    大多数游客眼中的萨帕——云雾缭绕的山峦、梯田、纪念品摊位——大约在下午6点就开始打烊了。但在此之后开启的夜生活,绝对值得你熬夜去探索。

    夜幕下的布局

    萨帕(Sapa)镇区很小,步行即可逛遍,这在晚上10点、气温仅12度的时候显得尤为重要。主要的游客区沿着Cau May街分布,环绕着圣约瑟夫教堂(St. Joseph Church)附近的中心广场。那里是夜市所在地,初次造访去看看还可以,但如果你想吃地道美食,就不该待在那儿。当地人更喜欢去往Ham Rong山方向的分支街道,以及市场东南侧的住宅区。穿过那些卖纪念品毯子的摊位,你才能找到真正的美食。

    夜市:买什么,避什么

    萨帕夜市每晚从7点左右开始,一直持续到10点或11点,位于镇中心附近的一段步行街上。摊主大多是苗族(H'Mong)和瑶族(Dao)妇女,售卖刺绣包、手工编织围巾和银饰。这里的食品摊位功能性较强,但主要是针对游客的:烤玉米(bap nuong)售价15,000–20,000 VND,还有甘蔗汁,以及偶尔出现的“pho”摊位,一碗售价50,000–60,000 VND,味道尚可但并不出彩。

    买点烤玉米吧。它是炭火烤制的,刷上一层酱油盐釉,在寒冷的夜晚,身处这样的高海拔地区,这绝对是绝佳选择。避开夜市范围内的那些坐式餐厅——它们有着塑封的英文菜单,价格反映的是客流量,而不是食物质量。

    烧烤聚集地:Ham Rong与周边小巷

    晚上8:30左右,真正的“夜宵战场”位于Hoang Lien街平行的无名小巷里,大约在市场和汽车站区域之间。寻找烟火气,那就是信号。

    “Thit nuong”(烤肉串)是重头戏。五花肉、鸡腿肉和水牛肉串根据部位不同,售价在10,000–20,000 VND之间。在萨帕一定要尝试水牛肉;它是高地社区的主要肉类来源,当地摊主非常擅长处理它。用柠檬草和少许辣椒腌制,在炭火上烤到边缘微焦。配上一份用香蕉叶包裹的糯米饭(xoi),大约10,000 VND。如果不追求精致,50,000 VND就能搞定一顿晚餐。

    这些烧烤点大多没有店名,只是一个推着便携式烧烤架的摊主,在人行道上摆几张塑料凳。坐下来,指指旁边人吃的东西点单,这招很管用。

    蜗牛店:深夜的当地氛围

    萨帕的蜗牛店(“oc”店)是晚上9点后最热闹的地方——当地小伙子们聚在一起喝着“bia hoi”或Saigon啤酒,分享着柠檬草辣椒炒蜗牛,或者适合寒冷天气的黄油胡椒口味。几家口碑不错的店位于从镇中心向东北方向前往Cat Cat村的路上,周末会营业到午夜甚至更晚。

    点单很简单:oc len xao sa ot(柠檬草辣椒炒蜗牛)或oc buou nuong mo hanh(葱油黄油烤苹果螺)是最常见的两种做法。一份足够两人分享,价格在60,000–80,000 VND之间。这些地方嘈杂、偶尔烟雾缭绕,但绝对值得一试。

    甜品摊与甜味小吃

    从晚上7点开始,中心广场附近会出现推着车卖“che”(越南甜汤)的摊位。在萨帕的海拔高度,热乎乎的甜汤是首选:红豆甜汤(che dau do)、莲子甜汤(che hot sen),或者淋上椰奶的什锦甜汤,每杯15,000–25,000 VND。一些摊主还卖“banh trang nuong”,即越南版“烤米纸披萨”,这原本是Da Lat的特色,但现在也传到了北方——将米纸放在炭火上烤,铺上鸡蛋、虾干和辣椒酱。这只是个零食,但20,000 VND的价格正好填补了烧烤和蜗牛之间的空档。

    如果想喝点热的,别去那些游客咖啡馆,找找那些带着保温瓶卖姜茶的摊贩,或者尝试“ruou can”(通过竹管共饮的米酒)——尽管后者更像是一种村落体验,而非街头摊位常见的饮品。

    游客路线 vs. 当地据点——实用建议

    如果你是第一晚到萨帕,想先熟悉环境:从夜市开始,逛逛中心广场,买个烤玉米,感受一下布局。没问题,去一次就好。

    如果你还有第二或第三晚:晚上8:30后往市场的南边和东边走。街道会变得安静,食物会变得更好,而且一旦离开Cau May街,价格会下降30%–50%。如果需要,用手机灯光照明——有些小巷灯光昏暗,但很安全。萨帕是一个治安良好的小镇,保持基本的警惕即可(半夜不要显摆昂贵的相机),不需要特别担心安全问题。

    价格范围与支付

    街头小吃:每份10,000–25,000 VND。一顿完整的夜宵——包括蜗牛、肉串、糯米饭、甜品和几瓶啤酒——每人花费约150,000–250,000 VND。几乎所有的街头摊位和烧烤点都只收现金。请准备好零钱;天黑后,摊主很少有500,000 VND面额的零钱找给你。

    实用贴士

    多带一件外套——即使在四月或五月,萨帕的夜晚气温下降很快,而且你大部分时间会站在户外烧烤摊旁。夜市在下大雨时会关闭,但蜗牛店和烧烤摊通常照常营业。大多数街头美食活动在午夜左右结束;如果你是乘坐晚班车到达,中心广场的摊位通常会营业得最晚。
