    什么是 Banh Nam?

    Banh nam 是一种薄而近乎半透明的蒸糕,由米粉和木薯淀粉混合制成。将面糊倒入一个扁平的矩形模具中,铺上馅料,然后用新鲜的香蕉叶包裹起来蒸熟,直到米糕呈现出一种介于丝滑与胶质之间的口感——比起饺子皮,它更接近于紧实的果冻。香蕉叶并非装饰:它能为米糕增添一丝淡淡的草本清香,并防止表面粘连或变干。

    尺寸在这里至关重要。一份标准的 banh nam 厚度绝不会超过你的手指。如果它看起来鼓鼓囊囊或面团感太重,说明面糊比例或蒸制时间出了问题。

    顺化渊源

    Banh nam 起源于前帝国首都 Hue,带有美食历史学家所称的“宫廷菜”特征——即为阮朝宫廷服务而发展出的烹饪传统。这一传统推崇小巧、精准和视觉上的克制,而非大分量。Banh nam 正好符合这些特点:每一块都是独立包装,分量可控,制作精细。

    Hue 的饮食文化造就了种类繁多的米糕——包括“banh beo”、“banh loc”、“banh uot”和 banh nam 等——它们之间的区别在于质地、包裹方式或馅料,而非剧烈的口味反差。当地人对待这些区别非常认真。如果你在 Hue 的一家“quan”(小餐馆)点餐时指着它说“那个扁的”,老板可能会给你一个奇怪的眼神。

    如果你还没去过,了解这座城市对越南饮食的影响非常值得——Hue 值得你放慢脚步去探索,而美食正是其中的重要组成部分。

    馅料:里面有什么?

    经典的馅料是干虾仁(“tom kho”),有时会加入猪肉、蘑菇,或两者兼有。虾仁经过泡发和调味,在折叠前被放置在米糕的中心线上。在更高级的版本中,你还会发现细碎的木耳和少量熬制的猪油混合在馅料中,这能确保蒸制过程中内部保持湿润。

    地区与现代变体

    在 Hue 当地,馅料保持着克制:虾仁、可能的猪肉、蘑菇,仅此而已。在 Da Nang 和 Saigon 的街头摊贩制作 banh nam 时,往往会进行改良——加入更多的五花肉,使用虾米酱代替整只干虾,或者在蒸好后撒上“hanh phi”(炸葱酥)。

    Da Nang 版本的 banh nam 通常稍厚一些,鱼露的调味也更浓郁。Saigon 版本的差异很大,取决于厨师是否来自 Hue 或是否通过二手知识学习。这些版本本身没有对错之分,但它们与 Hue 原版有着明显的区别,行家一尝便知。

    此外还有一种较少见的变体叫“banh nam nuong”——不是蒸的,而是烤的——将包好的香蕉叶包裹直接放在炭火上烤。香蕉叶边缘会焦化,米糕也会带上一丝淡淡的烟熏味。这种做法较难找到,通常只在专门的 banh nam 店铺供应,而不是一般的街头摊位。

    蘸酱

    Banh nam 通常搭配“nuoc cham”食用——即越南菜中常见的鱼露、青柠、糖和辣椒蘸酱——但 Hue 版本的口味比你在 Hanoi 或 Saigon 吃到的更偏甜,酸度较低。有些店会提供一种加了更多大蒜的浓稠版本。吃的时候,打开香蕉叶,将米糕平铺在叶子上(叶子本身就是盘子),撕下一小块蘸酱食用。

    千万不要把酱汁直接倒在米糕上。这样米糕会迅速变软,失去丝滑表面与馅料之间的质感对比。

    如何点餐

    Banh nam 几乎总是和其他 Hue 米糕一起售卖——你很少会看到只卖这一种的摊位。在大多数地方,按数量点餐:“cho toi nam cai banh nam”意为“给我五个 banh nam”。在 Hue,价格通常为每块 5,000–8,000 VND,在 Saigon 则略高(每块约 8,000–12,000 VND)。

    如果你想一次尝试多种口味——这是最明智的做法——可以点一份混合拼盘:包含 banh nam、banh beo 和 banh loc。大多数 Hue 风格的餐馆都能听懂“mot dia thap cam”(一份混合拼盘),并为你呈上一份精选组合。

    趁热吃。放凉后的 banh nam 会变得像橡胶一样,馅料也会塌陷。如果店里有正在工作的蒸笼,且米糕源源不断地出炉,那你找对地方了。

    去哪里品尝经典版本

    Quan Banh Nam Ba Thi — Hue。 位于 Tran Hung Dao 大街的 Dong Ba 市场附近,这家店经营时间长到常客们甚至不需要点餐。干虾馅料调味适中,不会过咸,每一块米糕的厚度也非常均匀。每块约 6,000 VND。

    Quan Banh Nam Co Sau — Da Nang。 位于 Nguyen Chi Thanh 大街,这家店提供稍厚一点的 Da Nang 版本,配有炸葱酥和蒜味更浓的鱼露蘸酱。如果你在 Da Nang 且不想开车 100 公里南下前往 Hue,这是个不错的选择。

    Huong Que — Saigon, District 4。 南部最地道的 Hue 风格米糕店之一。这里的 banh nam 不会试图改变其本质——薄、蒸得恰到好处、干虾馅料、正宗的 nuoc cham。每块约 10,000 VND,在 Saigon 算是合理的价格。

    实用贴士

    Banh nam 属于早午餐食物——大多数店在下午早些时候就会卖光,晚餐时段不再补货。如果你想去寻找它,尽量在中午之前到达。这种食物不耐存放,所以不建议打包外带;最好直接在摊位上享用。
