    Sapa 并不是像 Hanoi 那样的“啤酒之城”,但恰恰是这一点让这里的饮酒体验别具一格。这里的氛围小巧而真实,且清晰地划分为游客聚集区和当地人生活区。无论哪种,都值得你去体验。

    Bia Hoi 的现状

    “Bia hoi”——即越南每日酿造、不含防腐剂的鲜扎啤——是整个越南北部社交饮酒的基石。Sapa 也有自己的 Bia Hoi,尽管它看起来与 Hanoi 老城区那些著名的街角小店不太一样。

    你在这里找不到那种摆满上百个塑料凳、挂着 Huda 遮阳伞的专属 Bia Hoi 街角。取而代之的是当地的小餐馆——有时仅仅是民居外的一张折叠桌——它们通常从下午 5 点左右开始供应当地的扎啤。啤酒通常是 Halida 或老街省(Lao Cai)的区域品牌,每杯售价在 8,000 到 12,000 越南盾之间。别想太多,它冰凉、便宜且充满社交气息。

    在 Ham Rong 街通往市场区域的小巷里(避开 Cau May 街那条主要的旅游商业街),你就能找到这些地方。走过纪念品商店逐渐稀少的地方,如果你看到一群穿着工作服的男人们正在吃“thang co”(一种当地山区的慢炖内脏杂烩),而有人向你招手,那就坐下吧,那里就是你要找的地方。

    距离 Sapa 约 60 公里东南方向的 Bac Ha 镇,在周六集市日也有类似的场景——那里玉米酒比啤酒更常见,但也有一些摊贩在集市的喧嚣中供应冰镇扎啤。

    游客们去哪喝

    Cau May 街及其周边街区是大多数游客的聚集地,这完全没问题。这里的酒吧更温暖(字面意思——Sapa 的气候很冷,尤其是 11 月到次年 2 月),供应各种本地和进口啤酒,如果你想在徒步一天后放松一下,这里是不错的选择。

    Eden Bar 开业已久,拥有不少外籍常客和长期停留的游客。它并不奢华,提供 Saigon 扎啤,根据季节提供壁炉或取暖器,客群通常是西方徒步者和越南导游的混合体。本地扎啤的价格约为 30,000–50,000 越南盾,Tiger 或 Heineken 约为 60,000–80,000 越南盾。

    Cogito Bar 距离主广场仅几步之遥,更偏向鸡尾酒风格,但也保留了当地啤酒选项。在晴朗的夜晚,从阳台望向山谷的景色非常棒——这在 Sapa 很难得,值得一提。

    精酿啤酒角

    Sapa 的精酿啤酒圈规模虽小,但并非不存在。一些民宿和较新的餐厅已经开始供应越南精酿品牌——来自 Hanoi 的 Ta Craft Beer、来自 Saigon 的 Heart of Darkness、来自 Ho Chi Minh City 的 Pasteur Street Brewing——过去几年里,在 Cau May 北端附近也开出了一两家精酿酒吧。

    一杯正宗精酿的价格通常在 80,000–120,000 越南盾。酒单会根据从 Hanoi 运送过来的供应情况而变动,所以菜单仅供参考。IPA 和小麦啤酒在这里通常比那些口感细腻的啤酒更受欢迎。如果你看到有越南产的 Pale Ale 供应(而不是罐装的),点它——这意味着店家花了不少心思。

    配酒美食

    这是 Sapa 与众不同的地方。餐酒搭配的问题在这里非常有趣,因为当地饮食是山区风味——厚重、油腻、烟熏——而冰镇啤酒正好能化解这种油腻感。

    Thang co 是最明显的搭配。这道炖菜浓郁且鲜美,而清爽的拉格啤酒(Bia Hoi 在这里非常完美)能防止味蕾被过分浓郁的口感淹没。你可以在周六集市以及市中心少数几家供应苗族(Hmong)和瑶族(Dao)风味的餐厅找到这道菜。

    烤肉——尤其是“thit lon cap nach”(炭火烤散养黑猪肉)——在 Sapa 随处可见,几乎可以搭配任何冰镇饮品。这些山区小猪的肥瘦比例与低地猪肉不同,比起口感过于强烈的啤酒,清爽的 Session 啤酒或小麦艾尔更适合它。

    对于一个轻松的夜晚,配上三文鱼的“banh mi”(Sapa 养殖的冷水三文鱼品质不错)加上一杯精酿 Pale Ale,是一些新开咖啡馆推出的现代组合。味道很棒。

    关于本地与游客的界限

    这种界限是真实存在的,但并没有敌意——这仅仅是地理位置和价格的问题。当地人通常在市场附近、小巷里那些没有英文菜单的地方喝酒。游客则在 Cau May 和民宿里喝酒。这两个群体偶尔会在那些同时接待两者的较大餐厅里交汇。

    如果你想和当地人一起喝一杯,方法很简单:日落时分往市场方向走,找一张摆着啤酒和食物的桌子,点他们正在喝的东西。会说几句越南语会很有帮助——“mot bia, cam on”(一杯啤酒,谢谢)非常管用——但最重要的是保持开放的心态。

    “Bia hoi”文化具有很强的参与性。没有人会专门为你表演,但它也并不排外。那杯 10,000 越南盾的啤酒既是入场费,也是一种社交契约。

    实用贴士

    Sapa 的海拔(约 1,500 米)意味着酒精对人的影响比海平面更快——徒步了一整天的预算型旅行者应考虑到这一点。大多数地方晚上 11 点就关门了;小镇的夜生活并不长。如果你在 10 月到次年 3 月期间在户外喝酒,记得多穿一件衣服。
