    这里所谓的“精致越南菜”究竟意味着什么

    Phu Quoc 上最好的餐厅并非试图模仿带有越南风味的法式小酒馆。它们充分利用了岛上的天然食材库——来自 Ha Tien 公路农场的胡椒、来自 Duong Dong 的本地鱼露、从岛屿周边海域捕获的螃蟹和鱿鱼——并将越南传统烹饪技法作为基础,而非仅仅作为装饰。在预订餐厅时,记住这一点非常重要。

    Nen Restaurant

    Nen 位于 Bai Truong 海滩的 Regent Phu Quoc 度假村内,距离 Duong Dong 镇以南约 8 km。它是岛上最受美食爱好者关注的餐厅,其厨房水准确实名副其实。

    菜单随季节更替,但通常以越南中部和南部的菜肴为核心。你可以期待精致版的“banh xeo”——这种酥脆的米饼比街头版本更小巧、制作更精准,馅料包含本地虾仁和豆芽,搭配的蘸汁经过精心熬制,而非直接从瓶中倒出。“goi cuon”鲜虾卷使用了度假村自家种植的香草,这听起来像是营销文案,但确实在风味上带来了显著差异。

    这里的厨师阵容会随度假村的日程安排而变动,但厨房团队始终专注于发酵和腌制食材——如鱼酱、腌芥菜等——并将它们作为调味品而非单纯的装饰。这呈现出的是纯正的越南风味,而非为了出口而改良的越南菜。

    价格范围:每道菜 400,000–950,000 VND。套餐价格约为每人 1,800,000 VND 起。必须预订,尤其是在 12 月至 2 月期间。请至少提前三天通过 Regent 的网站预订。

    美味的越南砂锅蜗牛煲,配有新鲜香草和蘸酱,是海鲜爱好者的完美之选。

    Oc Dao (The Pearl)

    对于想要寻找更独立、非度假村附属的选择,位于 Duong Dong 镇 Tran Hung Dao 大街上的 Oc Dao 多年来一直静静地经营着岛上最好的厨房之一。餐厅环境朴实:露天空间、吊扇、瓷砖地面。但别被这简单的外表骗了。

    主厨曾在 Saigon 接受过培训,回到岛上后,他打造了一份基于 Phu Quoc 捕鱼季节的菜单。招牌菜是“bun rieu”(蟹肉番茄米粉汤)的改良版,所用的螃蟹均来自每天停靠在附近 Duong Dong 市场的渔船。汤底的深度是大陆版本罕见的,这部分归功于螃蟹的品质,另一部分则是因为更长的熬制时间。一碗售价 95,000–120,000 VND,从严格意义上讲这不算精致餐饮的定价,但其品质远高于同价位餐厅。

    Oc Dao 真正进入“挥霍”范畴的是其烤海鲜和炖海鲜菜单。例如,用焦糖胡椒酱烹制的本地整鱼——使用了 Phu Quoc 特有的黑胡椒,带有浓郁的辛辣和花香——价格在 450,000–700,000 VND 之间,具体取决于当天的渔获。这道菜绝对值得一试。

    不接受预订。请在下午 6:30 前到达,否则可能需要排队。

    Chuon Chuon (Dragonfly)

    Chuon Chuon 位于西海岸靠近 Ong Lang 海滩的地方,距离 Duong Dong 约 12 km。这里吸引了许多长期居住的外国人和做过功课的游客。餐厅坐落在花园中,可以欣赏到日落时分的海景——这种地方很容易只靠环境吸引人,但这里的食物水准足以支撑你专程前往。

    厨房专注于越南南部的风味。“com tam”(碎米饭)是一个很好的参考点:这和你会在 Saigon 街头摊位吃到的菜色一样,但这里的猪肉是用木炭烤制的,腌料中加入了本地蜂蜜和在 Phu Quoc 陈酿超过一年的鱼露。其结果与平底锅煎出的口感有显著不同。一份包含鸡蛋、猪肉和腌菜的完整 com tam 套餐约为 180,000 VND。

    “cha gio”(炸春卷)值得点一份——炸得酥脆均匀,内馅包裹着猪肉和木耳,搭配调味平衡的蘸汁。一份 120,000 VND,绝对物有所值。

    周末晚上请提前预订。平日通常可以直接前往。

    何时前往及预算建议

    Phu Quoc 的精致餐饮在 11 月至 4 月期间最为活跃——这是旱季,岛上游客众多,餐厅人员配置齐全。在雨季(5 月至 10 月),一些餐厅可能会缩短营业时间或因装修而关闭。请提前致电确认。

    对于一顿包含饮品的正式用餐,每人的预算建议在 600,000 到 2,500,000 VND 之间,具体取决于你是在度假村餐厅还是独立餐厅用餐。大多数地方都提供越南精酿啤酒和本地葡萄酒;岛上特有的鱼露鸡尾酒口味独特,值得尝试一次。

    实用小贴士

    在餐厅之间往返需要租用摩托车或打车——在这个大小的岛屿上,距离累积起来很快。大多数精致餐厅接受刷卡支付,但建议随身携带现金作为备用。这里没有强制小费的习惯,但在高端度假村餐厅,给予小费会受到欢迎。
