    Hue以其精致、讲究的宫廷菜肴而闻名。但“Nem lui”却截然不同:几串烤肉、一篮香草,再配上一碗灵魂般的发酵花生酱,便构成了这道美味。

    什么是Nem Lui

    这道菜的结构很简单。将猪肉末(通常混合猪油、红葱头、柠檬草和少许糖)包裹在新鲜的柠檬草茎上,放在低火炭炉上烤制,直到外表微焦,油脂渗入肉中。柠檬草本身并不食用,但在烹饪过程中,它能从内而外地为猪肉增添清香。

    吃的时候需要卷着吃。取一张米纸,铺上生菜、几片薄荷和紫苏叶,如果摊位提供的话,还可以加一片青香蕉或杨桃,放上烤肉串,然后松松地卷起来。将整个卷蘸入“nuoc leo”——这是一种由发酵花生、猪肝和胭脂树红油制成的浓稠、微甜的酱汁。它比普通的花生蘸酱更浓郁、更鲜美,带有一种淡淡的独特风味,能完美平衡猪肉的油腻感。

    Nem lui与你在Hue的每家纪念品店都能看到的真空包装发酵猪肉卷“nem chua”不同。Nem lui是现烤现卖,趁热享用的。

    早餐黄金时间

    大多数nem lui摊位在早上6:30到7:00之间开张,上午9:30之前就会卖完,有时甚至更早。在Hue,这是一道早餐,而不是午餐或晚餐的选择——尽管如果生意清淡,少数摊位可能会营业到中午。如果你上午10点以后才到,炭火可能已经熄灭,肉串也早已售罄。

    早起品尝不仅是为了赶时间,也是为了品质。清晨的炭火最旺,香草篮最新鲜,米纸也不会因为久置而变得干裂。

    去哪里吃

    Quan Nem Lui Co Ut位于Nguyen Binh Khiem街与Nguyen Chi Thanh街的交汇处附近,是城中最稳定的选择。Co Ut经营这个摊位已经超过二十年了。她坚持现点现烤,肉串通常五六串一盘,香草篮给得非常大方。一份包含米纸和酱汁的完整餐点价格约为40,000–50,000 VND。座位就是路边的塑料凳。早上6:30开门,通常在9:00前售罄。

    沿着Nguyen Truong To街,有一排早市摊位,除了nem lui,还供应“banh mi”和粥。这里的nem lui稍微便宜一些——约35,000 VND——但香草种类较少,酱汁有时也会稀释。如果你正好在这一带,还是值得一试的。

    如果你住在皇城(Citadel)附近,可以在早上7点到9点之间去Dinh Tien Hoang街沿线的小巷里找找。这些摊位流动性较强——通常是一位带着便携式炭炉和折叠桌的女士——但这里的猪肉品质往往比固定店面更好,因为她们的销量较小,肉质更新鲜。

    如何点餐

    Nem lui摊位没有菜单。你坐下后,摊主会送上香草篮、米纸和酱汁,然后问你要多少串。一人份通常点“Nam cai”(五串)。“Muoi cai”(十串)分量很足,如果你已经吃过其他东西,两人分享正好。如果不会越南语,直接用手指比划数字即可。

    酱汁是公用的——每桌一碗。不要直接把酱汁倒在肉串上,卷好后再蘸着吃。

    Hue版本的独特之处

    Nem lui在越南中部其他地区也有,但Hue的版本有其独特的风味。这里的猪肉馅通常磨得更细,柠檬草的味道比你在Da Nang吃到的版本更浓郁,而且nuoc leo酱汁颜色更深,猪肝味更重。这是一顿比看起来更“硬核”的早餐。

    Hue的饮食文化通常倾向于复杂和多层次的风味——正如那道以香料汤底和发酵虾酱闻名的“bun bo hue”。Nem lui也符合这一特点:这是一种街头小吃,技术上虽然简单,但其酱汁的制作却非常考究。

    实用贴士

    准备好小额钞票——10,000和20,000 VND面值的纸币。大多数nem lui摊主没有足够的零钱找补200,000 VND的大钞。一定要早去,避开那些全天供应nem lui的游客餐厅,寻找那些冒着炭火烟气的摊位。
