    Saigon制作"banh mi"的方式与越南其他地方截然不同:法棍面包更酥脆,肉酱(pate)更浓郁,而且当你站在摊位前时,摊主会满怀期待地盯着你,身后还有八辆摩托车在怠速等待。以下是让你不再手忙脚乱的指南。

    为什么Saigon的Banh Mi与众不同

    法棍面包本身就是关键。Saigon(사이공 / 西贡 / サイゴン)的面包比你在 Hoi An 或 Hue 吃到的那种更长、更软的面包要短一些,外壳也更硬。当你咬下去时,它会碎裂开来。这是故意的——外壳为内部湿润的馅料提供了口感上的对比。

    一份标准的Saigon“banh mi (반미 / 越式法包 / バインミー) dac biet”(特制组合)通常包含:

    • Pate(肉酱) — 猪肝酱,在面包两面厚厚地涂上一层
    • Cha lua(越南扎肉) — 蒸猪肉卷,切成薄片
    • Thit nuong(烤肉) — 炭烤猪肉(可选,并非总是包含)
    • Do chua(腌菜) — 腌制的白萝卜丝和胡萝卜丝
    • Dua chua(酸菜) — 发酵芥菜,比do chua味道更浓郁、更独特
    • 黄瓜 — 切成长条,增加脆感
    • 香菜 — 满满一把,不只是装饰
    • 辣椒 — 新鲜辣椒片或抹上一层辣椒酱,如果需要,可以要求微辣
    • Maggi或酱油 — 最后淋上一小点调味

    这种组合在街头摊位上的价格通常在25,000到45,000 VND之间。任何收费超过70,000 VND的摊位要么是针对游客,要么是提供高端产品——这两种情况都存在,也都没有错。

    两家定义了这一流派的店铺

    Banh Mi Huynh Hoa

    地址:26 Le Thi Rieng, District 1。营业时间约为每天14:30–23:00(售完即止,有时会提前关门)。

    这是人们争论最多的一家。Huynh Hoa的馅料比城里几乎任何其他地方都要多——三明治厚到你需要双手捧着,还得有个吃它的计划。肉酱与面包的比例严重偏向肉酱。价格约为每个40,000–45,000 VND。这里总是排着长队,但队伍移动很快,直接排队就行。

    点餐很简单:伸出手指表示你要几个。摊主会问你要不要辣椒——点头或摇头即可。其他一切都是标准配置。他们这里不接受定制,你买到的就是店里的招牌口味。

    Banh Mi Hoa Ma

    地址:53 Cao Thang, District 3。营业时间06:00–10:00(仅限早餐,卖完即止)。

    Hoa Ma更古老、更低调。它在黎明时分营业,上午就关门,这意味着它服务的是上班路上的当地人,而不是寻找午餐的游客。这里的面包比Huynh Hoa稍瘦一些,面包和馅料的平衡感更好。他们还提供“banh mi op la”——煎蛋版本,非常适合搭配旁边的 Vietnamese coffee。价格在25,000–30,000 VND左右。

    如何在普通街头摊位点餐

    大多数banh mi摊位没有菜单。这里有一份快速词汇表:

    如果你卡住了,用手指点也没问题。大多数靠近游客区的摊主都很习惯通过手势交流。指指肉酱,指指扎肉,竖起一根手指,你就能得到一个三明治。

    拿到后再付款,不要提前付。Saigon的街头交易通常是:递给你三明治,交换钱款,找回零钱。如果有人在没有标价的摊位上要求预付,请先确认价格。

    拥挤的城市街道,人们骑着摩托车,街头小吃摊主在温暖的阳光下为顾客服务。

    配什么喝的

    早上7点,一份banh mi配上一杯“ca phe sua da (연유커피 / 越南冰咖啡 / ベトナムアイスコーヒー)”——冰炼乳咖啡——是城里最令人满足的早餐之一。大多数banh mi摊位距离咖啡摊或塑料凳咖啡店不到三十秒路程。分开购买;站着吃三明治或坐在路边吃时喝咖啡。这才是正确的打开方式。

    实用小贴士

    带上小额钞票——20,000和50,000 VND的纸币。街头摊贩很少有零钱找给200,000或500,000的钞票。Saigon最好的banh mi营业时间是清晨(06:00–09:00)和傍晚(15:00–18:00);中午时分的面包往往是清晨剩下的。如果摊主在填馅前捏面包时没有发出清脆的响声,那就换一家摊位吧。
