    Vung Tau 作为美食目的地并不常被提及,但它却为越南(Vietnam)贡献了最具技术特色的街头小吃之一:“banh khot”。这是一种在铸铁或陶制模具中烹制的小型厚边米饼,顶部放上一只虾,再倒入椰奶,使底部变得酥脆,中心则呈现出类似蛋奶糊的口感。一旦你了解了什么才是正宗的 banh khot,你就会发现自己以前吃过多少“冒牌货”。

    什么是 Banh Khot

    简单来说,banh khot 是一种用米浆制成的咸味小饼,在独立的模具中烹制而成。每个模具直径约相当于一个子弹杯大小,倒入富含椰奶的面糊,压上一整只虾,然后盖上盖子,利用蒸汽将中心蒸熟,同时底部在薄薄的油层中煎炸。成品底部金黄酥脆,顶层松软,虾肉则刚好断生。

    这种食物的名字具有象声词的特点,这在越南美食中并不多见——据说“khot”模仿的是面糊接触滚烫模具时发出的声音。无论这是民间词源还是事实,这个名字已经流传了下来。

    标准的份量是每份六到十个,摆放在香蕉叶上,或铺有“banh trang”(米纸)的盘子里,旁边配有一堆香草——通常是芥菜、 “rau ram”(越南香菜)和“rau muong”(空心菜叶),不过配菜会因地区而异。

    陶模烹饪技艺

    模具并非可有可无,它正是烹饪的核心。传统的 banh khot 锅由铸铁或陶土制成,上面排列着半球形的浅凹槽。锅先干烧加热,倒入面糊前每个凹槽都要刷上一层油。顺序至关重要:先倒入面糊涂满底部,趁面糊还呈液体状时压入虾,然后盖上盖子焖大约两分钟。

    面糊中的椰奶同时发挥两种作用:油脂在滚烫的金属表面将底部煎脆,而液体产生的蒸汽则将顶部蒸熟。起锅太早,中心会夹生;时间太长,虾还没熟底部就焦了。优秀的 banh khot 厨师对火候掌握得炉火纯青,他们会按顺序旋转模具,确保每一块饼都能同时出锅。

    现代版本有时会使用不粘涂层的铝锅。它们制作更快,清洗也更方便。但它们做出来的饼明显逊色——边缘较薄,蓄热能力差,底部更像是蒸出来的而不是煎出来的。如果你看到陶制或经过养护的铸铁锅,那才是更好的厨房。

    值得了解的区域变体

    Vung Tau(붕따우 / 头顿 / ブンタウ)是其正宗发源地,当地的版本——个头小、边缘厚、椰奶味浓郁——是大多数越南人听到这个名字时脑海中浮现的形象。传统做法中,虾通常是连壳带头的,尽管面向游客的摊位通常会先去壳。

    向北前往 Hue,你会发现这里的面糊更清淡,椰奶较少,有时会在虾的基础上加入猪肉末或绿豆作为馅料。Hue 的版本个头稍小,口味也没那么浓郁——这符合该市偏好浓郁风味但不过于油腻的饮食习惯。

    在 Saigon,banh khot 已演变成 Binh Thanh 区和第三区街头摊位上的快餐。面糊通常更稀,虾更小,搭配的香草也更简单。虽然依然美味,但它更像是一种零食而非正餐。

    一种较少见的变体是用“muc”(鱿鱼)完全代替虾,切成圈压入面糊中。在 Da Nang 和 Nha Trang(냐짱 / 芽庄 / ニャチャン)之间的沿海城镇偶尔能见到。如果看到了,非常值得一试。

    如何正确包裹和食用

    这是大多数初学者容易出错的地方。Banh khot 并不是那种直接拿起来就咬的手抓食物——正确的吃法需要包裹。

    拿一片芥菜叶(“la cai xanh”)平铺。在中心放一个饼,加一两片 rau ram,然后将叶子折叠成一个小包裹。将整个包裹在蘸料中轻轻蘸一下——蘸料通常是加了少许鲜青柠汁的“nuoc cham”,上面撒着辣椒片——然后一口或两口吃掉。

    芥菜叶提供了一丝苦味,可以中和椰奶面糊的浓郁感。Rau ram 则增添了一种尖锐的、类似柑橘的清香。如果没有这些香草,你吃到的只是美味;而有了它们,你才是在品尝这道菜设计的精髓。

    不要蘸太多酱汁。酱汁应该是点缀,而不是淹没它——banh khot 本身已经从椰奶中获得了足够的水分。

    在哪里品尝正宗版本

    Banh Khot Co Ba Vung Tau — Vung Tau

    当地人公认的最稳定推荐。Co Ba 在 Nguyen Truong To 街上经营了数十年。一份的价格大约在 50,000–70,000 VND。他们的锅具古老,面糊椰香浓郁,虾也是当地新鲜捕捞的。

    Quan 94 Dinh Tien Hoang — Saigon

    这是 Saigon(사이공 / 西贡 / サイゴン)Binh Thanh 区一家备受推崇的老字号,忠实地还原了南部风格。上午 11 点到下午 1 点之间最为繁忙。一份价格在 60,000–80,000 VND 之间,配菜非常慷慨。

    Banh Khot Hai San — Da Nang

    如果想尝试带有鱿鱼和清淡面糊的中部沿海变体,Da Nang(다낭 / 岘港 / ダナン)Bach Dang 河畔的摊位提供了非常接近南部风味的出品。价格相近——每份约 50,000–65,000 VND——而且河边的环境让这里非常值得一去。

    实用贴士

    在大多数地方,banh khot 是一道午餐和晚餐菜肴——不要指望在早餐摊位找到它。专门店的高峰时段是上午 11 点至下午 2 点,以及下午 5 点至晚上 8 点;如果在这之外的时间前往,面糊可能已经卖完了。如果你正在南部沿海旅行,Vung Tau 距离 Saigon 很近(东南方向约 120 公里),安排半天的美食绕道之行非常合理。
