    龙川位于湄公河西岸,距离 Saigon 约 190 公里。大多数游客在前往 Chau Doc 或 Ha Tien 的途中会直接经过这里,但这其实是个遗憾。作为安江省的省会,龙川拥有深植于河流节奏中的饮食文化——淡水鱼、发酵调味品,以及如果不抓紧时间就会在上午 9 点前收摊的早市活力。

    如果摊位上有手写招牌提到“ca loc”,千万别走开。黑鱼(ca loc)是湄公河三角洲的招牌食材,而安江省的黑鱼来自洪水泛滥的稻田,而非人工养殖池,味道确实大不相同。

    Ca Loc Nuong:定义安江省的招牌菜

    “Ca loc nuong”——烤黑鱼——是当地人最引以为傲的菜肴,这不无道理。整条鱼被厚厚的盐包裹,直接在木炭上烘烤,直到鱼皮焦脆,鱼肉在内部被蒸熟。吃法就像吃三角洲风味的春卷:剥下鱼肉,放在米纸上,配以新鲜香草、黄瓜、青香蕉、杨桃,卷起来后蘸上用菠萝汁稀释的名为“mam nem”的发酵鱼露。

    卷好这种春卷需要练习,但别担心,重点在于鱼肉本身。

    至于 ca loc nuong,建议避开市场,去寻找 Tran Hung Dao 沿河或市中心以南 An Long 运河沿岸的专门餐馆。整条鱼足够两人享用,价格约在 150,000–250,000 VND。

    Hu Tieu 与高棉-华人的融合

    安江省拥有大量高棉族和华裔人口,这在餐桌上体现得淋漓尽致。这里的“Hu tieu”与 Saigon 或 My Tho 的版本略有不同——汤底通常加入干鱿鱼和虾米以提升深度,配菜倾向于加入更多的豆芽,减少猪油的使用。你可以选择干拌(kho)或带汤的版本,其中干拌版配上一小碗清汤非常值得一试。

    这种华人与高棉人的影响也体现在市场上供应的蟹肉“banh canh”(banh canh cua)中——这是一种更浓稠的汤面,虽然通常被认为与越南中部有关,但在这里呈现出一种独特的南部甜味风格。

    Mam:发酵的极致美味

    讨论安江美食,绝不能绕过“mam”,即该省的发酵鱼酱传统。安江省是越南主要的 mam 产区之一,即使你不打算购买,在 Cho Long Xuyen 看看各种各样的鱼酱也很有趣。

    Mam ca loc(发酵黑鱼酱)、mam ca sat(一种较小的鱼类)和 mam ruoc(虾酱)随处可见。摊贩通常提供小份试吃。那种味道极具冲击力,但一旦你适应了气味,就会发现那是鲜味(umami)最浓缩的形式。

    Mam 是许多当地菜肴的关键配料,包括 lau mam(发酵鱼火锅),这是安江省最具代表性的聚餐美食。吃 lau mam 需要去正规餐馆,而不是市场摊位。这不是快餐,在当地餐馆人均预算约 80,000–120,000 VND。

    Banh Mi 与午后时光

    龙川有着深厚的“banh mi”文化,午后最为兴盛。龙川风格的 banh mi 倾向于涂抹大量的猪肝酱,配以腌萝卜、黄瓜和一勺浓郁的酱汁——比你在 Da Nang 或 Hoi An 找到的更接近 Saigon 风格。摊贩通常从下午 3 点左右开始在 Nguyen Hue 和 Tran Hung Dao 的交叉口摆摊。

    如果想解渴,路边摊的冰“ca phe sua da”只需 15,000–20,000 VND,而且冲泡得非常浓郁——安江人对咖啡可是认真的。

    交通与行程建议

    前往龙川最简单的方式是从 Saigon 的 Mien Tay 车站乘巴士(约 3.5 小时,90,000–110,000 VND)。也有从 Can Tho 出发的巴士(约 1.5 小时)。到达镇上后,xe om(摩托车出租车)或 Grab 摩托车可以解决所有交通问题——市场区、河滨路和餐馆聚集区彼此距离都在几公里之内。

    建议空腹前往,并在上午 8 点前逛完市场。到了上午晚些时候,最好的摊位就会售罄。

    实用贴士

    如果你在 Can Tho 和 Chau Doc 之间穿行,龙川是一个非常适合停留一晚的地方——镇上市场附近有几家干净实惠的旅馆,每晚价格在 250,000–450,000 VND。这里的美食场景几乎全是越南语,没有英文菜单,所以用手指点餐和学习几个简单的短语会很有帮助。请准备好零钱;大多数摊位无法找开 200,000 VND 的大钞。
