    什么是 Banh Ep

    摊主会给你一把小剪刀,让你把它剪成小块,抹上一层辣椒酱,有时还会配上一片青芒果或少许新鲜香草。你可以站着吃,或者坐在像鞋盒那么大的塑料凳上吃,而下一份已经在压制中了。

    口感是其灵魂所在:边缘酥脆,中心因鸡蛋凝固而略带嚼劲,炭火带来的烟熏味是燃气灶无法复制的。

    在顺化哪里可以吃到

    Banh ep 摊位最集中的地方是 Nguyen Binh Khiem Street,特别是在下午3:30学生放学后,学校区域附近会变得非常热闹。这并非巧合——Banh ep 是学生美食,是下午茶,也是平价小吃。这里的摊位大多从下午3点营业到晚上7点或8点,或者卖完即止。

    一份 Banh ep 的价格在 5,000–8,000 VND 之间,取决于配料。仅加鹌鹑蛋的最便宜;加上肉干则达到价格上限。一次吃三四个是很正常的——毕竟这个价格,完全值得。

    另一个可靠的地点是香江(Perfume River)南岸 Truong Tien Bridge 附近的摊位群,那里通常营业到深夜,吸引了当地人和游客等各色人群。

    如果你住在顺化 Imperial Citadel 附近,可以问问旅馆工作人员最近的学校周边摊位在哪里——城里散布着许多地图上找不到的社区摊位。

    它与越南其他地区有何不同

    这就是有趣的地方了。Banh ep 在其他几个城市也有名号——你偶尔会在 Da Nang 甚至 Hanoi 看到招牌——但成品通常与顺化的版本大相径庭,几乎可以被视为完全不同的小吃。

    在 Da Nang,摊主有时会用米纸代替木薯粉饼,这使得成品更脆更薄,但缺乏嚼劲。配料也偏甜。在 Saigon,街头小摊偶尔会提供所谓的 Banh ep,但那些粉饼通常是预制的商业木薯片,现点现压——口感更脆且更统一,缺少了手工制作粉饼那种微妙的不规则感。

    这并非批评这些城市的街头美食——Saigon 的“com tam”和顺化的“bun bo Hue”本身都是世界级的。但 Banh ep 是一种真正具有地域特殊性的小吃。炭火的热度、新鲜打入的鹌鹑蛋、顺化木薯粉饼特有的厚度——这些都不是营销噱头,而是实实在在的变量。

    顺化的饮食文化深植于这种对细节的追求。这座城市为越南贡献了内馅饱满的“banh cuon”,对“banh mi”的配料比大多数地方更讲究,还制作出一种与广南原版截然不同的姜黄面条版“mi quang”——在这里,制作者和食客都非常看重菜品之间细微的差别。

    Banh ep 正符合这一模式。它不是你在顺化吃到的最华丽的东西,价格甚至比一杯咖啡还便宜。但它就是那种能让你明白为什么食物的“独特性”如此重要的小吃。

    实用小贴士

    请在下午前往,不要等到晚餐后——大多数摊位在晚上8点前就开始收摊了,最好的摊位通常会更早卖完。请准备好零钱;摊主很少有找零100,000 VND面额纸币的习惯。如果你在越南中部的行程中顺便游览顺化,下午的 Banh ep 之旅非常适合在傍晚前沿着香江漫步。
