    “Ca phe sua da (연유커피 / 越南冰咖啡 / ベトナムアイスコーヒー)”(发音为 ka-feh soo-ah da)是大多数游客的入门首选:浓郁的滴漏咖啡加冰和甜炼乳。这是 Saigon 和湄公河三角洲地区的标配——口感香甜、醇厚,街头随处可见,价格通常在 20,000–35,000 VND 左右。

    在 Hanoi (하노이 / 河内 / ハノイ),默认的咖啡口味偏苦、甜度较低。如果你想喝南方的口味,依然可以点得到,但当地人通常喜欢喝浓郁的黑咖啡。“Ca phe den”(ka-feh den)就是黑咖啡。在后面加上“da”表示加冰:“ca phe den da”(ka-feh den da)。热黑咖啡则是“ca phe den nong”(ka-feh den nawm)。

    真正有用的客制化要求

    1. It duong (eet doo-ung) — 少糖。如果你觉得“ca phe sua da”甜得发腻,这句非常关键。有些店会在炼乳的基础上再加额外的糖浆。
    2. Khong duong (kawm doo-ung) — 无糖。点黑咖啡时,如果你不想要很多地方默认添加的糖浆,可以用这个词。
    3. Khong da (kawm da) — 去冰。当你想喝冷咖啡但不想被冰块稀释,或者在对冰块卫生状况存疑的地方,这句很管用。
    4. It da (eet da) — 少冰。折中的选择。
    5. Nong (nawm) — 热。可以加在任何点单后面:例如“ca phe sua nong”就是热炼乳咖啡。

    1. Mang ve (mang veh) — 打包/带走。大多数街边摊和小型咖啡馆会把它装在插着吸管的塑料袋里,听起来很接地气,用起来也很方便。
    2. Cho toi mot... / Cho toi hai... (chaw toy moat / chaw toy high) — 给我一杯……/给我两杯……。说一句“Cho toi mot ca phe sua da”,你就能得到一杯冰炼乳咖啡,再也不用靠比划或瞎猜了。
    3. Bao nhieu tien? (bow nyew tyen) — 多少钱?如果没有菜单,就用这句。街头咖啡的价格应该在 15,000–35,000 VND 之间。如果在一家坐塑料板凳的小店,有人告诉你一杯“ca phe sua da”要 80,000 VND,那绝对是被坑了。

    滴漏壶(Phin):你需要知道的一件事

    许多咖啡馆仍然使用“phin”来冲泡——这是一种放在杯子上的小型金属滴漏壶。滴完需要 4–6 分钟。不要过早搅拌,也不要催促店员。坐下来,看看街景,让它慢慢滴。底部的咖啡会非常浓缩;这是刻意为之的。等滴完后,再把炼乳搅拌均匀(或者不搅)。

    在连锁咖啡馆,你不会看到这种器具——他们使用的是意式浓缩咖啡机。但在任何当地的小店,滴漏壶都是标配。

    Saigon 与 Hanoi:有什么不同

    Saigon 的咖啡默认偏甜——炼乳是标配,冰块给得很足,而且每家店的菜单上都有“bac xiu”。Hanoi 的咖啡口感更浓烈,而且经常不加冰,尤其是在冬天。“Ca phe trung”和“ca phe cot dua”都是 Hanoi 的原创(老城区的蛋咖啡文化绝对值得你花一个下午去体验)。“Vietnamese coffee (베트남 커피 / 越南咖啡 / ベトナムコーヒー)”——也就是“ca phe sua da”——严格来说是一种南方风味;虽然在 Hanoi 也能喝到,但它并不是当地默认的咖啡文化代表。

    哪些地方不需要用这些短语点单

    Highlander Coffee、The Coffee House、Phuc Long 和 Trung Nguyen Legend 是主要面向游客和当地上班族的连锁店。大多数店员会说基本的英语,菜单上有图片,价格也是明码标价的。去这些店没什么不好——Phuc Long 的[莲花茶](/posts/lotus-tea-vietnam (베트남 / 越南 / ベトナム)-guide)和奶茶确实很好喝——但它们不是练习点单短语或体验独立越南咖啡文化的好去处。把这些短语留给街边摊和家庭经营的小咖啡馆吧。

    小费

    在街头咖啡摊或小咖啡馆,没有给小费的规矩。在 Hanoi 或 Saigon 的精品咖啡馆或第三波咖啡浪潮店里,店员受过专业咖啡师训练,每杯咖啡价格在 60,000–90,000 VND 之间,凑个整或者留下 10,000–20,000 VND 作为小费会受到欢迎,但这并不是强制要求。
