    什么是 Che Bap,为什么 Hoi An 的最正宗

    “Che bap”是一种将甜玉米粒悬浮在丝滑的类似蛋奶冻的甜汤中的甜点,通常装在碗里温热上桌,旁边配有碎冰(你可以自己决定加不加)。它并非 Hoi An 独有——在越南(베트남 / 越南 / ベトナム)中部和南部都能找到不同版本——但 Hoi An 已经将其升华为一种介于治愈系美食仪式和当地人骄傲之间的存在。这里的甜玉米更新鲜,蛋奶冻更浓郁,而且制作它的摊位通常都有着几十年的历史。

    Che Bap Hue(Tran Phu 街)

    Che Bap Nguyen Hue(街头手推车,位置不固定)

    如何点单以及有何期待

    指着你想要的碗(如果有展示的话),或者直接说“Mot tia che bap”(一碗 che bap)。如果你想吃热一点的,就说“Nong”(热)。如果你想多加点冰,就说“Thêm đá”(多加冰)。想要浓一点还是稀一点?在这些摊位上这通常是没得商量的——他们当天做成什么样,你就吃什么样的。

    通常是吃完付款。你可以坐着或站着(大多数摊位只有两三把凳子)。用勺子吃。如果你吃得太急,它可能会烫到你的嘴。

    什么时候去

    清晨(早上 6-8 点)是最好的时段。蛋奶冻最温热,玉米也是早上 5、6 点刚做出来的那批最新鲜的,而且你可以避开游客人群和午餐排队的队伍。傍晚(下午 4-6 点)是次优选择——人比较少,而且还是热的。除非别无选择,否则尽量避开中午。

    避开 8 月和 9 月,那时玉米的质量会下降,摊位有时也会因为天气炎热而关门几天。

    实用提示

    Hoi An 的 Che Bap 摊位都很传统——没有刷卡机,没有手机支付,只收现金。预算为每碗 20,000-30,000 VND。大多数摊位都在古城内或附近,距离古城入口仅几步之遥。从点单到吃完一碗大约需要 10 分钟;这里没有匆忙的文化。当地人经常把它当作第二顿早餐(在吃完 banh mi(반미 / 越式法包 / バインミー)或 pho 之后),或者作为午餐后的消暑甜点。
