    Buon Ma Thuot 的 bun do 有何不同

    “Bun do”(香料肉酱米线)在整个越南都有,但 Buon Ma Thuot 却将其视为一种信仰。这座城市的版本介于“bun rieu”和正宗的炖肉之间——汤汁颜色更深、更浓郁,八角和肉桂的香料味比你在 Hanoi 或 Saigon 找到的更为浓烈。里面的肉(通常是牛肉,有时是猪肉)在汤中炖得软烂散开,而不是整齐的肉片。当地厨师会加入更多的辣椒油、大蒜,以及少许浓缩鱼露,吃完后唇齿留香数小时。这是一道属于劳动者的菜肴,诞生于高地,那里的咖啡种植园和橡胶园养活了一群精干而饥肠辘辘的劳动力。

    Bun Do Thanh Huong(Nguyen Hue Street 7号)

    Anh Tuan 比较年轻——大概40岁——经营的店铺环境稍微现代一些:塑料凳子、荧光灯,墙上挂着手写菜单。早上 5:30 营业。这里的汤底更清瘦,辣椒味更突出,香料味更锐利。价格同样是 25,000 VND。Anh Tuan 主要迎合早上 6 点的通勤人群;到了上午 9 点,店里就空了一半。如果 Thanh Huong 太拥挤,当地人会推荐你来这里。这里的米线比 Thanh Huong 的稍微粗一点,更有口感。

    Bun Do Ba Sau(Ba Dinh Ward,老市场附近)

    Ba Sau 的真名已无从考证——大家都只叫摊主的这个绰号。她推着一辆流动餐车经营,每天早上 6 点停在同一个位置,中午前离开。这里的设施最简陋:一个双头露营炉、一口大铝锅和一些塑料碗。她的汤底是这几家中最辣的——辣得很霸道——而且她不会像有些摊位那样加糖提甜味。一碗 22,000 VND。肉用的是猪肩肉,比牛肉更嫩。想要吃“真正够味的 bun do”的当地人都会来这里。不适合初试者。

    Bun Do Minh(Phan Boi Chau Street,邮局附近)

    Minh 的店在室内,有空调,还有一个正规的吧台。如果你的同行伙伴觉得塑料凳和嘈杂的街头让人有压力,这里就是“升级版”的选择。早上 6 点营业,一直开到下午 2 点,因此能承接午餐高峰期溢出的客流。汤底稍微精致一些——香料平衡,余味更干净——有些当地人很喜欢,而另一些人则认为它“太城市化”了。一碗 27,000 VND(比推车摊位贵 2,000 VND)。Minh 使用的是牛腩,比牛肩肉更完整不易散。品质稳定,但少了几分个性。

    Bun Do Thanh Son(Nguyen Chi Thanh Street,位于 Buon Me Thuot 市场内)

    就在市场里面,靠近蔬菜区。早上 5 点营业,一直到上午 9 点都挤满了人。Thanh Son 的汤底颜色深且浓郁——他从前一天晚上开始熬煮骨头,长达 8 个多小时。售价 24,000 VND。米线是每天早上新鲜手工拉制的。这是一个属于劳动者的就餐点,周围都是蔬菜摊贩和市场工人。喧闹、地道,除了实用性之外没有任何氛围可言。简直完美。

    什么时候去

    在这里,“bun do 早餐”是真实存在的习惯。在早上 6 点到 7 点之间的黄金时段到达,此时汤最烫,肉最嫩,人群主要是赶去上班的工人——而不是游客或爱睡懒觉的人。到了早上 8:30,由于锅一直加热,品质会有所下降。到了上午 10 点,大多数摊位就关门了。午餐服务(上午 11 点到下午 1 点)仅在 Ba Dinh 市场和 Minh 的店里提供;真正地道的 bun do 摊位是不做午市的。千万不要在晚餐时吃。这道菜是为了清晨和早上的饥饿感而准备的,而不是为了满足晚上的食欲。

    如何点餐

    走上前去或坐在吧台旁。指着锅或者说“Mot toa bun do”(来一碗 bun do)。如果你想额外加一份米线,可以说“Them mi”。摊主会将高汤舀入碗中,加入米线,并在上面放上肉丝和一撮炸红葱头。你会得到一小盘新鲜香草、青柠和辣椒作为配菜——吃的时候把香草撕碎放进碗里,挤点青柠汁提鲜,再根据口味加入辣椒油(如果有提供的话)。吃快点。米线泡10分钟后就会变软。
