    Hue 的夜晚比 Hanoi 或 Saigon 安静得早,但这并不意味着美食会随之停歇。它只是换了个地方——从主干道转移到了小巷里,晚上 8 点塑料凳摆了出来,9 点烤架便开始冒烟。

    旅游街区 vs. 当地人的觅食地

    对于初次到访的游客来说,Le Loi 和 Hung Vuong 是显而易见的选择。靠近 Dong Ba Market 的路段有几家摊位售卖 "banh mi" 和烤串,这些地方完全没问题——交通便利,价格以 VND 和 USD 标出,店员也能说些英语。但你为此支付了一小笔“便利费”(在两条街外只需半价就能买到同样的食物),而且这里的氛围更多是为了游客而非真正的饥肠辘辘。

    想要体验当地人的夜晚,请穿过 Phu Cam 运河,前往南部住宅区的 Chi Lang 和 Nguyen Sinh Cung 一带。这里没有英文招牌,也没有二维码菜单,只有在日光灯下聚在一起用餐的街坊邻居。

    晚上 9 点后的烧烤街

    Doi Cung 及周边小巷

    Doi Cung 街沿线以及 Bui Thi Xuan 旁的小巷是 Hue 居民吃 "nem lui" 的地方——这是一种用香茅串着猪肉糜,在炭火上烤制,并配以青香蕉和杨桃,用米纸包裹食用的美味。十串烤肉的价格约为 35,000–45,000 VND。你需要自己动手包裹,通常要试个两三次,才能掌握技巧,不让馅料从两端掉出来。

    同样的摊位通常还会供应 "banh uot thit nuong"——蒸米皮配烤猪肉、少许鱼露和虾米。这道菜看起来平平无奇,但吃完一份往往会让你忍不住再点一份。

    大多数烤架在晚上 8 点点火,一直营业到午夜或周末更晚。如果是工作日,想吃到品种最全的食物,请在晚上 10:30 前到达。

    An Cuu 夜市区域

    在 Truong Tien 桥南部的 An Cuu 及其周边,入夜后会聚集起一批餐车和开敞式店铺。与其说这是一个正式的市场,不如说是一个自发的聚集地——有卖螺蛳的、烤玉米的,还有一位推着餐车卖 "banh trang nuong"(烤米纸,上面铺有鸡蛋、葱花和虾米,有时被称为越南披萨)的女士。一份完整的 banh trang nuong 售价为 15,000–25,000 VND,取决于配料。

    这里的螺蛳摊位值得专门提上一笔。

    螺蛳摊:Hue 真正的深夜特色

    "Oc"(螺蛳和贝类)在 Hue 的夜宵界地位举足轻重。小餐馆通常在手写招牌上大字写着 "Oc",晚上 8:30 左右就会坐满食客,大家分享着香茅蒸螺、辣椒罗勒炒蛤蜊和葱油烤生蚝。

    Nguyen Truong To 街周边有几家口碑不错的店。价格按盘或按公斤计算——每人预算 80,000–150,000 VND 就可以享用一顿丰盛的晚餐,再配上一瓶 Huda 啤酒(当地的拉格啤酒,随处可见且便宜,一罐约 15,000 VND)。这里的社交模式千篇一律:点上一桌菜,慢慢吃,大声聊。

    如果你想找个推荐而不想费心寻找:找一家啤酒冰箱上挂着水珠、桌上坐满和你父母辈年纪相仿食客的店,那就是信号。

    甜品车与甜饮

    Hue 以其 "che" 而闻名——这是一种甜汤和甜品饮料,包含数十种变化,包括绿豆、黑眼豆、莲子和芋头组合,可热饮也可冷饮。甜品车从晚上 6 点左右出现在大多数主要住宅街道上,但最丰富的品种是在晚餐后才出来。

    靠近 Imperial Citadel 城墙的 Tran Phu 路段有几家 che 摊贩,他们摆起矮桌,生意一直火爆到晚上 10 点或 11 点。一杯售价 10,000–20,000 VND。"che hat sen"(莲子甜汤)是 Hue 最具代表性的甜品——清甜细腻,与南部那些浓郁的版本截然不同。

    如果想喝点凉的,"nuoc sam"(一种微甜的草本清凉饮料,加冰食用)在城市各处的街头餐车上用大玻璃罐售卖。它的味道带有一点药草味,在 Hue 的潮湿天气里喝上一杯再合适不过了。

    深夜觅食的安全与实用贴士

    Hue 是一个夜间街头觅食风险较低的城市。虽然存在小偷小摸——在拥挤区域请将手机收好,并使用有拉链的包——但独自旅行者或情侣在晚上 10 点后在街边摊用餐在这里非常普遍。当地人每晚都这么做。

    关于价格:如果没有菜单,点餐前请先询问。"Bao nhieu tien?"(多少钱?)非常管用。如果语言不通,大多数摊主会用手机计算器展示给你看。在游客较多的地区偶尔会发生溢价情况,但通常不会太离谱——比当地价格高出 5,000–10,000 VND,算不上欺诈。

    Hue 的街头美食之旅也可以结合白天的 Dong Xuan 市场(当地的市场,非 Hanoi 的那个)之行,去了解新鲜食材和当季特色。这座城市的饮食——从早晨的 "bun bo Hue (분보후에 / 顺化牛肉粉 / ブンボーフエ)" 到晚上的 nem lui——值得你花至少两天时间去细细品味。

    实用建议

    大多数街头摊位只收现金;请准备好小额钞票(10,000 和 20,000 VND 的纸币很有用)。烧烤街和螺蛳摊在周四至周日最为活跃。在 10 月到 12 月频繁的大雨期间,摊贩会提前收摊——如果天气预报看起来不稳定,建议晚上 9 点就去,而不是等到 11 点。
