    经典 Banh Bao 的构造

    一个制作精良的 Banh bao 大约有一个大橙子那么大。面团使用酵母和泡打粉发酵,口感紧实如枕头,颜色洁白而非半透明。顶部应该有一个小小的捏褶——这是一个实用的特征,让你在购买前就能判断包子馅料的饱满程度。

    地区变体

    Banh Bao Chieu(北方风味)

    在 Hanoi 及周边北方地区,Banh bao 通常较小——接近网球大小——面团甜度较低。内馅也更简单:猪肉末和蘑菇,有时不加鹌鹑蛋。清晨,你可以在售卖“banh mi”的推车旁找到它们,通常与油条一起售卖。

    Banh Bao Nhan Dau Xanh(绿豆甜馅)

    这种甜点变体使用甜绿豆沙馅——类似于粤式莲蓉包,但口感更清爽、油脂更少。它常见于面包店(“tiem banh”)而非街头推车。如果包子是在糕点柜台而非蒸柜里售卖,那通常就是这种版本。

    Banh Bao Xiu Mai

    “Xiu mai”(源自粤语“烧卖”)在南方指代一种开口猪肉丸,通常与小蒸包一起或塞在包子里售卖。在 Saigon 的 Cho Lon 区——历史悠久的唐人街——你会发现专门的 Xiu mai 店,提供浸在清淡番茄汤里的肉丸,并配有一个小 Banh bao 用来蘸汤。这是一种非常值得尝试的早餐组合。

    Banh Bao Chay(素食)

    主要在农历初一和十五出现在寺庙和佛教市场附近。内馅通常是豆腐、芋头、香菇和粉丝。面团做法相同;质量因摊贩而异。

    如何点餐(以及注意事项)

    街头推车购买 Banh bao 是一种即时交易。没有菜单。你指一下,付钱,然后得到一个装在小塑料袋里的包子。价格为每个 10,000–20,000 VND,具体取决于大小和城市;如果街头摊位要价超过 25,000 VND,说明你可能在旅游区附近。

    购买前请留意几点:

    • 蒸柜应该正在冒热气。 离开热源放置的包子会变粘,面团会塌陷。
    • 寻找捏褶的顶部。 蒸制过程中裂开的包子通常是发酵过度或制作仓促。
    • 掂掂重量。 馅料充足的包子相对于其体积会感觉很沉。如果感觉轻飘飘的,那里面大多是面团。

    Banh bao 本身不需要蘸酱——内馅已经调过味了——但一些南方摊贩会提供少量的美极鲜酱油或辣椒酱。其实完全没必要。

    Banh Bao Co Ba Cang — Saigon(第5区,Cho Lon) 当地人公认的老派 Cho Lon 风味 Banh bao 地址。包子很大,馅料比例实在,搭配番茄汤里的 Xiu mai 是必点理由。位于 Trieu Quang Phuc 街,大约早上6点开门,卖完即止。

    Banh Bao Dinh — Da Lat Da Lat(大叻)凉爽的气候让蒸食别有一番风味。这家位于春香湖(Xuan Huong Lake)附近的小型家族经营店几十年来一直沿用同一个配方。面团比 Saigon 版本稍厚——几乎像面包一样——馅料适中。截至2024年底,每个包子 12,000 VND。

    Banh Bao Hang Buom — Hanoi(河内)(老城区) 地道的北方 Banh bao:个头较小,甜度较低,从早上7点左右在 Hang Buom 街摆出的推车上售卖。这是最接近原始华裔茶楼包子的版本,内馅的简洁凸显了猪肉的品质。配上一杯附近路边塑料凳咖啡馆的“ca phe sua da”一起享用吧。

    实用小贴士

    Banh bao 是典型的早餐食品。大多数优质街头摊贩在早上9点或10点前就会卖光,当天晚些时候重新加热的包子口感会明显下降。如果你在 Saigon,第5区是寻找南方风味的最佳地点;如果你在 Hanoi,老城区的推车最容易找到。预算准备每个 15,000–20,000 VND,趁热站着吃掉它吧。
