    Da Nang版本的独特之处

    在正宗的当地摊位,每碗价格通常在30,000–50,000 VND之间。如果是在面向游客的店里看到超过60,000 VND的价格,通常不值得支付溢价。

    Ba Lua — 23 Tran Binh Trong

    这是Da Nang美食圈提到鱼饼米粉时首先会想到的店。Ba Lua已经经营了几十年,通常清晨6点左右开门,卖完即止——通常在9:30之前。这里的汤底清澈鲜香,而非浓郁的番茄酱风味;菠萝的酸味非常微妙。鱼饼是自家制作的,口感与众不同。每碗35,000 VND。这里没有菜单,没有英文标识,Tran Binh Trong路上的停车位也很紧张。直接指着锅里的东西点餐,然后坐下即可。

    Bun Cha Ca 109 — 109 Nguyen Chi Thanh

    相比Ba Lua,这家店的知名度更高,除了早高峰外,午餐时段也人头攒动,足以证明其品质的稳定性。这里的汤底番茄味更浓,口感略甜。他们会加入大量的莳萝和葱花,鱼饼比一般的更厚实——中心有嚼劲,外层酥脆。每碗40,000 VND。早上6:30开门,中午左右关门。座位是路边最基础的塑料凳。

    Quan Bun Cha Ca O Vuong — 70 Ong Ich Khiem

    名气虽小,但值得专程前往。这家摊位由一位老奶奶经营,多年来配方几乎没有变动,这正是食客所追求的。这里的菠萝味比大多数地方更突出,几乎带点酸涩。鱼饼较小且口感更轻盈。每碗30,000 VND,周末在早上7:15之前往往就坐满了。生意繁忙时早上9点前就会关门,有时甚至更早。一定要早去,否则就会错过。

    Bun Cha Ca Bich — Nguyen Duy Hieu Street, 靠近An Hai市场

    在Han River东岸的An Hai区,Bich是当地人吃bun cha (분짜 / 烤肉米粉 / ブンチャー) ca的据点。汤底浓郁,莳萝放得毫不吝啬。如果你想吃点更扎实的,他们菜单上还提供“banh canh”。价格在40,000–45,000 VND。早上6点开门,通常10点左右卖完。如果你住在My Khe Beach附近且不想过河吃早餐,这是一个很好的选择。

    Bun Cha Ca Thi — Hoang Dieu, 靠近Pho市场

    比起其他几家,Thi规模更小,也更低调。这是一家由一位女性独自经营的摊位,位于Hoang Dieu室内市场边缘。出餐速度是这份名单中最快的——她会提前分装好食材。鱼饼的质量偶尔会有波动,但品质好时,汤底味道清爽明亮,莳萝与汤的比例恰到好处。每碗30,000 VND。只营业到上午8:30左右。

    避坑指南:Han市场附近的游客店

    Han市场周围的那些面摊——尤其是那些有英文图文菜单、店员会在街上招揽客人的店——通常供应的bun cha ca味道平淡、价格虚高(60,000–80,000 VND),且专为一次性游客准备。鱼饼通常来自商业供应商,汤底缺乏深度,莳萝也只是点缀。虽然不是绝对,但如果Han市场附近有店在向游客大肆宣传,那么他们的bun cha ca通常不是主打。

    点餐实用小贴士

    大多数摊位只卖一两种食物,所以点餐很简单——伸出手指表示碗数即可。调味料(新鲜辣椒、青柠、鱼露)通常放在桌上。豆芽会放在盘子里,可以根据喜好自行添加。如果你想要额外的鱼饼,说“them cha ca”,通常需要多付10,000–15,000 VND。大多数地方不接受刷卡,请准备好零钱。
