    顺化向来不吝于展现其戏剧性的饮食文化。但“Com Am Phu”——字面意思为“阴间饭”——之所以被称为“戏剧性”,不仅仅是因为它的名字,更在于其风味:在一个浅碗中,铺着蒸好的米饭,上面依次摆放着切片的猪肉、对半切开的卤蛋、小虾、腌制蔬菜和撒上的炸葱酥,每一种配料都像画家的调色盘一样被精心排列。

    这道菜的历史可以追溯到20世纪20年代,当时古城附近的一位深夜摊贩以“阴间”为它命名——原因众说纷纭,有人说是因为她只在深夜售卖,也有人说是因为那鲜红的辣椒酱看起来就像顺化鬼故事里的场景。无论哪种说法,当地人讲起来都同样笃定。

    Com Am Phu 的真实味道

    米饭本身是安静的基底——清淡、微糯,单吃并无特别之处。真正的功夫在于配料。薄薄的“cha lua”(越南猪肉香肠)带来温和而Q弹的甜味。小虾经过干煸,风味浓缩。用酱油和五香粉腌制的鸡蛋增添了醇厚感。腌豆芽和青木瓜丝则化解了油腻。淋上一勺搭配的“mam nem”——这是一种用菠萝汁和新鲜辣椒稀释过的发酵凤尾鱼蘸酱——以一种顺化特有的咸鲜冲击力,将所有食材完美融合。

    根据地点和份量不同,一盘的价格在 35,000 至 50,000 VND 之间。它饱腹感强但不会让人感到沉重,这正是围绕它进行搭配的意义所在。

    如何搭配餐点

    先来一碗 Banh Canh Cua

    “Banh canh”——粗米粉汤——是享用米饭前最理想的暖胃开场。顺化风味的蟹肉(“cua”)版本尤为出色:浓郁浑浊的汤底中加入了蟹膏、猪蹄和Q弹的木薯粉条。它能唤醒食欲而不会喧宾夺主。点一小碗(“nho”),大约 30,000 VND,就是一道完美的头盘。

    加一份 Bun Bo Hue 的“表亲”——Tom Chua

    顺化是“tom chua”的故乡,这是一种发酵虾,色泽亮粉,酸爽且带有独特的发酵香气。它们通常作为调味品或小菜,而非主菜——在 Com Am Phu 旁边点一小碟,价格非常便宜,仅需 10,000 至 15,000 VND。它的酸度就像青柠之于鱼露一样,能瞬间提亮桌上所有食物的风味。

    以 Banh It Tran 结尾

    “Banh it tran”是小巧的蒸糯米团,内馅是绿豆和虾干,因为去掉了香蕉叶包裹,所以被称为“tran”(裸体)。它们口感扎实且微甜,非常适合作为餐后甜点,无需再点额外的甜品。你可以在卖 Com Am Phu 的店里找到装在小蒸笼里的它们。三块大约 15,000 VND。

    在顺化哪里吃 Com Am Phu

    位于 Nguyen Binh Khiem 街的 Quan Com Am Phu Ba Beo 是当地人首推的标杆。这家店经营了几十年,通常下午 5 点左右开门,直到卖完为止——通常在晚上 9:30 或 10 点前。这里的 mam nem 调味平衡,不会过于刺激,即使你对发酵鱼露不太习惯,也能轻松接受。一份加了鸡蛋和虾的套餐:45,000 VND。

    Hem 1 Dinh Tien Hoang(火车站附近 Dinh Tien Hoang 街的一条小巷)聚集了许多从下午 6 点左右开始营业的 Com Am Phu 摊位。这里更有当地氛围,价格稍微便宜一些——35,000 至 40,000 VND——你将和顺化大学的学生们坐在塑料凳上用餐。摊位外卖的 Banh It Tran 非常值得一试。

    如果想在白天品尝——是的,有几家店午餐也供应——可以去 Cho Dong Ba(Tran Hung Dao 街)里的市场摊位。这里的版本更简单快捷,摆盘没那么讲究,但 30,000 VND 的价格非常实惠。

    一顿色彩丰富且地道的越南餐,展示了越南槟椥省庆祝春节的传统菜肴。

    关于酱料的说明

    Mam nem 的口味因人而异。如果你实在无法接受发酵凤尾鱼,可以要求换成“nuoc mam cham”——即传统的青柠鱼露蘸酱——这样吃起来依然美味。但如果你在顺化吃 Com Am Phu 却完全不加 mam nem,那等于只吃了一半的精髓。在放弃之前,不妨先试着在米饭上淋上一小勺。

    实用贴士

    Com Am Phu 主要是一道晚间菜肴——大多数专门的店在下午 5 点前不会开门。请将其作为晚餐而非午餐计划,并在晚上 8 点前到达,以确保能吃到所有配料。这道菜不适合外带,所以请在店里趁热享用。
