    走进越南的咖啡馆,如果只说“咖啡”,你可能会得到一杯随机的饮品——但掌握了真正的词汇,你就能点到自己心仪的那一杯。越南拥有东南亚最独特的咖啡文化之一,而这里的点单系统更像是一种简写代码,而非普通的菜单。

    每次点单时的四个决定

    在越南,每一杯咖啡的订单都取决于四个变量。一旦你掌握了它们,你就可以从 Hanoi 到 Saigon 的任何路边摊点单,而无需指着别人的杯子。

    热饮还是冰饮:Nong 与 Da

    “Ca phe”意为咖啡。加上 nong(热)或 da(冰),你就完成了第一个选择。在南部,大多数当地人习惯喝冰咖啡——一杯加满冰块的“ca phe sua da”是 Saigon 早晨的标准动力源。在 Hanoi,尤其是在冬天,nong 更为常见。两者都没有错,只是在坐下之前先决定好,这样当摊主看向你时,你才不会手忙脚乱。

    注意:da 字面意思是冰,而不是“冷”。在北部,你会得到一杯单独的冰块;而在南部,冰块通常已经加在咖啡里了。

    黑咖啡还是奶咖:Den 与 Sua

    Den 意为黑。Sua 意为奶——具体是指加糖炼乳,这是越南咖啡的标准搭配。除非你在西式咖啡馆,否则这里默认不会提供鲜奶。如果你想要“ca phe sua da”,你会得到一杯浓郁的滴滤咖啡,配上炼乳和冰块。如果你想要“ca phe den da”,那就是加冰的黑咖啡——苦涩、浓烈,这是许多湄公河三角洲当地人每天都会喝的味道,非常独特。

    如果你想要类似拿铁的口感,可以在有鲜奶的店里询问 ca phe sua tuoi。但在路边摊,就不要抱有这种期待了。

    冲泡方式:Phin 与 May

    这一点比人们意识到的更重要。Phin 指的是放在杯口的小型金属滴滤壶,咖啡会通过它在三到五分钟内缓慢滴入杯中。这是传统方法,冲泡出的咖啡浓稠如糖浆。点“ca phe phin”意味着你需要等待——请保持耐心,或者带点东西阅读。

    May 意为机器,通常指半自动意式咖啡机。使用 may 的咖啡馆出餐更快,通常口感也更纯净。一些老派的 Saigon 咖啡店使用滤袜 (vot),这能带来更顺滑的口感。在大多数地方,你不需要特意说明 phin 或 may,因为店家通常只使用一种方式,但如果你看到两种都有,不妨问一下。

    浓度:Dac 与 Nhat

    Dac 意为浓或厚。Nhat 意为淡或稀。大多数越南咖啡按照西式滤泡咖啡的标准来看已经很浓了——默认的罗布斯塔咖啡豆拼配咖啡因含量高、酸度低。如果你对咖啡因敏感,可以要求 nhat,摊主会少放咖啡粉或多加水。如果你想要最强烈的冲击,就点 dac,做好心理准备。

    组合起来:实战点单

    当你把这些词组合在一起时,点单听起来是这样的:

    • Ca phe sua da — 加炼乳的冰咖啡(全国最常见的订单)
    • Ca phe den nong — 热黑咖啡
    • Ca phe sua nong — 加炼乳的热咖啡
    • Ca phe den da — 加冰黑咖啡
    • Ca phe trung — “蛋咖啡”,一种 Hanoi 特色饮品,将蛋黄与炼乳搅打成浓厚的泡沫;可热饮或冰饮,主要在 Hanoi 老城区的专门店供应

    如果你在 Hanoi,想尝试点不一样的,“ca phe trung”至少值得一试——它尝起来像甜点,但作用和咖啡一样。

    路边咖啡馆礼仪

    大多数指南不会提到这一点,但这正是你融入当地还是显得格格不入的关键。

    先坐下。 在大多数路边摊,你先找个矮塑料凳坐下,摊主会过来或者和你眼神交流。不要像在西式咖啡馆那样在柜台排队。

    不要催促 phin。 如果你点了滴滤咖啡,摊主会把它端给你,此时咖啡还在滴落。你需要等待。在滴完之前搅拌是一种轻微的社交失礼。观察一下当地人——他们有的在玩手机,有的在看新闻,有的在看街景。咖啡滴落的过程本身就是节奏的一部分。

    价格范围。 路边摊的 ca phe sua da 大约在 15,000–25,000 VND。坐式咖啡馆收费在 35,000–55,000 VND。超过 60,000 VND 的价格通常包含环境溢价。Hanoi 著名的蛋咖啡店每杯收费 45,000–65,000 VND,具体取决于地段。

    你可以多坐一会儿。 越南咖啡文化不是“即买即走”。坐在同一张凳子上喝一杯咖啡待上两个小时是非常正常的。没人会催你。摊主可能会为你续杯茶——在传统咖啡店,咖啡通常会免费附赠一杯绿茶。

    用越南语点单会受到欢迎,但不是必须的。 自信地说出“ca phe sua da”几乎能在任何地方换来微笑。不要过度纠结声调——语境足以让对方听懂。

    一个地区性提示

    如果你向南前往湄公河三角洲或 Can Tho,你会遇到“ca phe vot”——通过布质滤袜批量冲泡的咖啡。口感比 phin 更顺滑,苦味稍轻。如果看到的话,值得一试。在 Hue 和 Da Nang,分量更小、更苦的咖啡很常见——当地人喝的量较少,但浓度更高。

    实用提示

    大多数路边咖啡摊在早上 6:30 开门,到上午中段就会收摊——越南咖啡文化集中在清晨。如果你早上 10 点才去一个 7 点时挤满人的路边摊,它可能已经关门了。定好闹钟,早点出发。
