    这道菜本质上是“com hen”(蛤蜊饭)的米粉版本,而com hen本身就是Hue(顺化)人引以为傲的早餐传统。同样的蛤蜊,同样的配料,只是主食不同。如果说com hen是家里的长兄,那么bun hen就是那个从未离开过家的孩子——你几乎只能在Hue找到它,大多在清晨,而且通常是在那些从外观看毫不起眼的小店里。

    碗里到底有什么

    这里用的蛤蜊是“hen”——产自香江(Perfume River)及Con Hen岛周边浅滩的淡水蛤,个头极小,一勺能盛下十几个。它们被快速焯水并保持微温,因此口感鲜嫩而不老。淋在碗里的汤汁是煮蛤蜊剩下的原汤:带着淡淡的咸味,鲜美且清淡。

    碗面上铺着满满的配料:切丝的芭蕉花、薄荷、紫苏、豆芽、炸葱酥、碎花生,以及被称为“bua”或“tep”的猪皮渣。调味料(如虾酱“mam ruoc”、辣椒油、青柠)是分开提供的,你可以根据口味自行添加。初次尝试的人通常会少放虾酱,结果往往会后悔。大胆多放一点,味道才够劲。

    一碗普通的bun hen价格在15,000–25,000 VND之间。价格稍高的通常意味着蛤蜊更多或分量稍大。

    当地家庭去哪吃:推荐店铺

    Quan Bun Hen Ba Tuoi — Pham Hong Thai街

    这是Hue市Phu Cat区当地人会毫不犹豫推荐给你的店。Ba Tuoi(“Tuoi阿姨”)多年来一直经营着这家位于Pham Hong Thai街的小店,摆着几张低矮的塑料凳。通常早上6点开门,卖完即止——周末通常在上午9:30左右卖完,工作日则接近10:30。店里大约能坐25人;周日早晨,这里大多是家庭聚餐。

    价格:每碗18,000–22,000 VND。如果你的同伴不吃米粉,他们这里也提供“com hen”。

    Bun Hen Dong Ba — 靠近Dong Ba市场入口,Bach Dang街

    另一处bun hen摊位聚集地位于靠近Dong Ba市场的入口处,沿着Bach Dang街及其侧巷分布。这些与其说是餐厅,不如说是晨间摊位——折叠桌、燃气灶,还有一位从凌晨5:30就开始忙碌的大姐。你可以通过盆里堆成山的芭蕉花丝和排队的摩托车找到这里。

    价格:15,000–18,000 VND。没有菜单,没有英文。指一下碗的大小(小碗或大碗),当她拿起辣椒时点头示意即可。

    Con Hen岛摊位 — 过Trang Tien桥,左转

    Con Hen是香江中的沙洲岛,Hue大部分淡水蛤都是在这里捕捞和加工的。岛上的几家小吃摊同时供应com hen和bun hen,因为是在产地现吃,蛤蜊的鲜度明显更高——没有运输时间,也不用在冷藏箱里存放。从Trang Tien桥步行五分钟即可到达。

    这是最适合家庭的用餐环境:树下的户外餐桌,节奏悠闲,摊主也习惯了接待大型团体。营业时间从早上6点左右到中午。这里的价格在20,000–25,000 VND,因为地理位置的原因稍贵一点,但依然非常合理。记得带现金。

    给家庭游客的实用建议

    Bun hen不是一道可以不加辣的菜——当地的饮食文化默认你喜欢吃辣。如果你带着年幼的孩子,点餐时请说“khong cay”(不要辣椒),然后在餐桌上根据口味自行添加调料。大多数摊主都能听懂这个要求,尽管有些人出于习惯还是会加一点点底味。

    时间非常重要。在大多数摊位,如果你上午10点以后才到,很可能只会看到空锅和正在收摊的摊主。这是一种属于早上6点到9点的食物。请围绕它来安排你的早晨,而不是在酒店慢悠悠吃完早餐后再去挤。

    Bun hen的卖相不像金黄诱人的“mi quang”那样上镜——它看起来色泽深褐,其貌不扬。先尝尝味道,然后再决定是否需要拍照。
