    咖啡市场:不仅仅是拍照打卡点

    邦美蜀咖啡市场(Cho Ca Phe Buon Ma Thuot)位于市中心附近,距离拥有巨型咖啡杯地标的阮必成(Nguyen Tat Thanh)环岛约1公里。这个市场是一个实际运作的批发中心——贸易商、加工商和烘焙商每天都在此往来——但它足够开放,你可以走进去,咨询相关问题,并直接从摊主那里购买。

    市场上生豆(未烘焙)的罗布斯塔咖啡豆价格根据等级和季节,大约在每公斤40,000–55,000 VND之间。用于家庭冲泡的烘焙研磨咖啡价格为每500克袋装80,000–150,000 VND。在这里买到的咖啡与你在河内或西贡面向游客的咖啡馆里买到的咖啡,品质差距是真实且明显的。

    如果你想了解加工工艺——水洗、日晒、蜜处理——只要你怀着基本的求知欲和耐心,北入口附近的一些贸易商很乐意为你讲解。如果可以的话,带上一位会说越南语的朋友;这里的大多数摊主不会用英语交流。

    去哪儿喝:邦美蜀的咖啡文化

    邦美蜀的咖啡不讲究仪式感。人们喝得很快,口味浓烈,通常站在店外的塑料桌旁享用。“ca phe sua da”——加炼乳的冰咖啡——是默认的选择,当地以罗布斯塔为主的拼配咖啡,比你在大叻喝到的以阿拉比卡为主的拼配咖啡口感更浓郁、更苦涩。

    位于潘佩珠(Phan Boi Chau)街的Me Trang是城中最老牌的咖啡品牌——他们拥有自己的烘焙工厂和多家门店。他们家的过滤咖啡每杯价格在25,000–35,000 VND之间。出品稳定、环境整洁,且不浮夸。

    如果你想体验更接地气的氛围,可以在上午晚些时候沿着李常杰(Ly Thuong Kiet)街走走。街边开着一排排小型咖啡店,每家都有自己的烘焙风格和常客。你只需花15,000–20,000 VND就能喝到一杯。这些店名通常没有拉丁字母拼写,也不会出现在谷歌地图上——这正是它们的魅力所在。

    邦美蜀在**阮公著(Nguyen Cong Tru)**大学区附近还有一些较新的精品咖啡馆,提供手冲咖啡和单一产地咖啡品鉴,主要面向年轻的越南顾客。这里的价格在50,000–70,000 VND左右,如果你想深入研究咖啡知识,这里的专业度非常扎实。

    Lau Ca Lang:邦美蜀独步天下的美食

    “Lau ca lang”——鲶鱼火锅——是你想要了解为什么人们会选择定居在中央高地(Central Highlands)时必尝的佳肴。Ca lang(条纹鲶鱼)是一种在塞雷波克(Serepok)河流域生长的淡水鱼,邦美蜀当地烹饪的版本肉质肥美、紧实,风味浓郁,这是沿海养殖鱼类无法比拟的。

    汤底酸辣适口,通常以罗望子和番茄为基础,加入大量的莳萝和青葱。你可以在餐桌上的炉子上与亲友共享,边吃边加入空心菜、香蕉花和米粉。

    寻找Lau ca lang的最佳地点是黎鸿丰(Le Hong Phong)街以及与之垂直的阮文追(Nguyen Van Cu)街的一小段区域——从下午5点左右开始,这里会聚集多家露天餐厅。人均消费预计在120,000–180,000 VND,包含鱼肉、蔬菜、米粉和米饭。大多数餐厅按鱼的重量收费;如果预算有限,请在入座前询问清楚。

    Com Lam:在当地吃,别去旅游村

    “Com lam”——竹筒饭——严格来说是埃地族(Ede)和墨侬族(M'nong)的民族传统,而非邦美蜀的街头小吃发明。但这座城市很好地融合了它,你可以在市场摊位和一些固定摊贩那里买到正宗的竹筒饭,而不是在那些表演性质的文化秀中。

    城中最棒的Com lam通常出现在Cho Ben Thanh BMT(位于潘周桢(Phan Chu Trinh)街的当地生鲜市场,而非西贡的地标),由每天从周边村庄赶来的妇女出售。一根竹筒饭售价10,000–15,000 VND,掰开后会配上一抹芝麻盐。趁热配上隔壁摊位的烤猪肉(thit nuong)——再加25,000–40,000 VND——你就拥有了一顿花费不到60,000 VND的丰盛早餐。

    黎鸿丰街上的一些餐厅会将Com lam作为Lau ca lang的配菜,如果你想一次性尝试这两种美味,这是一个不错的组合。

    夜幕下的美食街

    潘佩珠(Phan Boi Chau)街在环岛和市场区域之间,每晚6点后会变身为一条随性的夜市美食街。它不像会安那样是精心规划的“步行街”,而只是摊贩们在人流聚集处自发摆摊。你会发现烤玉米、banh mi推车、新鲜水果摊和小型面摊,营业至晚上10点左右。

    这里的人群几乎全是当地人。价格也因此非常公道:一碗面条30,000–40,000 VND,banh mi大约20,000–25,000 VND。

    实用贴士

    邦美蜀距离大叻(Da Lat)约200公里——驱车穿过山区需要四到五个小时,或者也可以从河内和西贡乘坐直飞航班抵达。两天的时间足够你逛完咖啡市场、享用一顿地道的鲶鱼火锅,并在早晨逛逛生鲜市场。即使在旱季,这座城市夜晚的温度也相当凉爽,这使得户外用餐成为一种享受,而非一种耐力考验。
