    越南(Vietnam)的饮食离不开“nuoc mam”(鱼露)。无论是炖菜、蘸料、腌肉,还是直接拌饭,鱼露无处不在。但如果认为所有鱼露都一样,就像说所有越南啤酒都一样,仅仅因为它们都是冷的。鱼的来源、发酵时长、鱼与盐的比例——这一切决定了最终产品的风味差异。以下是四大主要产区的特点。

    Phu Quoc —— 备受推崇的标杆

    Phu Quoc 鱼露在越南法律下拥有地理标志保护,这意味着其他地区的生产商从技术上讲不能将产品标注为“Phu Quoc nuoc mam”——尽管执行力度并不严格。这里的鱼露几乎完全由 ca com(一种类似凤尾鱼的小鱼)制成,这些鱼是在 7 月至次年 1 月期间在岛屿周边海域捕获的。发酵桶很大——传统的木桶可容纳数吨——发酵时间至少为 12 个月,优质鱼露的发酵时间往往更长。

    最终成品呈现深琥珀色,近乎红木色,具有明显的鲜味(umami)基底,且刺激性相对较低。咸度明显但不尖锐。顶级鱼露(寻找氮含量标注为 40°N 或以上的瓶子)蛋白质含量极高,只需几滴便滋味十足。像 Thinh Phat 和 Khai Hoan 这样的品牌仍保留着传统的木桶酿造工艺,你可以在 Duong Dong 镇附近参观——在 200 米外就能闻到那股独特的味道,这也是体验的一部分。

    Phan Thiet —— 更柔和、更甜美、被低估的佳品

    Phan Thiet 是位于 Saigon 东北约 200 公里处 Binh Thuan 省的沿海城市,几个世纪以来一直生产鱼露,但受到的游客关注远少于 Phu Quoc。当地渔船也在附近海域捕捞 ca com,但这里的发酵风格往往产出颜色较浅、口感稍淡、并带有一种 Phu Quoc 鱼露所没有的微妙甜味的鱼露。

    Nha Trang —— 工业化规模,诚实的产品

    Nha Trang 和广大的 Khanh Hoa 省是越南最大的鱼露产区之一。这里的生产方式不如 Phu Quoc 那样手工化,更趋向工业化——工厂规模更大,平均发酵周期更短,使用的鱼类品种也比单一的 ca com 更丰富。这种多样性意味着不同批次的风味一致性较差,但该地区较好的生产商仍能产出优质产品。

    Nha Trang nuoc mam 的口感往往比 Phu Quoc 或 Phan Thiet 的更尖锐、更咸,气味也更浓烈。这种尖锐感在烹饪中其实很有用——它可以化解炖猪肉中的油脂,或者为“bun bo hue”增添直接的调味,因为这些菜肴并不追求细腻。Chin Su 和 Masan 集团在该地区设有工厂,尽管他们的大众市场产品已远离传统的发酵方法。如果你在 Nha Trang 想买正宗货,请去 Cho Dam 市场寻找当地的小品牌,而不是去超市货架。

    Cat Hai —— 北方的独特风味

    Cat Hai 是 Hai Phong 的一个区,位于河流系统与北部湾交汇处的河口岛屿上。它是国际上四个产区中知名度最低的,但在越南北部却非常重要。Cat Hai nuoc mam 几代以来一直是 Hanoi 厨房的常客——这是首都的老厨师们想要寻找熟悉味道时的首选。

    这里的鱼露与南方版本有明显不同。北部海域的鱼类品种随季节变化,且较凉爽的气候减缓了发酵速度,一些生产商认为这有助于发展出更复杂的风味。Cat Hai nuoc mam 通常更咸、气味更直接,Phan Thiet 鱼露中的甜味较少。它是最适合北方厨房的版本——想想“bun cha”(烤肉米粉)的蘸汁,或是搭配“banh cuon”的 nuoc cham——在这些菜肴中,菜品本身提供了平衡,而鱼露需要展现出鲜明的个性。

    你在 Saigon 不容易买到 Cat Hai 鱼露,而在 Hanoi 的市场上,Phu Quoc 鱼露也比你想象的更少见。这种对地域风味的忠诚是真实存在的。

    Hanoi 价格:在 Dong Xuan 市场或当地菜市场,500ml 约 45,000–70,000 VND。

    购买时真正需要关注的

    忽略品牌名称,关注两点:氮含量(以 N 为单位,显示为度数)和配料表。正宗的传统 nuoc mam 配料表上应该只有两种成分——鱼和盐。一旦看到添加了水、糖或增味剂,你买的就是稀释后的工业产品。作为餐桌调料,30°N 是值得考虑的最低标准;40°N 及以上是专业厨师的选择。

    地域特色是真实存在的,但也足够微妙,以至于使用环境也很重要。在 Hanoi 的厨房里使用 Phu Quoc 40°N 鱼露并没有错——这只是风味上的不同对话。

    实用提示

    所有四个产区都直接在产地销售,通常在渔港附近或当地市场——大多数小型生产商无需预约工厂参观。如果你要带鱼露回家,玻璃瓶比塑料瓶更适合运输。如果你乘飞机国际旅行,请在海关申报;出口是合法的,但机场安检偶尔会标记没有标签的瓶子。
