    Hue 以精致的宫廷料理闻名,但这座城市最棒的美味往往诞生于炭火炉边和塑料小凳上。“Nem lui”——将拌入香茅、鱼露和虾酱的猪肉糜包裹在香茅茎上,烤至微焦——这道看似简单的料理,其实非常考验功底。包裹的过程很有仪式感:取一张 banh trang(米纸),在水中稍作浸润,铺上香草、青香蕉片、杨桃、黄瓜和烤肉串,最后蘸上浓郁的、撒有炸猪油渣的花生海鲜酱。做错了,它就只是一串普通的肉;做对了,每一味食材都会发挥出应有的作用。

    顺化版本的独特之处

    越南中部其他地区的 Nem lui 通常口感更瘦、味道更清淡。而顺化版本则更为浓郁——猪肉馅中加入了更多的虾酱,蘸酱(“tuong nem”)颜色更深、花生味更浓,且坚持搭配新鲜香草,包括 tia to(紫苏)和 kinh gioi(越南香薷),这些在 Da Nang 或 Hoi An 的餐盘里并不总是能见到。香茅茎不仅仅是装饰,它在烧烤过程中从内向外为肉增添了香气。那些使用干香茅或预先磨碎的香茅末而非新鲜香茅茎的店铺,在每一口味道上都打了折扣。

    值得一去的店铺

    Quan Nem Lui Ba Do

    地址: 11 Pham Hong Thai, Phu Hoi ward 营业时间: 每天 10:00 – 21:00 价格: 每份 45,000–55,000 VND(6 串 + 全套香草拼盘)

    这是顺化人带朋友去吃 Nem lui 的首选。Ba Do 在这条街上烤了二十多年的 Nem lui,手艺早已炉火纯青——肉馅压得非常紧实,既不会在烤架上散开,又能保持内部鲜嫩。这里的 tuong nem 是自家熬制的,有一种瓶装酱料无法复制的烤花生醇厚感。如果你想避开排队,建议在 11:30 之前或 14:00 之后前往。

    Quan Hem 9 Nguyen Binh Khiem

    地址: Hem (巷子) 9, Nguyen Binh Khiem, Vinh Ninh ward 营业时间: 11:00 – 20:30,周一休息 价格: 每份 40,000–50,000 VND

    这是一家午餐时段很快就会坐满的小店。店主至今仍从郊区的自家菜园采购香茅茎,这听起来像是营销话术,但当你闻到那股烟火气时就会明白所言非虚。香草拼盘非常大方,通常有五六种,而不是游客店里那种吝啬的三种标配。蘸酱比 Ba Do 的稍微稀一点,但辣椒的鲜味更突出。

    Co Thuy Nem Lui

    地址: 24 Nguyen Truong To, Phu Hau ward 营业时间: 每天 09:30 – 19:00 价格: 每份 38,000–45,000 VND

    价格稍便宜,环境更随意。Co Thuy 的出品胜在稳定——肉馅调味得当,烤制火候精准,且他们使用的 banh trang 比大多数店更薄、韧性更好(重点:过厚的米纸容易撕裂或破碎,会毁掉整个卷饼体验)。如果你在 Phu Hau 区域靠近 Tomb of Tu Duc 一带,想在不过河的情况下吃顿午餐,这是个不错的选择。下午室内烟雾可能较大,建议询问是否有室外座位。

    Lang Biang Quan

    地址: 3/7 Truong Dinh, Phu Cat ward 营业时间: 每天 10:30 – 21:30 价格: 每份 50,000–65,000 VND

    价格略高,因为这里提供了更舒适的座位和英文菜单,吸引了当地人和游客。Nem lui 本身品质过硬——新鲜香茅、猪肉肥瘦比例恰当,香草拼盘中还包含了 rau muong(空心菜梗),增加了爽脆口感。Tuong nem 的水准也很高。如果你想带朋友去一个有空调、又能顺便喝点 bia hoi 且无需费力沟通的地方,这里是最佳选择。

    Quan Nem Lui Hoang Thi Loan (夜市摊位)

    地址: Hoang Thi Loan 街,靠近与 Tran Cao Van 的交叉口 营业时间: 每天 17:00 – 23:00 价格: 每份 35,000–42,000 VND

    仅在傍晚出摊,路边架起炭火炉,你还没看见摊位就能闻到香味。这是最地道的街头美食版本——没有菜单,没有英文,全靠手势交流。分量稍微小一点,但价格也相应更低。傍晚时分,坐在低矮的塑料凳上,看着摩托车在离你一米远的地方呼啸而过,这种氛围正是顺化街头美食的精髓。这里的 tuong nem 比平均水平更稠、更甜,评价两极分化;建议先尝尝再下定论。

    避雷指南

    避开 Trang Tien 桥附近 Chu Van An 街上那一排面向游客的 Nem lui 摊位。倒不是说全都难吃,但其中几家使用的是提前几小时做好的肉饼,冷藏后再烤,虽然也是现点现烤,但缺乏新鲜肉馅的那种弹牙感。香草拼盘缩水严重,蘸酱尝起来就像是稀释过的瓶装海鲜酱。价格(65,000–80,000 VND)远高于其品质。往任何方向走十分钟,你都能以更低的价格吃到更好的味道。

    实用贴士

    顺化大多数 Nem lui 店铺从 10:30 左右开始供应午餐,直到售罄为止——在生意好的店,晚上 19:00 左右可能就卖完了,所以如果你有心仪的目标,不要去得太晚。准备好小额钞票;50,000 VND 或更小的面额会方便支付。如果你往返于顺化和会安之间,请注意 Nem lui 虽然两地都有,但顺化的 tuong nem 蘸酱与你在南方吃到的味道有显著差异。
