    每年的中秋节前约六周,越南的烘焙店里便堆满了漆器礼盒,空气中弥漫着温热蛋液和烤芝麻的香气。“Banh nuong”——即烘焙月饼——是这一切的主角。如果你从未在9月下旬的某个夜晚,从路边的摊位买过一块月饼,那么你便错过了一种这个国家特有的享受。

    什么是 Banh Nuong

    “Banh nuong”字面意思是烤饼,用以区别于它的“兄弟”——“banh deo”(冰皮月饼,无需烘烤)。Banh nuong拥有薄薄的饼皮,由面粉、糖浆和少许油制成,烘烤后呈现出深琥珀色。它的口感介于酥饼和软曲奇之间:第一天吃起来略带嚼劲,到了第三天则会变得如软糖般绵密。

    月饼的内馅才是精髓所在。它的馅料扎实、香甜且浓郁,一块150克的月饼通常适合多人分享,而不是一个人的零食。

    核心馅料

    莲蓉馅 (Nhan Hat Sen)

    这是最经典的馅料,也是评判其他所有Banh nuong的标准。干莲子经过浸泡、煮软,再与糖和油混合,磨制成细腻、浅色的莲蓉。好的莲蓉带有淡淡的清香和纯净的甜味,绝不甜腻。廉价版本通常油放得太多,味道平淡。最好的莲蓉来自那些坚持店内现磨,而不是购买工业化预制馅料的烘焙店。

    咸蛋黄 (Long Do Trung Muoi)

    几乎每一块值得购买的Banh nuong中心都埋着至少一颗咸鸭蛋黄。咬开饼皮和馅料,你会触碰到那个核心:一颗扎实、橙红色的圆球,咸香、油润,且带有恰到好处的特殊风味。顶级的月饼会有两颗蛋黄。有些甚至有四颗,但到了那种程度,馅料与蛋黄的比例就显得有些噱头了。

    蛋黄应该熟透但不过干——切开时应仍保持一点点果酱般的质感。如果蛋黄碎成粉末,说明烤箱温度过高或者蛋黄不够新鲜。

    五仁馅 (Nhan Thap Cam)

    “Thap cam”馅料——字面意思是“十种颜色”——是追求极致的选项:它是莲蓉或绿豆蓉的混合体,点缀着冬瓜糖、烤西瓜子、芝麻、南瓜子、陈皮,有时还会加入中式香肠或火腿。其口感丰富、香气四溢,在层次感上远胜于纯泥状馅料。这也是最传统的一种口味,与通过Saigon和湄公河三角洲的Hoa(华裔)社区几代人传承下来的粤式食谱有关。

    绿豆蓉馅 (Nhan Dau Xanh)

    去皮绿豆蓉比莲蓉更温和,颗粒感略强,带有一种植物的清甜。这通常是较便宜的选择,在超市量产版本中很常见。做得好的绿豆蓉Banh nuong绝非次选——它口感清爽,与浓茶是绝配。

    如何看标签和购买

    Banh nuong按重量(通常为150克、180克或250克)和蛋黄数量(“1 long do”、“2 long do”)出售。如果你是在烘焙店而不是超市购买,通常可以在柜台选择你想要的馅料和蛋黄数量。

    2024年的价格范围,从超市基础款150克月饼的约35,000 VND,到专业烘焙店手工制作版本的120,000–200,000 VND不等。进口或礼盒装的精品月饼价格可能在500,000 VND以上,但那个价格大多是包装和品牌溢价——里面的月饼质量通常并不会成比例提升。

    一个实用小贴士:Banh nuong的标称保质期为7–14天,但饼皮在烘烤后的第2–4天口感最佳,因为这时它经历了“回油”过程——馅料中的油脂渗入饼皮,使其变软。如果你买的是当天刚烤出来的,建议放置48小时后再切开食用。

    Banh Nuong 与 Tet Trung Thu

    如果不了解Tet Trung Thu(中秋节),就无法真正理解Banh nuong。中秋节在农历八月十五,通常在9月中下旬。从本质上讲,这是一个儿童节日:有提灯游行、舞狮表演,以及家庭成员之间互赠月饼。月饼既是食物也是礼物。人们会精心挑选礼盒,系上丝带,作为企业礼品堆放在办公室,或作为祭品摆放在祭坛上。

    在中秋节那六周之外,Banh nuong基本上就消失了。虽然有少数专门店可以应要求全年制作,但那些街角摊位、百货公司的快闪店、堆满品牌礼盒的烘焙店橱窗——这些都是季节性现象。而这正是它值得关注的原因。

    去哪里品尝经典版本

    Kinh Do Bakery (Saigon): 这是该市最知名的月饼品牌,在Saigon各地都有门店。他们的莲蓉双黄月饼(150克约85,000 VND)品质稳定、比例均衡,是一个可靠的参考点。虽然不是最手工化的选择,但它是大多数Saigon人从小吃到大的味道。

    Bao Phuong Bakery, Thuy Khue Street (Hanoi): 这是一家位于Thuy Khue湖边街区的单店老字号,每到中秋节,排起的长队都会延伸到人行道上。他们的五仁馅(thap cam)是人们排队的原因。在高峰夜晚,预计要等待20–40分钟,每块月饼价格在60,000–90,000 VND之间。非常值得。

    Dong Khanh Bakery (Hoi An): 这是一家规模较小的店铺,位于越南中部,名气不如河内或Saigon的品牌大——但这正是它出现在这份名单上的原因。他们的绿豆单黄月饼使用了Hoi An当地的食材,配方始终如一,没有盲目追逐潮流。每块约45,000 VND。建议买两块。


    实用建议: Banh nuong的季节大约从8月下旬持续到中秋节当晚——之后大多数摊位会在24小时内关闭。如果你在9月到访越南,预算200,000–300,000 VND尝试两到三种不同的口味。搭配莲花茶或越南咖啡享用,并将每块月饼切成八小份——它比看起来要浓郁得多。
