    Da Nang的Banh Xeo有什么不同

    在Da Nang,Banh Xeo——那种滋滋作响的黄色薄饼——比Saigon或Can Tho的版本更薄、更脆。姜黄与面粉的比例更轻,做得好的时候边缘几乎像蕾丝一样透薄,馅料以虾仁和五花肉为主,不像南部版本那样塞满豆芽。蘸汁也更偏向鱼露加青柠的清爽风格,辣椒用得少。这是越南中部的特色,对于只在旅游景点随意点餐的游客来说,不一定能尝到真正的味道。

    如果你只在Ho Chi Minh City吃过Banh Xeo——那种盘子大小、豆芽堆满、像煎蛋卷一样对折的厚饼——那Da Nang的版本会让你觉得完全是另一道菜。面糊更稀,中间几乎透明,饼也更小,大约甜点盘的尺寸。一般要吃两三张,而不是对着一张大的苦苦应付。这里的香草拼盘也更重要:通常会有生菜、紫苏、薄荷、米纸和青香蕉片。包裹的过程本身就是用餐体验的一半。

    Banh Xeo 48B Hang Luoc

    这是Da Nang本地人第一个会提到的地方。藏在第一郡一条狭窄的小巷里(48B Hang Luoc),早上6:30开门,周末11点前就能卖完。一张饼25,000 VND;点两张加配料(虾、鱿鱼、额外馅料)大约50,000-60,000 VND。老板娘Huong已经用同样的方式做了22年——不走捷径,不批量预制,每张饼都现做。虾仁整只弹牙,五花肉煸得恰到好处。记得另外点米纸和香草;这里的生菜新鲜到可以直接生吃。

    要早去。7:30就开始排队,10点以后你就只能眼睁睁看着别人空手而归。

    这条街很容易错过。如果从Dragon Bridge步行过来,沿Bach Dang向南,再向内陆拐进去,总路程约800米。如果从海滩那边过来,打Grab或打车更方便,跟司机说"Banh Xeo Hang Luoc",大多数人都知道。

    Banh Xeo Ba Duong(Nguyen Hue分店)

    这家没那么神秘,但靠谱,而且营业时间比大多数店长(早6点到下午2点,下午4:30到晚9点)。位于Nguyen Hue街,Saigon Tourane酒店附近,比Hang Luoc好找,吸引了一批摸清Da Nang饮食门道的本地人和外籍居民。饼价20,000-25,000 VND,开口要求多做也没问题。馅料给得大方但不杂乱,脆与韧的比例拿捏得当,上菜快,桌椅简单实用。

    早上7到9点来可以赶上面糊最新鲜的时段;下午4:30以后来则可以避开午餐人流。

    Ba Duong在靠近Han River的Hoang Dieu也有一家分店,但Nguyen Hue这家是原店,出品更稳定。如果你下午在My Khe海滩附近,不想折回老城区,Hoang Dieu那家作为备选也合理——配方一样,员工年轻一些。

    Banh Xeo 40 Tran Cao Van

    规模更小,一个女人加一间逼仄的厨房,但这里是Da Nang一些美食写手的私藏去处。Tran Cao Van位于老城区,从Han Market步行可到。饼价22,000-28,000 VND,视馅料而定。这里的姜黄用量比另外两家重,更接近Hoi An的风格,喜欢口味更厚实、不那么精致的食客会更喜欢。她还做一款鱿鱼虾仁的特色版本,不太常见,有的话值得一点。

    营业时间固定:早6:30到10点,到点即止,周一休息。

    鱿鱼虾仁版大约每张28,000 VND。她不会主动介绍,直接问"co muc khong?"(有鱿鱼吗?),她会点头或摇头。从Han Market走过来,沿Tran Cao Van向西南方向走约600米。店里没有英文招牌,认准街边露出来的平底铁锅和一小圈塑料凳子就对了。

    如果你早上本来就在逛Han Market(Cho Han),市场里靠近熟食区的位置有两三家Banh Xeo摊。没有专门店精致,但价格低至15,000-18,000 VND,来买菜的本地人就站着吃。出品不太稳定,有时脆、有时软,但体验很真实——你是在和建筑工人、老奶奶们一起吃早饭。

    市场大约早6点开门,熟食区在早7到9点最热闹。顺便一提,这里的粉(vermicelli)汤摊也不错——点一张Banh Xeo配一小碗"bun rieu"(蟹肉米线),总共不到40,000 VND,就是一顿地道的越南中部早餐。

    Da Nang的Banh Xeo与其他地区的比较

    越南中部有自己做Banh Xeo的方式,即便在同一地区内也有差异。往北约100公里的Hue,饼更小,几乎像零食的尺寸,面糊有时加入椰奶,口感更浓郁,带一点甜味。Hue版本通常配花生酱蘸汁和鱼露一起上,这在Da Nang很少见。

