    Saigon 的咖啡文化博大精深——从路边摊的一杯“ca phe sua da”,到出于好奇点的一碗“鸡蛋咖啡”——但“ca phe bo”(牛油果咖啡)在其中独树一帜。与其说它是一种饮品,不如说它是一杯浓缩的“小食”,一旦你了解了它的配方,就会明白为何如此。

    什么是 Ca Phe Bo

    它的质地最容易让人措手不及。这绝不是那种稀薄的冰咖啡,而是一种在杯底浓稠到几乎需要用勺子挖着吃的饮品。咖啡的苦味巧妙地中和了牛油果的油脂感,而炼乳则起到了完美的调和作用。如果你已经喝了一周以上的越南咖啡,即便这种食材组合听起来很新奇,你也会发现它的风味逻辑其实非常熟悉。

    至于卡路里,在这里就别想太多了。

    为什么 Da Lat 牛油果如此重要

    牛油果并非越南本土作物,但 Da Lat 凉爽的中部高原气候(海拔约 1,500 米)非常适合其生长。与低海拔地区种植的品种相比,Da Lat 牛油果通常个头更大、油脂更丰富、水分更少,这对于调制饮品至关重要。水分过多的牛油果只会让成品变得稀薄,而 Da Lat 品种赋予了 ca phe bo 特有的浓稠质感。

    西贡(Saigon)大多数高品质咖啡馆都从 Da Lat 采购牛油果,并且通常会以此作为品质保证。牛油果的旺季大约在 8 月到 11 月,此时价格下降且供应稳定。在旺季之外,品质可能会波动,一些店铺会改用冷冻牛油果泥,虽然也能做出成品,但会失去那种让这款饮品脱颖而出的清新草本香气。

    位于第 3 区 Nguyen Thi Minh Khai 的 Bo De Xanh 制作 ca phe bo 的历史非常悠久,甚至拥有许多只点这款饮品的常客。他们的版本偏甜且浓稠,现点现打,价格在 55,000–65,000 VND 左右。它介于甜点和咖啡之间,最适合慢慢品味。

    Cong Ca Phe——那家以军事美学装饰著称的连锁店——在西贡的大多数分店都有供应牛油果咖啡,如果你想找一个稳定的基准,这是一个不错的选择。品质可靠但谈不上特别出众,价格根据分店不同在 65,000–75,000 VND 之间。位于第 1 区靠近 Ben Thanh Market 的分店,在逛完早市后去喝一杯非常方便。

    如果想要尝试非连锁店的口味,位于 Thu Duc 区 Hoang Dieu 2 沿线以及 Binh Thanh 区后街的一些小型独立咖啡馆,通常制作的 ca phe bo 甜度较低,且选用的咖啡基底明显更好。这些地方的价格通常在 40,000–55,000 VND 左右。

    如何点单

    在越南,你可以点 ca phe bo da(冰的)或 ca phe bo nong(热的)。现在西贡大多数菜单上都有英文标注,直接指着菜单点单也很方便。如果你想少糖,可以说 it duong——因为默认的炼乳量通常很足。

    Ca Phe Bo 与其他越南咖啡的区别

    如果你已经尝试过越南咖啡的经典系列——滴滤黑咖啡、ca phe sua da、以及 Hanoi 的鸡蛋咖啡——那么 ca phe bo 是一个顺理成章的进阶,而非一种背离。它拥有相同的核心基因:浓郁的咖啡、炼乳,以及一种改变口感的辅助食材。不同之处在于,牛油果让它更像是一杯奶昔而非咖啡,且由于杯中其他成分的存在,咖啡因的释放速度也会更慢。

    它非常上镜,这也是它在过去五年里迅速风靡全城的原因之一。但这并不是拒绝它的理由——这款饮品本身就值得一试——但这意味着你偶尔会遇到为了外观而牺牲风味的“网红版”。如果牛油果层看起来是人工合成的亮绿色,那很可能是添加了食用色素或调味糖浆。真正的牛油果泥应该是柔和、质朴的灰绿色。

    实用贴士

    ca phe bo 在西贡全年供应,但如果你在 8 月到 11 月期间到访,更有可能喝到用新鲜 Da Lat 牛油果制作的版本,而非冷冻果泥。预算准备 40,000–75,000 VND 即可。它的饱腹感足以替代一顿简单的早餐,如果你计划上午步行游览,可以考虑这一点——搭配一个“banh mi”非常合适,总花费不到 80,000 VND。
