。在芹苴,除了标准的紫苏和薄荷外,你通常还会得到水菠菜尖、香蕉花、杨桃和多种生菜。包裹的过程是用餐体验的一部分,而不仅仅是配角。

    馅料在全市范围内相当统一:虾(有新鲜河虾时用河虾,没有时用冷冻虾)、切片五花肉、豆芽和绿豆。有些店可以加 10,000–15,000 VND 增加鱿鱼片。

    实用贴士

    芹苴大多数好吃的 Banh Xeo 店在傍晚时分就卖完了——如果你晚上 7 点以后才到,Quan 94 是最稳妥的选择。全市的价格都很亲民,每人点两张煎饼是常态,并不算多。记得带现金;在最近的访问中,只有 Ba Kien 能可靠地接受银行卡支付。
