    这种层次感是它与普通快餐三明治的区别。缺少任何一种成分,平衡感就会被打破。

    Phuong vs. Madam Khanh:真正的区别

    你会读到关于这两家的各种评价。以下是客观的看法。

    Banh Mi (반미 / 越式法包 / バインミー) Phuong 位于 Phan Chau Trinh 2B 号,距离古镇中心约 400 米。它大约在早上 6:30 开门,一直营业到下午,有时更晚。安东尼·波登(Anthony Bourdain)曾在 2009 年到访此地,并在节目中称其为世界上最好的三明治——这种背书彻底改变了该摊位的客群。排队是常态,经营规模很大,流水线式的作业意味着面包并不总是在最佳状态下出炉。一个完整的 Banh Mi 价格在 35,000–40,000 VND 之间。味道不错,但体验比较拥挤。

    Banh Mi Phuong Madam Khanh ——通常被称为 Madam Khanh 或 Banh Mi 女王——位于 Tran Cao Van 115 号,距离古镇步行约十分钟。它同样在早上 6:30 左右开门,通常在上午 11:00 前就会售罄或关门。Madam Khanh 本人已七十多岁,自 20 世纪 70 年代以来一直在此经营。她的版本使用口感稍软的法棍,黄油涂抹得更慷慨,自制的辣椒鱼露比 Phuong 的更具醋酸的明快感。价格相近:根据馅料不同,约为 30,000–40,000 VND。这里人流较少,氛围更安静,在状态好的早晨,面包的品质明显更胜一筹。

    对于“哪家更好”这个问题的诚实回答是:如果你能在上午 9:00 之前赶到并吃到新鲜出炉的面包,请选 Madam Khanh。Phuong 的出品更稳定,因为它的周转率更快且员工更多。它们在本质上并没有天壤之别。关于它们的争论,更多是源于旅游圈的“部落主义”。

    其他值得尝试的选择

    如果两家店的排队队伍看起来都太长,Banh Mi Phuong 37(位于 Phan Chau Trinh 37 号)是一个规模更小、更安静的姊妹店——同一家族经营,人流量稍小,大约在早上 7:00 开门。

    如果想要更简单、更便宜的选择,可以步行前往位于 Nguyen Truong To 的 Co Nga,这是一个路边摊,提供价格为 20,000 VND 的纯粹鸡蛋 Banh Mi。没有名气,不用排队,法棍非常好吃。

    何时前往与如何点餐

    享用新鲜面包的最佳时间窗口是早上 6:30 到 9:00。此后,法棍放置时间过长,外壳会变软。会安的早晨气温升高很快;大多数月份到了上午 10:00,阳光就已经让排队变得不那么舒适了。

    如果是第一次尝试,建议在两家主要摊位点“全家福”馅料——即“dac biet”。它包含了所有配料:肝酱、cha lua、冷切肉等。如果你想吃得清淡些,鸡蛋味(“trung”)是很好的第二选择。避开面向游客摊位的“奶酪”选项;那是加工过的三明治奶酪,没有任何加分项。

    带上小面额钞票。Phuong 和 Madam Khanh 都不接受刷卡。50,000 VND 足以支付一个三明治并有找零。

    实用提示

    两家主要摊位偶尔会不定期休息——尤其是 Madam Khanh,有时会毫无预兆地休息,所以如果你发现店门关着,就去 Phuong 或者试试 Co Nga。会安的早间街头美食节奏很快;上午 9:30 之后才到并期待获得完整体验是过于乐观的想法。早点来,在外面吃,别太纠结于网上的争论。
