    这道菜与一条街道紧密相连,以至于河内直接将其更名为:Cha Ca 街(原名 Hang Son)。那里有两家老字号餐厅——Cha Ca La Vong 和 Cha Ca Thang Long——几十年来一直争论着谁才是正宗的起源。两家店都不错,人均消费都在 180,000 至 250,000 VND 之间,而且你很可能会坐在旅游团旁边。这并不是避开它们的理由,但你确实有必要了解其他选择。

    你吃的到底是什么

    鱼肉通常是“ca lang”(蛇头鲶鱼或有时是巴沙鱼),用姜黄、高良姜和发酵虾酱腌制数小时,然后在你桌上的小木炭炉上烹制。你需要自己掌控铁锅——当鱼肉滋滋作响太厉害时,把它拨到一边,加入莳萝和“hanh la”(葱段),然后把所有食材拌入一碗凉的“bun”(米粉)中。蘸上用青柠和糖稀释过的“mam tom”(发酵虾酱)。花生要在最后趁热放入。

    Cha Ca 街上的两家名店

    Cha Ca La Vong — 14 Cha Ca, Hoan Kiem

    这是鼻祖,或者至少是那家以名字命名街道的店。这是一家吱吱作响的四层楼店面,墙上挂着自 20 世纪 80 年代以来的报纸剪报。他们只做这一道菜,没有菜单,没有其他选择。你坐下,食物就会端上来。价格:每人约 200,000 VND 外加饮料。每天 11am–2pm 和 5pm–9pm 营业。为了氛围值得去一次,但别指望能安静地吃顿午餐。

    Cha Ca Thang Long — 19–21 Duong Thanh, Hoan Kiem

    距离 La Vong 步行两分钟,规模稍大,环境稍舒适,价格在同一水平。这里的鱼腌制得稍微重一点。当地常客更喜欢这家;游客通常默认去 La Vong,因为它更容易找到。

    三家值得一去的小巷店

    如果你想避开游客餐厅的高额溢价,那么这些小店值得你多花点时间去寻找。

    Cha Ca Anh Vu — 120 Hang Bong, Hoan Kiem

    一家狭窄的店面,位于 Cha Ca 街西南约 800 米处。没有英文招牌,里面有一块手写的价格牌:每人 130,000 VND。这里的木炭炉火比一般地方更旺——鱼肉边缘会稍微焦一点,有些人就喜欢这种口感。营业时间约为中午到 8:30pm,周日休息。在 12:30 到 1:30pm 之间,会有来自周边街区的上班族来用餐,非常忙碌。

    Cha Ca 1946 — 85 Pho Hue, Hai Ba Trung

    位于老城区东南约 1.5 公里处,在大多数游客匆匆走过而不停留的 Pho Hue 路段上。价格:140,000 VND。店里大约只能容纳十五个人,桌子挨得很近。他们提供 ca lang 和 ca tram(一种肉质更紧实、味道更温和的鲶鱼)供选择;如果你吃得慢,ca tram 的口感保持得更好。营业时间 10:30am–9pm。

    Cha Ca Lao Ngu — Ngo 25, Bat Dan, Hoan Kiem

    这家店需要询问路人:它位于 Bat Dan 的一条居民巷子里,距离 Cha Ca 街大约 600 米。没有正式招牌。一家人多年来一直在自家一楼经营。分量很足,这里的 mam tom 是自制的——比大多数餐厅使用的预调版本明显更鲜香。价格:110,000–120,000 VND。仅供应午餐,大约 11am–2pm,每周营业六天。周二休息。

    一些实用建议

    如果服务员没有自动端上来,记得单独点“bun”——在小巷店里,他们有时会默认你知道要点这个。米粉应该是室温的,而不是热的。

    大多数地方会把已经在滋滋作响的铁锅端到桌上。不要让它在那放着——莳萝很快就会变蔫,鱼肉也会煮过头。上菜后的前几分钟内尽快吃掉。

    如果你在河内(河内)的早晨想吃“pho”或“banh mi”作为早餐,请把 cha ca 留到午餐或晚餐——这道菜太油腻,不适合作为早餐。

    将“bia hoi”与 cha ca 搭配是河内值得尝试的习惯。这种清淡的生啤能很好地化解姜黄油的腻感。如果小巷店里没有啤酒,他们中的一些会派人去附近的摊位买罐装啤酒。

    实用提示

    这道菜的价格根据地点不同,每人约 110,000–250,000 VND;预算 150,000 VND 就能吃到很不错的。大多数店在 2pm 到 5pm 之间休息。随身携带小额钞票——家庭经营的小巷店很少有零钱找零 500,000 VND 的大钞。
