    Da Lat 的生活节奏离不开毛衣和热饮。当夜幕降临,气温降至 14°C 时,一杯泡沫塑料杯装的“sua dau nanh”(越南豆浆,通常现磨现煮,趁热饮用)带来的慰藉远胜于任何一杯拿铁。当地的豆浆比你在 Saigon 喝到的更稀一些,甜度较低,通常还会加入花生、黑豆或一抹椰奶。以下是值得一试的推荐清单。

    Da Lat 豆浆的独特之处

    在越南的大部分地区,sua dau nanh 是一种冷饮,通常装在塑料袋里售卖。但在 Da Lat,它更像是一种仪式:在市场寒冷的空气中,坐在塑料凳上,喝着从巨大的铝锅中盛出的现磨热豆浆。加入花生(整粒或磨碎)会增加一种坚果的浓郁口感。黑豆口味(sua dau den)则带有一种烟熏和泥土的芬芳,非常适合搭配 banh mi 或隔壁摊位的糯米小吃。这里的甜度通常很低;你可以根据个人口味从公共糖罐里自行加糖。

    这个摊位没有名字,只有一个手绘招牌和排队的人群。这是夜市区域性价比最高的一杯。摊主使用一种较传统的石磨工艺,这让豆浆的口感略显粗糙——有人喜欢,有人不喜欢。这里的黑豆浆值得一试:颜色深沉、温热、微甜,朴实无华。逛街回程时买第二杯再合适不过了。

    Sua Dau Nanh Ba Loan

    地址: 3 Phan Dinh Phung(靠近 Xuan Huong 湖,北侧) 营业时间: 6:30 – 11:00,16:00 – 20:00 价格: 12,000 – 18,000 VND

    Ba Loan 是少数几家值得特意早起去喝的早餐店之一。早餐时段的顾客大多是当地人——市场工人、送孩子上学的家长和一些退休老人。她在周末会制作椰香豆浆,口感比这份清单上的其他任何一家都要浓郁,而且不会太甜。她旁边还有一小锅豆腐花(tao pho);如果饿的话,两样都点吧。

    Suoi Xanh Dau Nanh — 室内小店

    地址: 22 Truong Cong Dinh 营业时间: 7:00 – 21:00(周二休息) 价格: 15,000 – 22,000 VND

    这家店有真正的墙壁和屋顶,在 Da Lat 阴雨连绵的时候,这一点很重要。它比市场摊位稍微精致一点——桌子干净,有打印的菜单——但价格依然亲民。如果你要求的话,他们也提供冷饮,但在 Da Lat 喝冷的就完全失去了意义。这里的热花生豆浆浓稠到你需要用勺子吃。此外,它是少数几家会免费附赠一小碟芝麻烤米饼的店。

    Suoi Nong — 温泉豆浆车

    地址: Le Dai Hanh 和 Bui Thi Xuan 的交叉路口 营业时间: 17:00 – 22:30 价格: 统一 10,000 VND

    这是一位女士经营的自行车摊位。她大约 17:00 出摊,通常在 21:00 前就卖光了。没有黑豆,没有椰子——只有原味和花生味。多年来价格从未变动,这足以说明其常客的忠诚度。买上一杯,坐在街对面的矮墙上喝。这是清单上最不“网红”的地方,但它却是最“Da Lat”的地方。

    在 Nguyen Chi Thanh 有一家装修明亮的 sua dau nanh 店,在一些在线论坛上被推荐过。招牌看起来不错,但豆浆是用进口豆粉加热水冲调的,而且糖分过高。喝第一口你就能尝出来。它完全不值 25,000 VND 的价格。直接略过吧。

    关于时间的提示

    Da Lat 的豆浆文化几乎完全集中在晚上,这很合理——因为那时候寒意才真正袭来。如果你周末在这里,计划至少绕夜市区域走一圈,手里捧着一杯热豆浆。搭配一串烤红薯或附近摊位的红酒炖牛肉法棍(sot vang banh mi)一起享用。如果你是豆浆的忠实爱好者,Ba Loan 的早市时段也值得你早起一趟。
