    Best Bun Ca Nha Trang in Nha Trang: Where Locals Actually Eat

    Nha Trang (芽庄) 以其海鲜烧烤和海滨度假村而闻名,但当地人在早上 8 点前排队等待的美味,其实是“banh canh cha ca”——这是一种用木薯粉制成的粗面条,口感微弹,配以清澈且充满鱼鲜味的汤底,上面铺着切片的鱼饼、葱花、酥脆的红葱头,再撒上一抹黑胡椒。它朴实、饱腹,且几乎完全被游客餐厅圈所忽略。这恰恰是一个好迹象。

    为什么 Nha Trang 的版本与众不同

    Banh Canh Co Dong — 4 Ngo Gia Tu, Phuoc Tan Ward

    如果你追问 Nha Trang 的居民,大多数人第一个提到的就是这家。Co Dong 自 20 世纪 90 年代初以来就一直在这间狭窄的店面经营。汤底清澈且鲜味十足,cha ca 是店内自制并现炸的,面条的软硬度恰到好处——既不粘牙也不软烂。标准碗的价格为 30,000–35,000 VND。他们早上 6:00 开门,通常 10:00 前就会卖光,所以请尽早前往,否则只能接受售罄的现实。没有英文菜单。指着旁边人吃的点餐即可。

    Quan Banh Canh Ba Giau — 18 La Xuan Ky, Phuoc Hai Ward

    在社区外名气不大,但品质始终如一。Ba Giau 的版本汤底稍微浓郁一些——她在鱼骨的基础上加入了一点猪骨,这让汤底在不失海鲜特色的前提下口感更圆润。这里的 cha ca 是蒸的而不是炸的,所以口感更软嫩细腻。每碗价格 28,000–32,000 VND。早上 6:30 开门,卖完即止(通常在 9:30 前)。路边停车很方便;这里是一个几乎没有游客足迹的居民区。

    Banh Canh Cha Ca 94 — 94 Phan Chu Trinh, Van Thang Ward

    这是周边商业街上班族在上午时段的热门去处。这里的招牌是自制辣椒油——一种深色的、烤过的辣椒和香茅酱,能让整碗面瞬间变得火辣过瘾。面条分量十足,而且店家不会催促你。价格:普通碗 35,000–40,000 VND,加份 cha ca 需 45,000 VND。营业时间为早上 7:00 至中午 12:00。节奏比那些早起的小店稍微从容一些,非常适合不是“早起鸟”的旅行者。

    Banh Canh Cha Ca O Loan — 5/4 To Hien Thanh, Tan Lap Ward

    O Loan 值得你特地骑车(距离中心海滩约 2 公里)前往,原因只有一个:她同时制作两种 cha ca——标准的炸鱼饼,以及一种带有轻微焦香的薄片烤鱼饼。在一碗面里同时吃到这两种是最佳选择。汤底偏清淡细腻。每碗价格 30,000–38,000 VND(取决于配料)。仅在早上 6:00 至 10:00 营业。只收现金,没有例外。

    Tiem Banh Canh Nha Hang Que — 67 Le Hong Phong, Phuoc Tan Ward

    这家店是在自家前厅经营的,这在 Nha Trang 很常见,但 Nha Hang Que 的规模稍微大一点——早上 7:00 前,几张塑料桌子就会摆到人行道上。这里的汤底是这几家中鱼味最浓郁的,基底除了鱼骨外还加入了干凤尾鱼。如果你喜欢鲜明强烈的海鲜味,选这碗就对了。分量比平均水平稍小,但价格也更亲民:25,000–30,000 VND。营业时间为早上 6:00 至 9:30。

    避雷指南

    聚集在 Tran Phu 海滩附近的 banh canh 摊位——尤其是 Novotel 和 Hon Chong 之间的那几家——完全是针对不明真相的游客。汤底稀薄且调味不足,cha ca 明显是预制并加热的,你却要花 60,000–80,000 VND 买一碗在客观上比这份清单里任何一家都难吃、价格却贵了一倍的面。地理位置便利是它们能存活的唯一原因。请避开它们。

    令人垂涎的海鲜汤面,配有虾和蔬菜,是美食爱好者的理想之选。
