    芹苴的水上市场固然上镜,但当地人真正钟爱的美食,往往出自那些连招牌都没有、更别提Google地图标注的小摊。只要你愿意用手比划、报以微笑,并在早上7点坐在塑料小凳上,你吃到的绝对比任何预订餐厅都要美味。

    为什么最好的摊位没有评论

    芹苴的大部分街头美食经济建立在邻里忠诚度之上。一位每天早上在Hai Ba Trung和Nguyen Trai街角摆摊的阿姨根本不需要TripAdvisor——她的熟客已经光顾了十五年。这些厨师并非刻意隐瞒,他们只是不需要为了镜头而表演。没有网络足迹通常是一个信号:这里的食物价格和口味是为当地居民准备的,而不是为了过往游客。

    大多数面食的价格在20,000至40,000 VND之间。请务必准备现金。

    去哪里寻找

    宁桥码头(Ninh Kieu)周边的巷弄

    宁桥码头附近的滨江大道是游客聚集区。往内陆走一个街区,无名小摊的密度会立刻增加。在Hai Ba Trung街200号到400号街区之间的西向巷弄,非常值得花一个清晨慢慢探索。寻找一口锅、一张折叠桌,以及贴在墙上的一张手写菜单——或者干脆什么都没有。

    在这里,你可以找到南方风味的“hu tieu”:清澈的猪骨汤底、细米粉、几片猪肉和虾仁,旁边配上一堆生豆芽和香草。它比你在西贡吃到的版本更清爽,更接近湄公河三角洲原生、受高棉文化影响的风格。一碗大约25,000 VND。没人会说英语,但这没关系——指指旁边的人在吃什么就行了。

    宣庆市场(Xuan Khanh Market)的后排

    宣庆市场(cho Xuan Khanh)位于3 Thang 2街,距离市中心约3公里。市场前排售卖农产品和干货,而后排——穿过肉摊区——则是几位阿姨从早上5:30开始现点现做的地方,通常到9点就会售罄。

    这里必点的是“banh canh”,这是一种口感厚实、略带嚼劲的面条汤,却往往被游客忽略。在芹苴,汤底通常用猪蹄和螃蟹熬制,比北方的版本更浓郁油润。指指那锅粗面条,然后伸出手指比划你要几碗。配菜——新鲜辣椒、青柠角、越南罗勒——会自动送上。

    另外,留意市场边缘的“bun rieu”:番茄蟹膏汤底配细米粉,那种深邃的鲜美在尝过之前很难用语言形容。30,000 VND是一个公道的价格;如果他们开价更高,那说明他们看出你是游客了。

    Co Bac街的清晨推车巡礼

    Co Bac街靠近Ly Tu Trong路口,从早上6点左右开始,会有零星的推车摊贩。供应的品种随日期和季节而变,但你总能在这里找到“banh mi”——不是会安那种游客版,而是三角洲版本:更小、更酥脆的法棍,抹上肝酱,夹入冷切肉、腌萝卜丝,再淋上一滴美极鲜酱油。价格在15,000–20,000 VND。

    在清晨(7点前),寻找售卖“banh cuon(蒸米卷)”的摊位——蒸米皮卷入猪肉末和木耳,配上一碟蘸水,撒上炸红葱头。这才是真正意义上的早餐:精致、清淡,8点前就会卖光。

    没有菜单时如何点餐

    以下几个实用习惯能让你的点餐过程更顺利:

    先观察再入座。 花三十秒观察大家在吃什么。如果每个人点的都是同一款,那这就是招牌。坐下,指指它即可。

    学会两个短语。 “Cho toi mot to”(给我一碗)和“Bao nhieu?”(多少钱?)能解决大部分问题。你会听到的数字:“hai muoi”(20,000),“ba muoi”(30,000),“bon muoi”(40,000)。

    不要一次点太多。 有些摊位特定的配料——比如蟹膏、猪蹄或炸红葱头——很早就卖完了。如果某种配料没有了,厨师会挥挥手告诉你。灵活应对是这种体验的一部分。

    趁早出发,保持饥饿。 几乎所有值得一试的摊位在10点前都会售罄。6:30–8:00是黄金时段。如果你住在宁桥码头附近,无需刻意规划,一个早晨就能步行打卡三四家店。

    有什么期待

    并非每个摊位都会让你印象深刻。这就是这种觅食方式的一部分——你可能会吃到两碗惊艳的,也可能遇到一碗平平无奇的。重点不在于精心策划的品鉴体验,而在于像芹苴人一样生活。你与赶着上班的当地人同桌,支付当地价格,吃到未经过滤的、最原汁原味的食物。

    芹苴是一座宜居的中型城市,而非背包客中心,这意味着这些角落比那些旅游压力巨大的城市更能保持原貌。那位从1998年起就在巷口摆摊的厨师,大概短时间内也不会搬走。

    实用贴士

    准备好小额钞票(5,000和10,000 VND的纸币,以及20,000的)。如果能给正好的零钱,摊主会很感激。大多数摊位只收现金。如果天气炎热觉得距离太远,可以打摩的(xe om)往返于各个市场区域,价格约20,000–30,000 VND。
