    谅山距离 Hanoi 东北方向约 170 公里,路程短到足以周末往返,又远到让大多数游客望而却步——而这正是当地饮食文化得以保持纯粹的原因。定义该省的两道招牌菜分别是“vit quay”(烤鸭)和“khau nhuc”(扣肉,即加入发酵芥菜慢炖的五花肉),两者均植根于岱依族(Tay)和侬族(Nung)的烹饪传统,与你在南部找到的任何食物都截然不同。

    Vit Quay — 不仅仅是烤鸭

    谅山的 vit quay 与你见过的挂着亮漆的北京烤鸭不同,也与在 Hanoi 旅游市场售卖的蜂蜜涂层烤鸭完全两样。这里的鸭子体型较小、肉质精瘦——通常是在该省山区散养的——腌料则依赖当地的香料:姜、南姜、五香粉,以及一种由“mac khen”胡椒制成的区域性调味酱,这是一种生长在东北高地、香气浓郁的小浆果。

    制作过程非常讲究。鸭子需腌制过夜,风干后用木炭或木柴烤炉烘烤,直到表皮起泡,敲起来发出清脆的声音。由于鸭子体型小且脂肪层薄,肉质保持湿润,没有油腻感,只有被香料酱提升后的纯正鸭肉风味。

    在谅山市的 Tran Dang Ninh 街沿线和 Dong Kinh 市场周边,你可以看到橱窗里挂着整只的烤鸭。根据大小不同,整只鸭子的价格约为 300,000–450,000 VND,大多数店家会按要求帮你切好。标准的吃法是搭配糯米饭(“xoi”)以及姜、盐和青柠调制的蘸酱。有些店还会提供一碗清汤,用来蘸食鸭骨。

    如何挑选一只好鸭

    寻找表皮呈深红褐色而非浅棕色的鸭子。鸭皮应该看起来紧致干燥,而不是涂满釉料后的油亮感。如果店里的周转率很高——即整个上午不断有新烤好的鸭子挂出来——这比从早上 7 点就一直摆在那里的鸭子要好得多。最佳的购买时间是上午 9 点到中午之间,那时早晨刚出炉的烤鸭最为新鲜。

    Khau Nhuc — 值得等待的慢炖美味

    “Khau nhuc”是一道岱依族菜肴,制作过程需要耗费大半天时间,因此传统上只在婚礼、Tet 或其他有充足时间和理由庆祝的场合才会制作。端上桌时,你会看到一叠软糯、入口即化的五花肉片——皮、脂、肉完整相连——铺在名为“dua cai”的发酵芥菜床上,底部浸泡着浓郁的深色卤汁。

    制作流程如下:五花肉整块油炸至表皮起泡上色,然后切片,皮朝下与芥菜、干香菇、芋头以及由腐乳(“chao”)、酱油、五香粉和少量糖调制的卤汁一起放入碗中。整道菜放入蒸笼蒸四到五个小时。出锅时,肉质已变得极其软烂——脂肪化为半透明的胶质,表皮从酥脆转为丝滑,而芥菜吸收了足够的猪油,味道变得焕然一新。

    这道菜风味深厚浓郁,因发酵成分带有一丝独特的发酵香,口感丰富却并不油腻。分量虽小,却十分下饭。谅山市的大多数餐厅将其作为套餐的一部分,搭配米饭和清淡的蔬菜,每份价格约 80,000–120,000 VND。

    Khau nhuc 比 vit quay 更难寻觅,因为制作时间长,大多数店每天只做一两批。市中心的 Nguyen Du 街周边和 Le Loi 街的小巷里有几家家庭经营的小店,可以稳定供应午餐。如果你想吃到完整的一份,请在上午 11:30 前到达,否则很快就会售罄。

    同一次旅程中品尝两者

    最合理的安排是花上一整天:早上在市场摊位买 vit quay,午餐在餐厅享用 khau nhuc,下午去 Ky Lua 市场或 Nang Thi 瀑布区逛逛,然后再驱车返回。谅山市很紧凑,大部分美食点都在中央市场步行可达的范围内。

    如果你从 Hanoi 出发,沿着 1A 国道行驶大约需要三个小时,具体取决于北江(Bac Giang)路段的交通情况。此外,还有从 Hanoi 的 Gia Lam 车站出发的火车,行程约四个小时,终点是谅山市中心——虽然较慢,但如果你没有租摩托车,这会更舒适。

    关于北部美食的背景,pho 和 banh cuon 都有值得在回到 Hanoi 后进行对比的区域变体——谅山版的 banh cuon 使用较厚的米皮,有时会加入木耳,与 Hanoi 的标准版有微妙的区别,非常值得一试。
