    什么是 Trai cay dam

    “Trai cay dam”大致翻译为捣碎或混合的水果——dam 指的是按压或捣碎的动作,trai cay 意为水果。实际上,它介于水果杯、芭菲(parfait)和甜点饮品之间。其基底通常是越南风味的甜味酸奶(sữa chua),比希腊酸奶更浓稠、更酸,但比原味酸奶更甜。上面铺满新鲜的时令水果,加入一两勺碎冰,淋上椰奶或炼乳,有时还会加入一勺斑斓果冻或仙草来增加口感。

    成品口感冰凉,酸甜适中,层次丰富,是你能想象到的最佳味觉体验。你可以用长勺挖着吃,最后用粗吸管喝掉碗底混合了果汁的液体。

    起源

    Trai cay dam 绝对是越南南部的产物。西贡(Saigon)一年四季炎热潮湿的气候,使得当地的甜点文化总是离不开冰。这座城市有着悠久的“che”(甜豆和水果甜点)店和新鲜水果摊的传统,Trai cay dam 正是这一脉相承的产物。

    它在 21 世纪 2000 年代左右成为一种有名字的菜品,最初出现在 Pham Ngu Lao 的背包客聚集区,以及第 3 区和第 5 区的学生街巷中。2015 年后,社交媒体极大地推动了它的普及——色彩鲜艳的水果层叠在白色酸奶上,非常上镜。到了 2020 年代初,专门的 Trai cay dam 摊位已遍布居民区、夜市,甚至是一些装有空调的咖啡馆,这些地方提供的版本更精致、更上镜,价格在 60,000–80,000 VND 之间。

    你在河内很难频繁见到它。北方有自己的酸奶文化——河内著名的“sua chua nep cam”(黑糯米酸奶)是完全不同的东西——但作为一种品类,Trai cay dam 属于南方。

    有些摊位会添加水果以外的配料:碎花生、椰子干片、木薯珍珠或少许蜂蜜。基础版本——酸奶、冰、椰奶、三种水果——是标准配置。除此之外的任何添加都是摊主的个人特色。

    如何点餐

    大多数摊位会将水果放在柜台后的浅盘或敞开的碗中。指给你想要的水果即可。摊主会将酸奶舀入塑料杯或碗中,加入碎冰,铺上水果,最后根据自家风格淋上椰奶或炼乳。整个过程大约 90 秒。

    如果你想要少糖,可以说 it duong(少糖)——这通常意味着炼乳会放得少一点。如果你想要更多酸奶、更少冰,可以指着酸奶容器并竖起大拇指;大多数摊主都能听懂。

    西贡的价格:第 1、3、5 和 10 区的街头摊位价格在 30,000–45,000 VND。夜市版本(例如滨城市场周边)价格倾向于 50,000–60,000 VND。带有进口水果的咖啡馆风格 presentation 价格可达 80,000–100,000 VND。

    去哪里找

    不要只追逐某一家著名的店,而是寻找聚集区。第 3 区的 Nguyen Thuong Hien 街沿线有几家可靠的摊位,从下午到晚上 10 点左右营业。第 5 区 Hoa Binh 市场(Cho Lon)周边的巷子里,有许多经营多年的摊主,他们在水果质量上从不偷工减料。

    夜市是一个不错的选择——水果通常是提前切好放在水浴锅里的,这也没问题——但如果你想要最新鲜的现切版本,请找一个带有专用冷藏展示柜的小型独立摊位。这通常是摊主认真对待水果的标志。

    实用提示

    Trai cay dam 最好立即食用——在西贡的高温下,冰块融化得很快,二十分钟内整碗就会变成温热的汤。点好后,在附近坐下,当场吃完。时令水果的质量在 5 月到 8 月达到顶峰,届时热带品种会涌入南方市场,不过你全年都能找到品质尚可的版本。
