入夜后的 Hoi An 仿佛换了一座城市。下午5:30左右,灯笼亮起,摩托车流逐渐稀疏,从 An Hoi Bridge 沿着 Bach Dang 延伸至步行街的摊位区,开始弥漫着烟火气、滋滋作响的油烟,以及人们纠结下一顿吃什么的独特喧嚣。如果你毫无计划地乱逛,可能会花掉 200,000 VND 买些平庸的春卷,然后草草收场。但如果按照这份攻略,你将享受到越南中部(Vietnam)最棒的平价美食之一。
从古镇一侧穿过 An Hoi Bridge,在桥头稍作停留。正前方的半岛就是 An Hoi 夜市的核心区域——这里有大约 60 到 80 个摊位,无论天气如何,每晚都会出摊。相比 Tran Phu Street 上那些针对游客的餐厅,这里更接地气,也更值得你花时间探索。
忍住,不要在头三四个摊位买任何东西。它们通常价格最贵且最没特色,摊主们专门守在那里捕捉那些还没找准胃口的游客。继续向南,往河边走。
寻找那些蒸笼叠了四五层高的摊位。这是你开启美食之旅的第一站。“Banh vac”——当地人称之为白玫瑰饺子,是用薄米皮包裹虾仁,上面撒着炸葱酥的精致小吃,一盘八个大约 25,000 到 35,000 VND。这是 Hoi An(会安)的原创美食,你在越南其他任何地方都吃不到这么地道的。
就在旁边,你几乎肯定会看到一位大姐正在用脸盆大小的铸铁锅烹饪。“Banh xeo”在这里是越南中部风味:比南部风格更小、更脆,里面包着豆芽、虾和猪肉,吃的时候用米纸卷上香草。一份大约 30,000 VND,绝对物超所值。
这一站不可错过。Cao lau——这种劲道的粗面条,配上切片猪肉、炸脆饼和少许汤汁,是 Hoi An 独有的美食,甚至带有一丝传奇色彩。传统上,这种面条必须用当地某口古井的水制作,不管这是真是假,反正这道菜很难外带,所以必须在这里吃。
在夜市,许多摊位卖 40,000 到 55,000 VND 一碗。避开那些贴着塑封照片菜单的摊位,找一个厨师正在现场现煮的摊位。面条的口感应该略带嚼劲,猪肉边缘焦香,香草给得大方。

此时你已经逛完了半岛的核心区域。往河边走,那里有一排排矮小的塑料凳对着 Thu Bon 河。许多摊位售卖“bia hoi”——即每日新鲜酿造的生啤,清爽便宜,一杯大约 10,000 到 15,000 VND;也有新鲜椰子,约 20,000 VND。坐上十分钟,看着灯笼船漂过,这段时光绝不会被浪费。
随着夜色渐深,夜市西侧变得更加热闹。炭火烤架沿街排开,50米外就能闻到浓郁的烟火味。刷了葱油的烤玉米 15,000 VND。鹌鹑蛋、猪肉丸和红薯串每串 5,000 到 10,000 VND。这些都是零食,虽然填不饱肚子,但作为重口味菜肴之间的过渡非常完美。
如果你想吃点实在的,市场北端有一些摊位提供烤猪肉串配米饭,类似于“com tam”的逻辑(只是没有用碎米),价格在 50,000 VND 左右。

Hoi An 夜市的甜点意味着“che”——种类多到超乎想象的甜汤。红豆、莲子、椰奶什锦水果、斑兰果冻,一杯 15,000 到 20,000 VND。还有 20,000 VND 的椰浆烤香蕉,听起来像是游客特供,但味道确实很棒。
如果你想以咖啡结束行程,走回 An Hoi Bridge 并沿 Bach Dang 右转——几家河边咖啡馆提供地道的 Vietnamese coffee,包括一杯不到 30,000 VND 的醇厚“ca phe sua da(越南冰咖啡)”,同时还能欣赏水面上倒映的灯笼美景。
市场边缘售卖的纸灯笼——丝绸的、纸质的、圆形的、水滴形的——随处可见,质量参差不齐。如果你想买一个,检查一下金属框架是否结实,接缝处有没有开线。价格从 30,000 VND 起,摊主通常接受小幅议价。不要压价太狠,毕竟利润空间并不大。
带上现金——最好是小额钞票,虽然大多数摊位都能找开 100,000 VND 的纸币。夜市每晚从下午 5:00 左右营业至晚上 10:30,晚上 6:30 到 8:30 最为拥挤。在满月之夜,古镇会禁止汽车和摩托车通行,氛围会发生很大变化——如果时间允许,非常值得在那时造访。