    往南约30公里的Hoi An,饼介于两者之间:比Da Nang厚,比Saigon薄,姜黄色更深。Hoi An的摊主有时会配米纸供食客包裹,这在Da Nang也常见,但在那里几乎是标配。

    南部版本——在Ho Chi Minh City大多数地方吃到的那种——完全是另一个量级。更大张,面糊里加了更多椰奶,豆芽塞得满满当当,折成半月形。南部Banh Xeo更浓郁、更厚重,在Saigon吃一张,可能撑到下一顿都不饿。Da Nang的版本则是让你吃几张小的,然后继续去过自己的一天。

    这一点值得了解,因为如果你走的是典型的Hanoi到Ho Chi Minh City路线,一路上至少会遇到三四种地方风格。Da Nang的版本可以说是其中最精致的——不在乎分量,讲究的是酥脆的口感和清爽的味道。

    如何点餐和吃法

    指着饼说"mot"(一张)或"hai"(两张)。想加虾说"them tom",想加鱿鱼说"them muc"。大多数摊主没有菜单,默认你懂行。

    上来之后,撕一块,用米纸或生菜包起来,加上香草(薄荷、香菜、莳萝——拿面前有的就行),蘸鱼露,两口吃完。饼凉得很快,趁热吃。

    几个实用的点餐用语:"it ot"是少辣,"khong ot"是不要辣,"them rau"是多加香草。想要白米饭可以说"them com trang"——有的店有,有的没有。饮料通常是免费冰茶,或者开口说"tra da"(冰茶)也保险。别指望在Banh Xeo摊喝到"ca phe"——咖啡留着出发前在附近街边摊喝完再来。

    哪些地方要避开

    不要在旅游餐厅或酒店点Banh Xeo。那里的饼厚、油腻、馅料堆得乱,更像烹饪课上的越南煎饼,而不是真正的东西。只去专门店或市场摊位。

    有些摊主晚上也卖Banh Xeo,但往往是午餐剩下来保温的。在Da Nang,只有上午和午前这段时间的Banh Xeo才值回票价。

    外国游客常犯的错误

    跳过香草。 香草拼盘不是摆设。没有它,Banh Xeo不过是一张炸饼。用生菜包裹,撕入薄荷和紫苏,有青香蕉片的话也加上一片。清新的香草味能解油腻,让整道菜的层次出来。

    蘸汁倒太多。 是蘸,不是浇。轻轻蘸一下"nuoc mam"(鱼露)就够了。把蘸汁灌进米纸卷里,整个东西几秒钟就软烂了。

    10点以后才到。 最好的几家店到上午中段就开始收摊了。Banh Xeo在Da Nang是早餐食物。中午才到,要么只剩最后一批,要么看到的是卷闸门。

    只点一张。 每张20,000-25,000 VND,一张只够垫垫肚子。本地人一般点两三张。一顿完整早餐含饮料,预算50,000-75,000 VND每人。

    把Banh Xeo和"Banh Cuon"搞混。 两者都是米制品,都有馅,但"Banh Cuon"是蒸米卷——口感和做法完全不同。如果看到别人盘子里有白色、光滑、丝绸质感的薄片,那是Banh Cuon,不是Banh Xeo。两样都很好吃,但要搞清楚自己在指哪个。

    以为会有英文菜单。 这里列出的这几家店,别指望有英文。把上面三四个短语学会,自信地指菜,用手指比数量,完全没问题。

    每张饼15,000-28,000 VND,视地点和馅料而定。大多数专门店11点前关门,早去是关键。带现金,刷卡的地方极少。以上所有地点均在第一郡,步行可到,或花20,000 VND打车互达。选定一家,吃完,再问当地人下一站去哪。

    如果在Da Nang待超过一天,可以把Banh Xeo早餐和其他越南中部菜搭配着吃。"Mi Quang"(姜黄汤面)是Da Nang另一道招牌,通常当午饭吃。"Bun cha"是Hanoi的菜,但Da Nang也有几家餐厅做得不错。晚饭时分,Nguyen Van Linh沿线会有"com tam"(碎米饭)摊开档。如果第二天要去Hoi An,记得留点肚子吃"cao lau"——那是只有那座小城才有的特色厚面,别处找不到。

    总结

    Da Nang的Banh Xeo不需要什么宣传噱头——只需要找对店、赶对时间。在9点前到这几家店的任何一家,点两三张饼,好好地用香草包起来吃,你就会明白为什么当地人每天早上都这么吃。花50,000 VND,吃到的早餐比城里大多数餐厅都强。
