    海防是Vietnam(越南)的第三大城市,也是北部最被低估的美食目的地之一。当地人对饮食非常讲究——午餐时间很长,每个摊位都有忠实的常客,对于哪家店的“banh da cua”最正宗,大家都有着强烈的见解。如果你在前往 Cat Ba 或 Ha Long Bay 的途中经过这里,请务必留出至少一整天的时间,按行政区逐一品尝。

    Ngo Quyen区——老城区核心

    Ngo Quyen是殖民时期街道最宽阔、街头美食最集中的地方。Hoang Van Thu街和Minh Khai街周边区域是该市非正式的美食走廊,从早上6点左右到中午,以及下午5点以后都非常热闹。

    Banh Da Cua——定义海防的招牌菜

    “Banh da cua”是海防对一切美食的回答。这种由红米粉制成的粗而深红的面条,浸泡在浓郁的蟹肉猪骨汤中,上面铺着蟹膏、空心菜和炸红葱头。它与 Hanoi 的“bun rieu”完全不同,即使蟹肉元素听起来很相似。这里的汤底更醇厚,面条更有嚼劲。

    Hang Kenh街上的Co Dieu是当地人首先会推荐给你的摊位。她早上6:30开门,9:30左右就卖完了。一碗价格在30,000–40,000 VND之间。没有菜单,也不懂英语——指指旁边人碗里的东西点餐即可。

    另一个可靠的选择是Cau Dat街花市附近的一簇banh da cua摊位。这些摊位开得稍晚,大约早上7:30开始营业,一直忙到中午。分量稍大,价格相近。

    Mi Quang——意想不到的惊喜

    你可能没想到在这么靠北的地方能找到好吃的“mi quang”,但Dien Bien Phu街和Nguyen Duc Canh街拐角处的摊位证明了这一点。这里的姜黄面条针对北部口味进行了改良——花生味较淡,香草味较重——但如果你在两顿banh da cua之间想换换口味,这里非常值得一试。营业时间为早上7点至中午,价格约35,000 VND。

    Hong Bang区——Cho Sat附近的集市美食

    Hong Bang位于Ngo Quyen以西,以Cho Sat(铁市场)为中心。这是一个两层的农贸市场,每天早上都会延伸到周围的小巷。这里的街头美食与市场紧密相连——快捷、便宜,主要面向商贩和购物者,而非游客。

    最佳到达时间是早上7点到9点。你可以在Tran Nhat Duat街市场入口方圆400米内步行找到主要的觅食点。

    市场边缘的Banh Mi和Banh Cuon

    海防的“banh mi”所用的法棍比你在 Saigon 找到的明显更轻、更脆。在Cho Sat北侧的摊位,一个加料的banh mi售价为15,000–20,000 VND。馅料比南部版本简单——肉酱、黄瓜、腌萝卜,有时加个煎蛋——但面包的品质确实非常出色。

    “Banh cuon(蒸米卷)”出现在几个摊位之外,现点现蒸,蘸汁清澈,比Hanoi风格更清淡。一盘25,000 VND,站在折叠桌旁吃即可。

    Bun Bo——上午晚些时候的选择

    如果你想吃一顿更扎实的早午餐,Phan Boi Chau街上有一辆从早上8点左右开始营业的“bun bo”推车。汤底比火辣的“bun bo Hue(顺化牛肉粉)”风格更接近北部的牛肉汤——更温和、清爽,配有厚实的牛腱肉和圆形的bun米粉。45,000 VND,仅收现金。

    一碗装在花纹碗中、配有酥脆配料的诱人亚洲汤面,非常适合地道美食爱好者。

    Le Chan区——夜间街头美食与Bia Hoi文化

    Le Chan是这座城市夜生活觅食的地方。Quang Trung街和Nguyen Duc Canh街周围从下午5点左右开始灯火通明,塑料凳餐厅、烤串摊位以及那种让周二感觉像周末的“bia hoi(鲜啤)”角落随处可见。

    这里的步行范围更集中——坚持在Tran Phu街和Hoang Dieu街之间的六个街区内,那里最为密集。大多数摊位下午5:30才开门,一直营业到午夜或更晚。

    烤海鲜与Nem Chua

    海防临近海岸,这意味着晚上的烤海鲜比Hanoi更新鲜、更便宜。鱿鱼、蛤蜊和虎虾在Quang Trung街的摊位上按100克计价——根据季节不同,每100克价格在60,000–120,000 VND之间。搭配“nem chua(酸肉肠)”食用,这种发酵猪肉卷在北部随处可见。这里的口味比南部更浓郁、更酸。

    Ca Phe Sua Da与晚间休闲

    海防有着深厚的咖啡文化。吃完烤海鲜后,当地人的习惯是在Le Chan区Tran Hung Dao街的老式咖啡馆里来一杯“ca phe sua da(越南冰咖啡)”。这些店自20世纪80年代以来一直经营,从未改变。你坐在藤椅上,咖啡缓慢地滴入冰块玻璃杯中,街道在外面熙熙攘攘。

    实用贴士

    海防的街头美食有两个高峰期:早上6:30至10点的早餐摊,以及下午5点至晚上10点的夜宵时段。中午12点到下午4点之间,大部分街头美食摊位会关闭或营业节奏明显放缓。大多数摊位只收现金,价格固定——在美食摊位不需要讨价还价。在三个区吃上一整天,花费远低于200,000 VND。
