    Hoi An 的“hoanh thanh”(云吞)是当地的一种特色饮食,游客要么是无意中撞见,要么就是因为忙着去吃“cao lau”和“banh mi”而错过了它。这种炸云吞——一个个堆满炒虾仁、番茄和葱花的小金字塔——可以追溯到几个世纪前主导这座港口城镇的华人商区。它与你在 Saigon 或 Hanoi 吃到的汤云吞几乎毫无共同之处。

    Hoi An 的 hoanh thanh 有何不同

    在越南的其他地方,hoanh thanh 指的是漂浮在汤里的猪肉馅饺子。但在 Hoi An,默认的吃法是 chien(炸):云吞皮被炸得酥脆轻盈,上桌前淋上一层由虾仁碎、番茄酱和新鲜香草调制的酸甜酱汁。有些店会加点酱油,有些则会加辣椒油。酥脆口感与酱料的比例是关键所在,变软的云吞就是失败的云吞。

    全城的售价在每盘 30,000–60,000 VND 之间。古镇内的溢价是真实存在的——在遗产保护区内,同样的食物有时比区外 500 米处贵出 15,000–20,000 VND。

    Phuong — Hoai 河畔,Nguyen Thai Hoc

    地址: 35 Nguyen Thai Hoc, Hoi An 古镇 营业时间: 每天 10:00–21:00 价格: 每盘 45,000 VND

    这是大多数当地人会推荐给你的地方,而且它确实名副其实。虾仁配料是大块的,而不是剁成泥,番茄酱带有真实的酸度,云吞皮在装盘后五分钟内依然保持酥脆——如果你吃得慢,这一点很重要。点一份炸云吞,再点一份“hoanh thanh 汤”,可以对比品尝两种风格。这里的汤版云吞使用从清晨就开始熬制的猪骨和干虾汤底。

    Thanh — Bach Dang 河畔

    地址: 76 Bach Dang, Hoi An 营业时间: 07:00–14:00,周二休息 价格: 35,000–40,000 VND

    这是一家只在上午营业的店,这足以成为你定闹钟起床的理由。店主按订单小批量现炸,所以云吞上桌时热气腾腾,而不是放在保温灯下。酱汁比 Phuong 家的更甜一些,更接近越南中式蚝油风格。搭配每张桌子上免费提供的冰茶味道极佳。请在中午前到达;到了 13:30,炸云吞通常就卖完了。

    Banh Vac & Hoanh Thanh Trang — Tran Phu 街

    地址: 87 Tran Phu, Hoi An 营业时间: 每天 09:00–20:00 价格: 50,000–55,000 VND

    严格来说,这是一家主打“banh vac”(白玫瑰饺子)的店,但也提供 hoanh thanh,而且两样都做得很好。这里的游客流量比这份名单上的任何地方都要大,这稍微推高了价格,但质量保持得不错。这里的 hoanh thanh 皮比一般的要薄——更接近春卷皮而不是云吞皮——这让它们吃起来更像是碎裂而非酥脆。为了这种独特的口感,值得一试。避开游客套餐,单点即可。

    Quan Co Sau — Cam Pho 区,Le Loi 街旁

    地址: 18 Hoang Van Thu, Hoi An(距离古镇售票处约 600 米) 营业时间: 每天 06:30–11:30 价格: 25,000–30,000 VND

    这是应对古镇溢价最诚实的当地选择。Co Sau(“六姨”)经营这个街角摊位已经超过二十年了。没有英文菜单,只有塑料凳,却是城里性价比最高的 hoanh thanh。虾仁配料比河畔的店更清爽——葱花和香草更多,酱汁更少,这让炸云吞皮能带出更多的风味。如果你住在古镇外,或者正在进行晨间漫步,这里是必去之地。

    Hoanh Thanh Ba Le — Ba Le 古井区

    地址: 靠近 45-47 Tran Hung Dao, Hoi An 营业时间: 10:30–19:00,周一休息 价格: 40,000 VND

    靠近历史悠久的 Ba Le 古井(古镇的一个热门地标)的位置带来了比食物本身更多的客流。这里的 hoanh thanh 还算不错——炸得合格,虾仁配料也过得去——但云吞皮在端上桌前放置时间过长,容易失去酥脆感。汤版的表现比炸版更好。如果你正好在附近可以去吃,但不必特意前往。

    An Hoi 半岛(Thu Bon 人行桥对面的小岛)沿岸的几家摊位,通过塑封菜单和照片墙积极向旅游团推销。这些地方的 hoanh thanh 几乎一律令人失望——提前炸好的云吞皮现点现加热、瓶装酱汁、吃起来像冷冻过的虾。每盘 60,000–70,000 VND 的价格,你支付的是河景的“位置税”,而不是食物质量。反正从桥上看风景是免费的。

    搭配建议

    Hoanh thanh 只是小吃,不是正餐。大多数供应它的店也卖“mi Quang”和“cao lau”——这两样都是 Hoi An 的特色菜,值得在同一餐中品尝。一份炸 hoanh thanh 加上一碗 cao lau 大约花费 80,000–90,000 VND,一次就能打卡两道当地招牌美食。

    实用贴士

    Hoi An 古镇白天进入需要购买门票(120,000 VND 的五联票),但遗产保护区外的美食摊位——包括 Hoang Van Thu 街上的 Co Sau——是不需要门票的。大多数 hoanh thanh 店只收现金;请准备好零钱。炸云吞不适合外带,所以请在摊位上现吃,不要带回旅馆。
