    “Bun ca”——即鱼肉米粉——在越南各地随处可见,但富安省的版本有着独特的个性。汤底是用鱼骨和鱼头熬制而成,通常选用 ca thu(鲭鱼)或 ca ngung(一种当地类似琥珀鱼的鱼类),并加入柠檬草、姜黄和少许虾酱来增加层次感。它比 Hue 的“bun bo hue”中那种发酵味浓郁的汤底更清爽,也比南部偏甜的口味更鲜美。

    在 Tuy Hoa 的大多数小店里,鱼肉通常以两种形式呈现:一种是直接铺在碗里的水煮鱼片,另一种是几块 cha ca——即用同样的鱼肉制成的炸鱼饼,拌入大蒜和葱花,捏成饼状后煎至外皮金黄。水煮鱼肉的细腻与炸鱼饼的嚼劲形成了鲜明的对比,这正是这道菜的精髓所在。

    碗底是新鲜的 bun 米粉,比干米粉稍粗。配菜包括:切丝的香蕉花、豆芽、rau ram(越南香菜)以及一片青柠。桌上还会提供一小碟辣椒鱼露。在省会 Tuy Hoa 的街头小店,价格通常在 35,000–50,000 VND 之间。

    在 Tuy Hoa 去哪里吃

    Tuy Hoa 的早市区域,大致沿着 Tran Hung Dao 大街以及与之垂直通往河流的街道,是 bun ca 摊位最集中的地方。大多数摊位早上 6 点开门,10 点前就会卖光。寻找那些摆着低矮塑料凳和不锈钢汤锅的摊位,汤锅里的汤保持着微沸状态——而不是剧烈翻滚,这正是地道老店的标志。

    这里没有哪一家是每本指南上都写着的“网红店”。不成文的规定是:在早上 8 点前,看哪家摊位前停的摩托车最多,去那家准没错。

    更广阔的海鲜图景

    Bun ca 只是一个切入点,富安省的海鲜远不止于此。以下几道菜值得一试:

    Ca Ngung Chien Muoi

    将整条鱼用盐、胡椒和少量糖腌制后放入热油锅中煎炸。Ca ngung——有时根据当天的渔获被称为 ca bong 或琥珀鱼——肉质紧实,经得起高温煎炸而不会干柴。搭配米饭和由青柠汁、盐及新鲜辣椒切片调成的蘸料食用。在城里的任何一家 com binh dan(平民快餐店)都能吃到。

    Ghe Hap Bia

    用啤酒和柠檬草蒸制的蓝蟹。螃蟹来自 Tuy Hoa 河口和更北边靠近 Vung Ro 湾的 To Loan 泻湖。肉质鲜甜,带有淡淡的海水咸味。这是一道晚餐菜肴——你可以去海滩边 Hung Vuong 大街上的海鲜餐厅,从水箱里挑选活蟹,现点现做。根据螃蟹的大小和季节,每只价格大约在 150,000–250,000 VND。

    Banh Canh Ca Loc

    “Banh canh”——即粗木薯米粉——配上 ca loc(黑鱼)的清汤。黑鱼如果是在静水中养殖,往往会有泥腥味,但富安省的版本使用的是来自更干净河口水域的鱼,汤头因此更加鲜美。上面撒上炸红葱头和葱花。你可以在 bun ca 摊位所在的早市区域找到这道菜。

    所有美味背后的秘密:Ca Com

    富安省海鲜烹饪的大部分风味都源于“ca com”——凤尾鱼——以及由此发酵而成的鱼露和虾酱。虽然该省在鱼露方面的名气不如 Phu Quoc,但沿海的当地生产商制作的鱼露味道更浓郁、咸鲜,是当地人蘸料和烹饪的首选。如果你路过这里想带点特产回家,距离 Tuy Hoa 以北约 3 公里的 Ganh Do 渔村出售的小瓶装 ca com 鱼露价格在 60,000–80,000 VND 之间,在村里的小市场就能买到。

    交通与时间安排

    Tuy Hoa 拥有一个国内机场(Dong Tac),有往返 Hanoi 和 Saigon 的航班。如果乘坐火车,它位于南北主线上——距离 Da Nang 约 3.5 小时车程,距离 Nha Trang 约 4 小时车程。大多数游客将其作为一晚的短暂停留点,这足够你享受两顿美食:早上的 bun ca 和晚上的烤海鲜或蒸海鲜。

    渔船全年作业,但 10 月至次年 2 月渔获最丰富,因为凉爽的水温会将不同种类的鱼推向近海。如果可以,请避开 9 月——该省正处于季末台风的直接路径上。

    实用贴士

    大多数街头摊位和市场餐厅只收现金;请准备好小面额钞票(20,000–50,000 VND)。Google Maps 对于 Tuy Hoa 的小型美食摊位覆盖不全——建议在早上 8 点前步行穿过市场街道,跟着香气走。富安省几乎没有英文菜单,因此掌握一些越南语菜名会让你受益匪浅。
