    以下是推荐去处、价格参考,以及一家仅靠名气维持的店铺。

    Quan Banh Loc Ba Cu — 标杆之选

    如果你在Hue只能选一家店吃banh loc,那就去Ba Cu。这家摊位在An Cuu市场附近的Nguyen Binh Khiem街经营了数十年,现在主要由店主的女儿打理。这里的饺子皮比游客区的版本更薄,几乎呈半透明状,里面的虾明显更新鲜,口感弹牙而非软烂。一份六个饺子大约30,000–35,000 VND。营业时间大致为早上6:30至11:00;由于经常售罄,如果可以的话请在9点前到达。

    Banh Loc La Chuoi — 香蕉叶版本

    Hue的banh loc主要有两种风格:清蒸("banh loc tran")和香蕉叶包裹("banh loc la")。如果你还没试过叶包版本,非常值得一试。香蕉叶在蒸制过程中会赋予饺子淡淡的草本清香,并保持饺子更加湿润。Chi Lang街上有一个小摊——没有正式招牌,只要留意Tran Cao Van路口附近推着蒸笼车的女士即可——每份售价5,000 VND。她通常在早上7点到中午之间出摊。

    Quan Co Tuyen — 蘸汁首选

    Co Tuyen是位于Nguyen Du街的一家小店,当地人光顾这里并非因为饺子本身(虽然味道扎实但不算特别出众),而是为了那份蘸汁。这里的nuoc cham比大多数地方颜色更深、味道更浓郁,鱼露比例更高,几乎不加糖。它非常适合那些觉得Hue普通蘸汁太甜的食客。一份八个饺子价格约为35,000 VND。早上7点开门,售完即止,通常在下午1点左右。

    Hang Me Me — 适合搭配其他小吃

    如果你想把banh loc作为Hue丰盛早餐的一部分,搭配“banh nam”(平铺蒸米糕)和“banh it tran”(糯米饺)一起享用,Truong Dinh街的Hang Me Me是最佳选择。这里比专门的摊位更繁忙、更嘈杂,但如果你和想尝试多种选择的同伴一起旅行,这里的品种多样性会很有用。这里的banh loc六个售价30,000 VND。早上6点开门,是去皇城(Citadel)之前吃早餐的好去处。

    Lac Thien / Lac Thanh 区域摊位 — 避雷指南

    这是真心话环节。Dinh Tien Hoang街附近Lac Thien和Lac Thanh餐厅周围的摊位群多年来出现在每一份游客清单上——部分是因为其家族历史,部分是因为附近旅馆的极力推荐。这里的banh loc味道尚可,但售价高达50,000–60,000 VND,而当地人在别处只需30,000 VND就能吃到。这里的饺子皮更厚且略显粘牙,近年来虾的品质也明显下滑。如果你正好在附近,去吃一顿也不算遗憾,但没必要专门把时间排给这里。

    Banh Loc Nuong — 炭烤异类

    Dong Ba市场附近的一些摊位提供一种炭烤版本,即"banh loc nuong",将香蕉叶包裹的饺子放在木炭上烤制。从严格意义上讲这并不传统,但微焦的外皮和烟熏香气让人难以拒绝。市场北入口附近的一家小贩每份售价6,000 VND。如果你当天早些时候已经吃过蒸的版本,这非常值得作为第二站尝试。

    Hue Banh Loc的独特之处

    Hue拥有比越南中部任何地方都更丰富的米制和木薯粉制小吃——这是皇室对精致小份食物痴迷所留下的遗产。Banh loc与“banh beo”(撒有虾干的蒸米糕)和“banh nam”一样,属于当地人早餐或上午茶的小吃系列,而非单纯的街头猎奇食物。这里的木薯粉皮采用了特定的木薯粉与米粉比例,与Saigon或Hanoi的版本不同——Hue的制作者更倾向于多用木薯粉,这赋予了饺子皮特有的弹性。

    淋上的葱油(moz hanh,由切碎的红葱头熬制)是必不可少的。如果一家店在这方面偷工减料,整道菜就会大打折扣。

    实用贴士

    Hue的大多数banh loc摊位只在上午营业;计划在早上7点到11点之间用餐,否则你可能会发现一半的摊位已经售罄。在当地摊位用餐,预算每份30,000–40,000 VND即可。如果你住在皇城附近,Nguyen Binh Khiem和Nguyen Du区域的店铺步行向南只需10–15分钟。
