    Banh Mi in Saigon: How to Order Without Panic

    Saigon 版本的“Banh Mi”独具特色——面包短而脆,咬下去咔嚓作响,内里抹着厚厚的猪肝酱,配上腌制的白萝卜和胡萝卜(“dua chua”)、新鲜香菜以及足以让你放慢进食速度的辣椒。单手拿一个就是一份完美的零食,但只要搭配得当,你就能以不到 80,000 VND 的价格享用一顿丰盛且令人满足的正餐。

    Saigon法棍有何不同

    面包的重要性往往被低估。中部地区(如你在 Hoi An 找到的那种)的面包往往外壳更软、更轻盈。Saigon(사이공 / 西贡 / サイゴン)的面包店烘焙的面包卷较短,外壳更厚,即使塞入馅料后依然保持酥脆。这种结构上的坚韧正是其能容纳丰富馅料的关键:你可以豪迈地塞满各种食材,而不必担心它散架。

    Banh Mi 本身介于零食和轻食午餐之间。要将其变成一顿正式的餐点,以下搭配方案很有效。

    Huynh Hoa 的下午配置: 三明治本身很浓郁,所以你更需要一些清淡的配菜,而不是另一道厚重的食物。一杯冰凉的“bia hoi(비아호이 / 鲜啤 / ビアホイ)”或附近摊位现榨的甘蔗汁(“nuoc mia”)能很好地平衡猪肝酱和油脂的腻感。如果你想增加饱腹感,附近小贩卖的一小碗“bun rieu”(第一区市场常见的番茄蟹肉米粉汤)比其他同样扎实的食物更合适。你需要的是对比,而不是竞争。

    Saigon 的 Banh Mi 文化清晰地分为早间(Hoa Ma、街头摊位、早餐人群)和下午(Huynh Hoa、午后零食、早晚餐)。如果你在早上 9 点去 Huynh Hoa 或下午 4 点去 Hoa Ma,只会看到关上的卷帘门。请围绕店铺的营业时间来规划行程,而不是反过来。

    街头摊位——那些带有玻璃柜和便携式木炭烤炉的摊位——在两个时段都有营业,但质量参差不齐。在 Nguyen Trai 或 Bui Vien 街上买一个不错的 Banh Mi 价格在 20,000–30,000 VND 之间,绝对值得一试。而糟糕的摊位会使用隔夜面包和袋装预制馅料,你一吃就能分辨出来。

    实用提示

    请准备现金——Huynh Hoa 和 Hoa Ma 都不接受刷卡,且 Le Thi Rieng 街上的 ATM 对境外卡收取手续费。Huynh Hoa 大多数晚上都会售罄;如果你在周末去,请在下午 5 点前到达以确保能买到。两家店都没有像样的座位,因此边走边吃或在附近的马路牙子上解决是常态。
