    Ca Mau是越南最南端的省份。这里的陆地消融在红树林水道中,湄公河的支流向泰国湾扇形散开,形成的微咸水域成为了培育越南顶级虾蟹的理想之地。如果您对海鲜情有独钟,那么这个省份绝对值得您专程造访。

    为什么Ca Mau的海鲜与众不同

    简短的回答是:生态系统。Ca Mau半岛拥有越南最大的红树林,约10万公顷的潮汐森林既是野生海鲜的育苗场,也是养殖海鲜的天然饲料来源。在红树林冠层下、随潮汐海水灌溉的低密度池塘中生长的虾,生长速度较慢,其肉质比集约化养殖的虾更纯净、更鲜甜。您在Can Tho甚至Saigon的菜单上都能看到“tom rung”(红树林虾)字样,它卖出高价是有充分理由的。

    该省大规模生产黑虎虾、南美白对虾和青蟹,但当地的饮食文化却一点也不“工业化”。在Ca Mau镇,Nguyen Trai街沿线和Ben Xe My Hung车站附近的海鲜市场从凌晨4点就开始热闹起来。摊贩们在木桌上按大小挑选活蟹,如果您不去面向游客的餐厅,在这里购买一整只青蟹的价格约为每公斤150,000–200,000 VND。

    值得寻找的美味

    Cua Ca Mau — 青蟹

    Ca Mau青蟹的名声远扬。雌蟹中肥美带橙色的蟹黄(10月至次年1月品质最佳)是重头戏——只需用少许姜简单清蒸,或者撬开蟹壳,蘸着盐、青柠和辣椒食用。当地人会告诉您,任何比这更复杂的酱汁都是多余的。在Ca Mau镇的河畔餐厅,一只清蒸整蟹的价格约为250,000–400,000 VND,具体取决于大小。

    葱油烤蟹("cua nuong mo hanh")是另一种经典做法——蟹壳微焦,蟹肉保持多汁,葱油渗入其中。您可以在前往最南端点Dat Mui的运河路沿线的露天摊位找到这道菜。

    Tom Chua Ca Mau — 发酵虾卷

    "Tom chua"是大多数游客意想不到的菜肴。将小虾与高良姜、辣椒和熟米饭一起发酵数天,直到产生酸味和复杂的风味。食用时用米纸包裹,配上香草、青香蕉和杨桃——这与南方的“goi cuon”相似,但口感更尖锐。这是一种需要慢慢品味的食物,但绝对值得一试。在市场区域的当地com tam小店,一份的价格约为40,000–60,000 VND。

    Banh Tam Bi和Hu Tieu

    湄公河三角洲的影响体现在面食文化中。Ca Mau有自己独特的“hu tieu”做法——比Saigon版本更清淡,香草味更浓,通常配有虾和猪肉,可做汤面或拌面。"Banh tam bi"——一种粗如蚕状的米粉,配上椰奶、猪皮丝和腌菜——是Ca Mau做得非常地道的南方特色菜。在镇中心Hoa Binh环岛附近的街头摊位,一碗的价格为30,000–50,000 VND。

    Rach Goc生蚝

    Rach Goc是Ca Mau省东部边缘的一个小沿海公社,游客较少,但值得一去。这里在河口竹架上养殖的生蚝肥美且带有海水的咸鲜味,通常用葱油和碎花生烤制。它们虽然不如Ca Mau青蟹出名,但品质极佳,一打烤生蚝的价格约为80,000–100,000 VND。

    虾场体验

    前往Ca Mau

    Ca Mau镇距离Saigon公路路程约350公里——从Mien Tay车站乘巴士约需6–7小时,Phuong Trang和Kumho Samco线路每天有多次班次,票价约为200,000–250,000 VND。此外,越南航空和Bamboo Airways每天都有从Tan Son Nhat机场出发的航班,将行程缩短至一小时。从Can Tho出发,向南约180公里即可到达。

    该省没有Phu Quoc或Can Tho湄公河环线那样的旅游基础设施,但这正是其魅力所在。这里的食物更便宜、更新鲜,而且是真正生活在这里的人们所享用的。

    实用提示

    蟹黄品质最好的月份是10月至次年1月——在此期间之外,螃蟹依然美味,只是肉质稍瘦。请携带现金;大多数市场摊位和小型餐厅不接受刷卡。在Ca Mau进行一天的深度美食之旅——市场早餐、午餐hu tieu、晚餐蟹宴——如果您在当地人常去的地方用餐,总花费将远低于300,000 VND。
