    Saigon 依靠冰咖啡运转,就像其他城市依靠焦虑运转一样。“Ca Phe Sua Da”——将罗布斯塔咖啡滴滤在炼乳上,再倒入冰块——这不仅仅是一杯早晨或下午的饮品,更是一种生活姿态。关于何时点一杯咖啡的问题,实际上取决于你在 Saigon 度过的是怎样的一天。

    早晨时光(上午 6 点 – 9 点)

    这是最有力的论点。在 Thu Duc 区 Hoang Dieu 2 路边的任何一个简易摊位,或者在 Phu Nhuan 区 Phan Dinh Phung 路一家普通“quan ca phe”(咖啡店)的遮阳棚下,找个塑料凳坐下,你会看到众生相:在工作间隙喝着咖啡的 xe om 司机、盯着手机的上班族、下着象棋且几乎一言不发的退休老人。滴滤壶——即“phin”——架在玻璃杯上,需要四到六分钟才能滴完。没人会催促。

    早晨是 Ca Phe Sua Da(越南冰咖啡)口感最冰爽的时候,因为冰块还没有时间融化并与咖啡融合。比例恰到好处。炼乳依然沉在杯底,等着你去搅拌。在当地小店,一杯咖啡的价格在 20,000–30,000 VND 之间;如果你坐在有空调和品牌标志的地方,价格则在 45,000–55,000 VND 左右。

    如果你想体验一种花费不到 25,000 VND 且能持续四十分钟的仪式感,这就是最好的选择。

    午间时刻(上午 11 点 – 下午 2 点)

    三月的 Saigon(西贡)正午时分并非什么哲学体验——而是一场高温考验。午餐时的 Ca Phe Sua Da 更多是为了调节状态,而非纯粹享受。你刚吃完一盘“com tam”或一碗“bun cha”,你需要一些冰凉且咖啡因充足的东西,好让你撑过下午,而不至于热到虚脱。

    当地劳动者经常这样做。在许多午餐点,滴滤壶被预先冲泡好的大桶 Ca Phe Sua Da 取代——直接从柜台后的大壶中倒出,加入冰块。这种咖啡制作更快,口味稍淡,但这没关系。你不是在冥想,你是在生存。

    像 Le Loi 路上的 Trung Nguyen Legend 即使在午餐时间也提供完整的滴滤版本。而在 Ton That Thiep 路沿线店屋底层那些没有招牌的小咖啡馆里,你只需花 20,000 VND,就能和正在吃午餐的人拼桌。

    一个诚实的提醒:午餐点的冰块比例往往偏高。当你吃完饭时,你喝的可能就是稀释后的咖啡味水了。要么快点喝,要么快点搅拌。

    夜间论调(晚上 7 点 – 午夜)

    这是 Ca Phe Sua Da 真正变得有趣的地方,也是让外地人感到惊讶的地方。Saigon 的咖啡文化并不会随着日落而结束。这座城市的深夜咖啡传统是真实存在的——Phu Nhuan 和 Go Vap 等老城区,街道两旁布满了营业到晚上 11 点甚至午夜的露天咖啡馆,挂着灯串,播放着 20 世纪 90 年代越南民谣的翻唱曲目。

    到了晚上,这种饮品的功能就不同了。咖啡因的摄入几乎不再是重点(罗布斯塔咖啡足够浓郁,常年饮用的人早已对它的提神作用产生了免疫)。你得到的是一个让你坐上两个小时的理由。越南咖啡文化的核心一直在于“坐”,而不在于“喝”。

    在 Ben Thanh Market 附近的 Nguyen Van Trang 路,一簇簇小咖啡馆在晚上 10 点后依然热闹,坐满了当地人和那些发现这里比天台酒吧更好的游客。价格保持不变——25,000–35,000 VND——而且没人会赶你走。

    如果你之后在 Bui Vien 区域散步,尽量避免在游客聚集区的酒吧点 Ca Phe Sua Da。他们会用速溶咖啡加过量的冰块,却向你收取 60,000–80,000 VND。

    到底什么时候喝最好

    如果可以,选早晨。在上午 9 点之前,这杯饮品最能体现其本质——冰凉、比例精准、从容不迫。街头充满了活力却不喧闹。滴滤壶依然在缓慢地工作。这就是 Saigon 真正理解的 Ca Phe Sua Da,而不是作为一种工业产品。

    午餐是功能性的,夜晚是社交性的,而早晨才是最纯粹的。

    如果你的行程只能安排在晚上,那就去吧。重点从来都不是咖啡本身。

    实用小贴士

    街头当地小店的价格预期为 20,000–30,000 VND;有座位和菜单的咖啡馆价格为 40,000–60,000 VND。如果你想控制稀释程度,请务必要求“da xay”(冰块另放)。避免购买便利店预调好的瓶装咖啡——它们在应急时还可以,但使用的是不同的咖啡基底,且糖分加倍。
