    Hanoi的老城区街道密集,你无需打车,仅靠步行就能吃遍五百年的饮食文化。这条路线全长约2公里,如果不赶时间(当然也不建议赶时间),大约需要两个小时。

    如何使用本路线

    建议在上午8点至10点或下午5点至7点之间出发。中午时段虽然也能吃到东西,但天气炎热,且最好的摊位往往很早就卖完了。请准备好小额纸币——10,000至50,000 VND的面额。这里的多数摊位不太乐意为一碗汤找零500,000 VND的大钞。穿上一双你不介意沾上鱼露的鞋子吧。

    第一站 — Bat Dan街的Pho

    从老城区北端的Bat Dan街开始。这里的pho是典型的北越风格:汤底清澈纯净,配菜极简,没有豆芽或海鲜酱。在河内(Hanoi),关于“Pho”的争论从未停止,而Bat Dan街代表了其中古老、纯粹的一派。一碗售价在50,000至70,000 VND之间。点一份“pho bo”(牛肉河粉),如果你喜欢生牛肉,可以要求加“tai”。你可能需要站着或坐在离地约20厘米高的塑料凳上吃,这很正常。

    第二站 — Hang Ga街的Banh Cuon

    向南走到Hang Ga街。寻找那位推着冒着热气的布面蒸屉的女士——多年来,她每天早上都在这里。"Banh cuon"是现点现蒸的薄米皮卷,内馅是猪肉末和木耳,上面撒着炸红葱头,并配有一碗清淡的蘸汁。一份大约35,000至45,000 VND。一定要趁热吃,凉了口感会变硬。

    第三站 — Hang Manh街的Bun Cha

    向东前往Hang Manh街或Ly Quoc Su街附近的小巷。"Bun cha"是河内的午餐主食——将烤猪肉饼和五花肉片浸泡在酸甜鲜美的蘸汁中,搭配一盘新鲜的“bun”(米粉)和香草。这道菜吃起来虽然有些狼藉,但隔着半条街就能闻到诱人的香气,价格在40,000至60,000 VND之间。如果你想吃得更完整,可以加一份"cha gio"(炸春卷)——大多数Bun Cha店都会将它们搭配在一起出售。

    第四站 — Dinh Liet街角的Banh Mi

    并非每一站都需要坐下来慢慢享用。Dinh Liet街和Hang Bac街附近的"banh mi"餐车快捷、便宜(20,000至30,000 VND),非常适合在品尝重口味菜肴之间清清味蕾。点一份加了肉酱、冷切肉和腌萝卜丝的“banh mi thit”。边走边吃,这才是精髓所在。

    第五站 — Nguyen Huu Huan街Giang Cafe附近的鸡蛋咖啡

    向南走一小段路就到了Nguyen Huu Huan街。Giang Cafe隐藏在狭窄的楼梯之上,通常被认为是“鸡蛋咖啡(에그커피 / 蛋咖啡 / エッグコーヒー)”——即ca phe trung——在20世纪40年代的发源地。这杯咖啡使用浓郁的越南罗布斯塔咖啡,顶部覆盖着打发的蛋黄和炼乳泡沫,温热上桌,杯子置于盛有热水的碗中以保持温度。它浓郁得足以算作一道美食。价格:30,000至40,000 VND。如果可以,请坐在楼上;窗外的小巷景观值得你停留五分钟。

    第六站 — Hang Bong街的Bun Rieu(可选,如果你还有胃口)

    如果你节奏把握得好,或者在第三站没点炸春卷,那么可以在Hang Bong街以一碗“bun rieu(분지에우 / 蟹肉米粉汤 / ブンリュウ)”作为结尾。这是一种番茄蟹膏汤底,配以豆腐、血块和米粉。汤色呈现出强烈的橙红色,味道浓郁且带有一点独特的发酵风味。价格约40,000至55,000 VND。这一站是区分资深食客与普通游客的分水岭。

    老城区导航指南

    老城区的街道名称通常源于历史上该处售卖的商品——Hang Gai(丝绸)、Hang Bac(白银)、Hang Buom(船帆)。如今,食品摊位并不一定严格对应街道名称,但密度依然惊人。如果你看到某个摊位前排起了长队,那就是你的目标。Google Maps在这里表现尚可,但未必能定位到所有巷子里的摊贩;跟着香味走准没错。
